BROCCOLI CHEDDAR MELTS
Quite possibly one of the simplest meals, lunch or dinner in under twenty minutes. Plus you have your whole grains, your greens, and even some protein from the cheese, yum!

- 1. In a bowl, combine the broccoli, olive oil, chives, garlic powder, lemon zest, and a pinch each of salt and crushed red pepper flakes. 2. Spread the outside of each slice of bread with butter. On the inside of half of the slices of bread, evenly layer the cheeses and broccoli, topping the broccoli layer with a slight sprinkle of cheese. Add the top piece of bread, buttered side facing up.3. Heat a large skillet over medium heat and add a pat of butter.4. Place the sandwiches, one at a time, into the skillet and cook until golden on each side, about 4-5 minutes per side. Serve topped with greens and honey, if desired.

An idea of mine that stemmed from wanting a grilled cheese sandwich and then later thinking about broccoli and cheese and deciding to put them together, which came out very good!

Steps:
- Melt 1 tablespoon butter in a skillet over medium heat. Add broccoli and onion and cook until softened, about 5 minutes. Remove from heat and let cool.
- Distribute sauteed vegetables evenly on 2 slices of bread. Place 2 slices Cheddar cheese over the vegetables, season with garlic powder, and top with remaining 2 slices of bread.
- Melt 1 tablespoon butter in a nonstick skillet over medium-high heat, tilting the skillet to distribute the butter evenly as it melts. Place the sandwiches into the skillet and cook until the bottom piece of bread is golden brown, about 5 minutes.
- Melt remaining butter in the skillet. Carefully flip each sandwich, evenly coating the bread with melted butter. Cook until each sandwich is golden brown, 2 to 5 minutes more.

- Heat sandwich press.
- Chop broccoli into small pieces.
- Place one slice of buttered bread, butter side down.
- Place cheese slice, topped with chopped broccoli, topped with shredded cheddar on bread slice.
- Top with second piece of bread butter side up.
- Close press and let cook 5 minutes or until golden brown and crispy.
