PEANUT BUTTER PRETZELS ENERGY BALLS
An easy 15 minute snack made with ingredients you already have on hand. Crushed pretzels are mixed with peanut butter, honey and dried cranberries for a healthy no-bake energy ball that grown-ups and kids will love.

Steps:
- Place pretzels in a re-sealable plastic bag and crush with a rolling pin or heavy-bottomed skillet until broken up into small bits no bigger than a corn kernel. Stir peanut butter, honey and cinnamon together in a medium bowl. Stir in pretzel pieces and raisins with a wooden spoon until completely combined. Roll into 15 balls, about 1 generous tablespoon each, squeezing as you shape.

My kids and I love having these peanut butter energy balls on hand. They make for an easy and quick protein or bite of energy during the day. My husband also loves having these treats in his lunch box at work.

Steps:
- Combine oats, peanut butter, crushed walnuts, chocolate chips, and honey in the bowl of a stand mixer fitted with the paddle attachment; beat until well combined, adding more honey if the mixture is not holding together.
- Form 24 balls with a cookie scoop and place on a cookie sheet. Refrigerate until firm, 30 to 60 minutes.

Just spied this recipe in the January 2009 issue of EatingWell. What's not to love? Only a few ingredients AND they're chocolate, peanut butter and pretzels, three of my favorite things.

Steps:
- Combine the peanut butter and chopped salted pretzels in a small bowl.
- Freeze the mixture until firm, about 15 minutes.
- Roll the peanut butter-pretzel mixture into 20 small balls, about 1 teaspoon in size each.
- Place the balls on a baking sheet lined with parchment or wax paper.
- Freeze the balls for 1 hour.
- Melt 1/2 cup milk chocolate chips in the microwave or in a double boiler.
- Roll the frozen balls, one by one, in the melted chocolate.
- Place them back on the baking sheet and refrigerate them until the chocolate sets.

- Pulse the oats and pretzels through a food processor (one ingredient at a time) to get a more uniform chopped texture. I usually give each about 15 quick pulses. You want the texture to be “crushed” – somewhere between whole and completely ground.
- Mix all ingredients together until combined. Shape into balls (it helps to squeeze them to stick together) – usually I can get 20-25 with this recipe, depending on how many I eat during the shaping process. Chill in the fridge or freezer for 20-30 minutes. Done! I keep these in the freezer so they last longer and hold their shape nicely but they do well at room temperature for a day or two as well.
