This recipe was passed down to me from my grandmother. I hope you enjoy it as much as my family and friends have! Add any additional amount of anything, if desired. Make sure to add salt and pepper!

1 tablespoon olive oil
4 cloves garlic, minced
1 pound chicken tenderloins, diced
½ onion, diced
½ red bell pepper, diced
½ (15 ounce) can black beans, rinsed and drained
¼ cup chopped fresh cilantro, or to taste
½ cup chunky salsa
4 large flour tortillas, or as needed
¼ cup shredded Mexican cheese blend, or to taste

Steps:

  • Heat olive oil in a skillet over medium-high heat; saute garlic until fragrant, about 1 minute. Add chicken; cook and stir until chicken is no longer pink in the center, 5 to 7 minutes.
  • Mix onion, red bell pepper, black beans, and cilantro into chicken; saute until onion is tender, about 5 minutes. Stir salsa into chicken mixture until heated through, 1 to 2 minutes.
  • Spoon chicken mixture into tortillas and top with Mexican cheese blend.

8 corn tortillas
1 lb boneless skinless chicken breast, trimmed of fat and cut into thin strips
1/4 teaspoon salt (to taste)
2 teaspoons canola oil, divided
1 large onion, sliced
1 large green bell pepper, seeded and sliced
3 garlic cloves, minced
1 jalapeno pepper, seeded and minced
1 tablespoon ground cumin
1/2 cup prepared hot salsa, plus more for garnish
1/4 cup chopped fresh cilantro
sliced scallion
queso fresco
chopped fresh tomato
reduced-fat sour cream, for garnish

Steps:

  • Preheat oven to 300°F Wrap tortillas in foil and bake until heated through, 10 to 15 minutes.
  • Meanwhile, season chicken with salt. Heat 1 teaspoon oil in a large heavy skillet over high heat until very hot. Add chicken and cook, stirring until browned on all sides, about 6 minutes. Transfer to a bowl.
  • Reduce heat to medium and add the remaining 1 teaspoon oil to skillet. Add onion and cook, stirring, until they start to brown around the edges, 3 to 5 minutes. Add bell pepper, garlic, jalapeño and cumin. Cook, stirring, until peppers are bright green but still crisp, 2 to 3 minutes more.
  • Stir in salsa and reserved chicken. Cook, stirring, until chicken is heated through, about 2 minutes. Remove from heat and stir in cilantro. Spoon into warmed tortillas and garnish with scallions, queso fresco, tomatoes and sour cream.

2 teaspoons dried oregano
1 teaspoon ground cinnamon

1/2 teaspoon sweet paprika
3 tablespoons olive oil
3 boneless, skinless chicken breasts, cut into 1/4-inch-thick strips
3 bell peppers (red, yellow or orange), stemmed, seeded and very thinly sliced
1 large white onion, halved and thinly sliced
Eight 6- to 8-inch flour tortillas, warmed if possible 1/4 cup chopped fresh cilantro leaves
Sour cream, optional
Hot sauce, optional

Steps:

  • Combine the lime juice and zest, garlic, sugar, oregano, cinnamon, cumin, salt, pepper cayenne, paprika and 2 tablespoons oil in a large bowl. Add the chicken to the marinade and turn to coat. Cover the bowl with plastic wrap and refrigerate for at least 1 hour or up to overnight.
  • Heat the remaining tablespoon oil in a large skillet over medium-high heat. Remove the chicken from the marinade, letting the excess drip off, and add to the skillet. Cook, tossing occasionally, until the chicken starts to brown, 5 to 6 minutes. Add the bell peppers and onion and cook for until the vegetables are tender, 3 to 4 minutes more. Divide the chicken, peppers and onion equally among the eight tortillas. Garnish with the cilantro, sour cream and hot sauce, if using.

1 1/2 pounds boneless skinless chicken thighs, chopped into 1/2-inch pieces

1/2 cup finely chopped yellow onion (from 1/2 medium onion)
1/2 cup finely chopped green bell pepper (from 1/2 bell pepper)
3 garlic cloves, minced
2 (4-ounce) cans chopped green chiles, drained
1 cup low-sodium chicken broth
8 (6-inch) corn tortillas, warmed or toasted

Steps:

  • In a small bowl, mix oil with oregano and cumin. Heat a large nonstick skillet over medium-high. To the skillet add 2 tablespoons of the seasoned oil, half of the chicken, and season with salt and pepper. Cook, stirring occasionally, until the chicken is no longer pink and is lightly golden, about 5 minutes. Using a slotted spoon or spatula, transfer chicken to a plate. Add 1 tablespoon of the oil and remaining chicken to the skillet and repeat.

2 tablespoons plus 1 teaspoon lemon juice, divided
