- Heat oven to 150C/fan 130C/gas 3. Heat the oil, preferably in a large flameproof casserole, and fry the onions for 8 mins. Add the garlic, spices and oregano and cook for 1 min, then gradually add the mince, stirring well until browned. Stir in the tomatoes, add half a can of water, then crumble in the stock and season.
- Cover and cook in the oven for 30 mins. Stir in the peppers and sundried tomatoes, then cook for 30 mins more until the peppers are tender. Stir in the beans.
- To serve, reheat on the hob until bubbling. Serve with avocado or a big salad with avocado in it, some basmati rice or tortilla chips and a bowl of soured cream.
- If you want to use a slow cooker, fry your onions in a pan for 8 mins, then add your garlic, spices and oregano and cook for a minute. Gradually add the mince until it's brown. Tip into your slow cooker with the tomatoes, peppers, sundried tomatoes and beans, crumble in the stock cubes and season to taste. Cook on Low for 8-10 hours, then serve as above.

Competition for the best burger in London has gone mad. I've used the brilliant technique of brushing the burgers with mustard and a dash of Tabasco Chipotle sauce as they cook to build up an incredible gnarly layer of seasoning. Enjoy!

- For the best burger, go to your butcher and ask them to mince 800g of chuck steak for you - this cut has a really good balance of fat and flavoursome meat.
- Divide it into 4 and, with wet hands, roll each piece into a ball, then press into flat patties roughly 12cm wide and about 2cm wider than your buns. Place on an oiled plate and chill in the fridge.
- Next, finely slice the red onion, then dress in a bowl with the vinegar and a pinch of sea salt. Slice the gherkins and halve the buns. Finely chop the lettuce and mix with the rest of the burger sauce ingredients in a bowl, then season to taste.
- I like to only cook 2 burgers at a time to achieve perfection, so get two pans on the go - a large non-stick pan on a high heat for your burgers and another on a medium heat for the bacon.
- Pat the burgers with oil and season them with salt and pepper. Put 2 burgers into the first pan, pressing down on them with a fish slice, then put half the bacon into the other pan.
- After 1 minute, flip the burgers and brush each cooked side with ½ a teaspoon of mustard and a dash of Tabasco. After another minute, flip onto the mustard side and brush again with another ½ teaspoon of mustard and a second dash of Tabasco on the other side.
- Cook for one more minute, by which point you can place some crispy bacon on top of each burger with a slice of cheese. Add a tiny splash of water to the pan and place a heatproof bowl over the burgers to melt the cheese - 30 seconds should do it.
- At the same time, toast 2 split buns in the bacon fat in the other pan until lightly golden.
- Repeat with the remaining two burgers.
- To build each burger, add a quarter of the burger sauce to the bun base, then top with a cheesy bacon burger, a quarter of the onions and gherkins. Rub the bun top with a teaspoon of ketchup, then gently press together.
- As the burger rests, juices will soak into the bun, so serve right away, which is great, or for an extra filthy experience, wrap each one in greaseproof paper, then give it a minute to go gorgeous and sloppy.

- Mix all the burger ingredients together. Set aside in the fridge for 1 hour.
- Form into 6 burgers, and grill until browned on each side, and cooked through.
- Split buns, and spread with butter.
- Arrange tomato slices on buns, and top with a slice of cheese.
- Place a hot burger on top of the cheese, and top with Spicy Red Sauce.

CHILLI BURGERS WITH ROASTED PEPPER RELISH
Economical burger recipe that can be frozen. The meat is extended with mashed kidney beans, and its hard to tell. People are surprised when they ask me for the recipe, to find the cleverly disguised addition. Recipe adapted from 'hot and spicy cookbook'. Serve in breadrolls with some sliced avocado, tomato and rucola leaves. Allow enough time to refrigerate the relish, relish best made a day ahead

- Heat butter in pan, add onions, chiilies and cumin , cook, stirring until inion is soft. COOL.
- Combine onion mixture with meat, mustard, sauce, beans, breadcrumbs, parsely and egg. mix well.
- Shape mixture into 6 ( or 8) patties. I use a hamburger shaper. If you wont be using them all ,Freeze without cooking in a single layer until hard, then stack in a bag.
- Shallow fry patties in hot oil , in batches until brown and cooked through. Serve in rolls with some of the pepper relish or whatever you prefer.
- Relish: quarter peppers, remove seed. grill peppers, until skin blisters and blackens. Peel away skin. Process peppers , cumin and sauce until smooth, then with the motor running add the oil gradually in a thin stream ( just like when making mayonaise) Cover, and refrigerate several hours.
- To cook.

CHILLI BURGER WITH ROASTED TOMATOES & RED ONION RELISH

- Heat oven to 200C/fan 180C/ gas 6. Mix the beef with the chilli and some chopped coriander, then season well. Shape into four patties about 2.5cm thick. Chill until needed.
- Keeping the tomatoes on the vine, put them in a roasting tin. Drizzle over 1 tbsp of olive oil and season. Roast for 12-15 mins until just soft.
- Heat 1 tbsp of oil in a non-stick frying pan. Then cook burgers on each side for 4 mins for rare or 5 mins for medium. For the relish, mix 2 tbsp of olive oil, the lime juice and sweet chilli sauce, parsley, coriander leaves and red onion. To serve, place a burger on a muffin half, add a branch of tomatoes and top with red onion relish.

REALLY EASY BEEFBURGERS

- Flavour the meat: Put the meat in a mixing bowl, then sprinkle over the chilli powder and a little salt and pepper. Mix well with your hands or use a fork. The mild chilli powder gives the meat added flavour without making it too spicy.
- Shape into burgers: Divide the mixture into 4 equal pieces, then shape with your hands into round burgers about the width of the buns, or pack the mixture into large presentation rings (if you have them) placed on a chopping board. You need to press down on the meat to compact it, then carefully lift off the rings - a bit like making sandcastles.
- Now get cooking: Fry the burgers on a hot griddle or grill them outside on the barbecue for 5 mins on each side, turning them carefully with a metal spatula. Take care as hot fat from the meat may spit a little.
- Top with cheese and toast the buns: If you want to make cheeseburgers, put a slice of cheese on top of the burgers when you turn them over and let it melt while the other side cooks. When they are ready, cut the burger baps in half and warm them in the toaster or on the barbecue - take care that you don't burn them.
- Prepare the toppings: Meanwhile, prepare the toppings of your choice. Separate the lettuce into leaves. Then, using a sharp knife, thinly slice the tomato, cucumber and gherkin on a separate board to the one you prepared the burgers on. Peel and finely chop the red onion.
- Assemble and enjoy: Spread a little mayonnaise or ketchup - or both if you like - onto the toasted buns, then top with your burgers and salads of your choice, followed by the remaining half bun.
