1 tsp. chili powder, divided
4 boneless pork chops (1 lb.)
1 tsp. oil
1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
1 pkg. (10 oz.) frozen corn
1-1/2 cups instant white rice, uncooked
3/4 cup TACO BELL® Thick & Chunky Salsa

Steps:

  • Sprinkle half the chili powder evenly onto both sides of chops.
  • Heat oil in large skillet on medium-high heat. Add chops; cover. Cook 3 min. on each side or until done (145ºF). Remove from skillet; cover to keep warm.
  • Add broth, corn and remaining chili powder to skillet; stir. Bring to boil. Stir in rice; top with chops. Pour salsa over chops; cover. Simmer on medium-low heat 5 min. or until rice is tender. Remove from heat. Let stand, covered, 5 min.

6 tomatillos, husked and stems removed
1 jalapeno pepper, halved
cooking spray
1 1/2 lbs boneless pork chops, cut into 1/2 inch cubes
1 cup of chopped onion
3 minced garlic cloves
2 teaspoons ground cumin
1 teaspoon ground coriander
1/4 teaspoon salt
2 (14 ounce) cans chicken broth
1 (15 ounce) can hominy, drained
2 (4 1/2 ounce) cans chopped green chilies

Steps:

  • Place tomatillos and jalapeno peppers in a food
  • processor, process 1 minute or until smooth.
  • Heat a large dutch oven coated with a cooking spray
  • over medium-high heat. add pork, brown on all sides.
  • Add 1 cup onion, saute 3 minutes, add garlic and saute 30 seconds stir in cumin and the balance of the items, bring to a boil; reduce heat and stir in tomatillo mixture.
  • Simmer, uncovered for 45 minutes or until pork is tender.

This is my DD's recipe that she shared with me when she was living in Santa Fe. I am sure that every family in New Mexico has their own favorite version, but this is my favorite. It can also be cooked in a crockpot, but I like the texture of the stew, cooked on top of the stove.

1 1/2 lbs pork or 1 1/2 lbs beef, cubed
2 tablespoons flour
4 tablespoons oil
1 cup green chili (frozen; fresh roasted, peeled and chopped; or 1 cup canned...according to your personal heat prefere)
4 potatoes, cubed
2 onions, cubed
2 cloves garlic, minced
2 quarts chicken stock
water (if needed)
1 teaspoon salt
fresh ground pepper

Steps:

  • Sprinkle the pork with flour to lightly coat.
  • In a large pot (I use a Dutch oven), brown the meat in oil.
  • Add chiles, chicken stock, vegetables, salt& pepper, and water if needed.
  • Bring to a boil, lower heat to medium low.
  • Cover and simmer until meat and vegetables are done, and the stew is slightly thickened (about 3 hours).
  • You may cook in a crockpot for 6-8 hours.
  • Serve with flour tortillas.

"Curing" is simply marinating meat in a heavily salted or sugared solution. The meat absorbs moisture and stays tender when cooked. Try this curing solution on pork chops or pork tenderloins. 3 -4 lbs boneless pork loin roast
8 cups water
1 cup sugar
6 tablespoons chili powder
2 tablespoons salt
2 tablespoons thyme
1 tablespoon ground cumin
2 teaspoons fresh coarse ground black pepper
2 teaspoons dried oregano

Steps:

  • In large saucepan, heat all ingredients EXCEPT pork loin to boiling, stirring to dissolve ground spices and mix cure ingredients thoroughly. Remove from heat and cool to room temperature,.
  • Place pork loin in glass container large enough to immerse roast in cure solution, cover and refrigerate 2-4 days OR place roast in 2-gallon self-sealing plastic bag and pour cure solution over; seal bag and place in large bowl, refrigerate 2-4 days,.
  • Remove pork roast from cure, discarding cure solution. Pat pork gently dry with paper towels. Prepare covered grill with banked coals heated to medium-hot,.
  • Place roast over drip pan and cook over indirect heat for 45 minutes to an hour, until thermometer inserted reads 155-160 degrees F. Remove from grill and let rest for 15 minutes then slice to serve.

3 tablespoons oil
salt and pepper
1 cup uncooked long grain rice
1 1/3 cups water
1 (8 ounce) can tomato sauce
0.5 (1 1/4 ounce) envelope taco seasoning mix
1 small green bell pepper, chopped
1/2 cup shredded monterey jack cheese

Steps:

  • Season the chops with salt and pepper. Heat the oil in a skillet and cook the pork chops until browned on both sides.
  • In a 13x9x2-inch baking dish, combine the rice, water, tomato sauce and taco seasoning mix. Stir to combine.
  • Place the pork chops over the rice mixture and top with the green pepper. Cover the dish and bake at 350 degrees for 1 1/2 hours.
  • Uncover and top with the Monterey Jack cheese. Return to oven and let cheese melt.

1 lb pork tenderloin
1 (4 ounce) can chopped green chilies
1 tablespoon chili powder
1 tablespoon ground cumin
1 1/2 teaspoons black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1 teaspoon onion powder
1 teaspoon minced garlic
1 teaspoon olive oil
2 tablespoons chopped fresh cilantro
2 medium firm fresh peaches, peeled,pitted,and coarsely chopped
1/2 cup canned black beans, rinsed and drained
2 teaspoons balsamic vinegar
1 fresh jalapeno, stemmed,seeded,and chopped
1 tablespoon finely chopped red bell pepper
1 1/2 tablespoons chopped fresh cilantro
1 lime wedge
1/2 teaspoon sugar

Steps:

  • Trim tenderloin of fat, etc.
  • Cut pork tenderloin into medallions about 3/4" thick.
  • Mix together green chilies, chile powder, ground cumin, black pepper, cayenne, salt, onion powder, garlic, olive oil, and cilantro; process in blender or food processor until it becomes a smooth paste.
  • Rub each side of medallion with paste and allow to rest at room temperature for approximately 30 minutes.
  • Meanwhile, mix together peaches, black beans, balsamic, jalapeno, red bell pepper, cilantro, and sugar.
  • Squeeze in juice of lime wedge and adjust jalapeno and sugar flavorings to taste.
  • Grill pork medallions over medium mesquite coals (or use mesquite smoking chips with other coals or gas grills), cooking about 4-5 minutes per side, or until meat is cooked through.
  • Serve salsa spooned over medallions.

1 (15 ounce) can black beans
1 (15 ounce) can corn
1 cup salsa
8 ounces boneless pork chops
4 ounces light cream cheese

Steps:

  • Place black beans and corn in 4 qt crock pot.
  • Top with 1/2 cup salsa.
  • Lay chops on top.
  • Top with remaining salsa.
  • cover and cook on low, 3 hours. Cut cream cheese in small pieces, add to crock pot. Cook for an additional hour. Stir well. Serve with rice and /or tortillas.
