1 -2 lb sausage (about 8 links, we prefer sweet, you may use hot)
1 large sweet onion, sliced and chopped
1 large red pepper, sliced and chopped (or any other sweet pepper)
olive oil
salt
pepper
1 loaf Italian bread

Steps:

  • Heat approximately 1 tablespoon of olive oil in a large frying pan.
  • Brown the sausage in the oil until you get a nice color on the outside and you no longer see any"pink".
  • Remove the sausage and drain on a paper towel.
  • Keep the heat going on the pan and add onions and peppers (do not add any additional oil).
  • Cook the onions and peppers approximately 5 minutes or until onions start to become translucent.
  • During this time, slice the sausage down the middle, do not cut all the way through, just enough so you can open the sausage and"fan" them out.
  • Add salt and pepper over the onion/pepper mixture and turn heat down to simmer.
  • Place sausage on top of onions and peppers and cover.
  • Simmer for approximately 15 minutes or until sausage is cooked through.
  • Serve on Italian Bread.

Of course every good Italian has a sausage and pepper recipe. :D LOL So this is my version, and adaptation of my mother's recipe. Enjoy!

3 pound(s) sweet italian sausage (large variety), cut into 12 links
1 tablespoon(s) olive oil
1 cup(s) dry white wine
6 large cubanelle peppers (sweet italian peppers), seeded and sliced
1 large red bell pepper, seeded and sliced
1 medium onion, sliced
1 - 14 oz, cans of diced tomatoes with basil, garlic and oregano

Steps:

  • Fill a large pot with water and bring to a boil. Par boil sausage for 10 minutes. Remove from water and blot on paper towels.
  • Heat oil in a large skillet over medium heat and brown sausage. Add white wine and deglaze pan. Cook down for 5 minutes.
  • Add sliced peppers and onions with tomatoes. Cover pan and cook for 25-35 minutes or until peppers are tender. You can also bake in a 350 degree oven. (May need to add some water if peppers need more time to tenderize)
  • Serve with crusty Italian bread.
  • An alternative is to cut sausage into bite size pieces after boiling. Great for a party and can be kept warm in a crock pot.

1 red onion, minced
2 red peppers, roasted and cut 1/2-inch slices
2 yellow peppers, roasted and cut 1/2-inch slices
1 dried ancho chile
Salt and pepper, to taste
2 cloves garlic, minced
8 fresh basil leaves, torn
1 teaspoon fresh oregano, minced
2 pounds sweet Italian sausage
2 cups dry red wine
28-ounce can whole San Marzano tomatoes, crushed by hand

Steps:

  • Saute onions, peppers and chile in olive oil until onions are brown. Add salt and pepper to taste. Stir in garlic and basil. Add oregano. Hold aside.
  • Prick sausage all over with a fork. Saute in skillet over medium heat until brown. Add enough wine to cover about 2/3 of the sausage. Add Sauteed vegetables, tomatoes and any liquid. Simmer gently, partially covered, for 20 minutes. Remove sausage and slice into 1-inch pieces. Can be served on pasta or with bread.

2 tablespoons extra-virgin olive oil
12 fresh Italian sausages, hot or sweet (about 1- 3/4 to 2 pounds)
1 large Spanish onion, cut in halved, and cut into 1/4 inch slices
1 tablespoon tomato paste
2 large red peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 large yellow peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 poblano peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
4 large cloves garlic, minced
Kosher salt and freshly ground black pepper
1 tablespoon balsamic vinegar
6 crusty sandwich rolls, toasted

Steps:

  • Heat the oil in a large skillet over medium high heat. Add the sausages and cook until well browned on all sides, about 10 minutes. Remove the sausages from the pan and set aside. Pour off all but 1 tablespoon of oil. Add the onions and cook, stirring, until golden, about 5 minutes. Stir in the tomato paste and cook for 1 minute more. Add the peppers, garlic, and season with salt and pepper to taste. Cook until the peppers are wilted, about 5 minutes. Return the sausages to the pan, cover, and cook over medium heat, stirring frequently, until the sausages are cooked through, about 12 minutes more. Stir in the vinegar. Divide the sausage and peppers evenly amongst the crusty rolls and serve.

Caught this recipe on Every Day Italian and looked so good I had to try it. It is absolutely delicious! The sauce is slightly sweet and the onions caramelize really nicely. The original recipe puts the final product into crusty Italian buns, but I prefer it with pasta. I have tried this recipe with chicken instead of sausage, but make sure the pieces are small enough that they cook evenly and stay moist. Don't worry about the time it takes - it is SO worth it!

4 tablespoons extra virgin olive oil
1 lb sweet Italian turkey sausage
2 red bell peppers, sliced
2 onions, sliced
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon dried oregano
1/2 cup fresh basil, chopped
4 garlic cloves, minced
2 tablespoons tomato paste
1 cup marsala wine
1 (15 ounce) can diced tomatoes
1/4 teaspoon red pepper flakes

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides. Remove from the pan and drain.
  • Keeping the pan over medium heat, add peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes.
  • Add the oregano, basil, and garlic and cook 2 more minutes.
  • Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
  • Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
  • Serve with pasta, or in Italian buns.

This is a quick and versatile recipe that is one of DH's favorites. I like it because it makes enough for two dinners and a lunch for the two of us. I like to serve it over polenta, but pasta or rice are great, too. It's happy in a slow cooker as well.

5 sweet Italian sausage links
3 bell peppers, cut into strips (I never use green in this)
2 medium onions, halved and sliced
1 tablespoon chopped garlic
1 (14 ounce) can diced tomatoes, undrained (Italian style)
14 ounces water
1 tablespoon italian seasoning
salt
pepper

Steps:

  • Brown the sausage in a large skillet.
  • Add onions and saute for ~2 min.
  • Add peppers and garlic and saute 1 min.
  • Add the tomatoes with their water, fill the can with water and add that too.
  • Add Italian seasoning and salt and pepper to taste.
  • Simmer uncovered until the sausage is cooked through (I usually cut them into thirds to speed cooking time and ease serving).
