Salted Caramel Cheesecake is a delicious and creamy cheesecake with a sweet and salty pretzel crust. Every bite is amazing.

2 1/3 cups Snyders Salted Caramel Pretzel Pieces, crushed in a food processor until they form fine crumbs
5 tablespoons salted Challenge Butter, melted
32 ounces cream cheese, room temperature
1 cup granulated sugar
4 large eggs; room temperature
1/2 cup heavy cream
1 tablespoon pure vanilla extract or vanilla bean paste
homemade salted caramel sauce

Steps:

  • Preheat oven to 325°F. Tightly wrap a 9 inch springform pan in heavy duty foil. This step prevents leaks when using a water bath. I also take the extra step by placing the foil wrapped spring form pan inside an oven bag while baking, but this is optional.
  • Mix together the crust ingredients and press into the bottom of your pan. Bake for 8 minutes and cool completely on a wire rack.
  • Begin to boil a pot or kettle of water for the water bath.
  • In the bowl of your stand mixer fitted with your paddle attachment, beat the cream cheese until smooth. Add sugar and mix until combined. Add eggs, one at a time, fully incorporating each before adding the next. Make sure to scrape down the bowl in between each egg. Add heavy cream and vanilla and mix until smooth.
  • Pour batter into prepared crust. Place pan into a larger pan and pour boiling water into the larger pan until halfway up the side of the cheesecake pan.
  • Bake 55-60 minutes, the edges will appear to be set, but the center will still have some jiggle to it. At this point, turn off the oven, but leave the door cracked and allow the cheesecake to rest in the cooling oven for one hour.
  • After one hour has passed, carefully remove the cheesecake from the water bath and place on a cooling rack to cool completely. Once the cake is completely cooled, place it into the refrigerator for at least 8 hours.
  • Serve with salted caramel sauce.

3/4 Cup crushed graham crackers
1/4 Cup sugar
1/8 teaspoon salt
1/2 Cup butter, melted
1/3 Cup butter
3/4 Cup brown sugar

1/2 teaspoon sea salt
2 (8 ounce) packages 1/3 of the fat cream cheese, softened
1/2 Cup sugar
2 eggs, room temperature
1 1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Stir together graham cracker crumbs, crushed pretzels, sugar, salt, and melted butter. Press into the bottom of a 9 or 10 inch pie plate.
  • Bake for 8 minutes. Remove from oven and let cool.
  • In a medium saucepan, combine butter, brown sugar, and half and half. Bring to a boil over medium-high heat, stirring constantly. Lower heat to medium and cook for 7-8 minutes until mixture thickens. Stir in salt one minute before finished cooking. Make sure to whisk occasionally to prevent scorching. Remove from heat and cool slightly.
  • While caramel is cooling, prepare cheesecake. In the bowl of a stand mixer, beat together cream cheese and sugar until creamy. Add in eggs and vanilla extract and beat until mixture is smooth.
  • Spread all but 1/4 cup of caramel over the top of cooled crust. Spread cream cheese mixture over top. Even top with a spatula.
  • Bake for 30 minutes or until center is set. Transfer to wire rack and bring to room temperature. Move cheesecake to refrigerator and refrigerate for at least 4 hours before serving.
  • Drizzle with remaining caramel right before serving.

1/2 cup graham cracker crumbs
1 Tbsp. brown sugar
3/4 tsp. kosher salt, divided
2 Tbsp. butter, melted
1-1/2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese (12 oz.), softened
1/2 cup granulated sugar
1 egg
12 KRAFT Caramels
1 Tbsp. milk

Steps:

  • Heat oven to 325°F.
  • Combine graham crumbs, brown sugar, 1/4 tsp. salt and butter; press onto bottoms of 24 paper-lined mini muffin cups.
  • Beat cream cheese and granulated sugar in medium bowl with mixer until blended. Add egg; beat just until blended. Spoon into muffin cups, adding about 1 Tbsp. cream cheese batter to each.
  • Bake 15 min. or until centers of cheesecakes are almost set. Cool completely. Refrigerate 1 hour.
  • Place caramels in small heatproof bowl. Add milk and 1/4 tsp. of the remaining salt. Place over pan of boiling water, making sure boiling water does not touch bottom of bowl. Cook until caramels are completely melted and mixture is well blended, stirring frequently.
  • Drizzle about 1 tsp. caramel sauce over each cheesecake; sprinkle with remaining salt. Refrigerate 1 hour.

CRUST:
8 caramel pretzel rods, crushed
1/2 stick butter, melted
3 Tbsp granulated sugar
CHEESECAKE:
4 pkg (8 oz.) cream cheese, softened
1 c granulated sugar
1 large egg yolk
3 large eggs
2 tsp vanilla extract
CARAMEL:
1 c granulated sugar
2 Tbsp water
1/2 stick butter
1/2 c heavy cream
a few pinches of sea salt

Steps:

  • 1. For the Crust: Preheat the oven to 325º and place a rack in the middle. Butter the bottom and sides of a 9-inch spring form pan. Mix together the caramel pretzel rods, butter and sugar in a bowl until combined.
  • 2. For the Cheesecake: Mix the cream cheese and sugar on medium speed until light and smooth. Add the yolk first and then the whole eggs one at a time. Add the vanilla extract and blend. Pour the mixture into the prepared pan and bake for 40 minutes or until a toothpick inserted into the cake comes out clean. Turn the oven off and leave the door slightly open to allow the cheesecake to cool completely.
  • 3. For the Caramel: While the cheesecake is baking, stir together the sugar and water in a small saucepan over medium-high heat. Bring it to a boil and let it boil until it turns amber in color, about 4 minutes. Immediately stir in the butter. Remove from heat and add the cream. Set aside to cool to room temperature.
  • 4. Pour the cooled caramel over the cooled cheesecake and sprinkle with sea salt.
  • 5. To Make Caramel Pretzel Rods: 8 large pretzel rods 5.5 ounces soft caramels 2 tsp cream Prepare a baking sheet by lining it with aluminum foil and set aside for now. Line a small loaf pan with foil and spray the foil with nonstick cooking spray. Place the unwrapped caramels and the cream in a microwave-safe bowl and microwave for 45 seconds, then stir. If the caramels are not melted, microwave for an additional 30 seconds, or until they melt when you stir them. Stir until the caramels and cream are completely smooth. Pour the melted caramel into the loaf pan and refrigerate until it sets, about 20-30 minutes. After the caramel sets, remove it from the pan using the foil as handles, and cut it into 8 equal pieces. Pick up one of the caramel pieces and roll it into a rope about 6 inches long. Press the top of the caramel rope into the top of a pretzel rod, and twirl it around the rod so that it winds about ¾ of the way down. Place the caramel-wrapped pretzel on the prepared baking sheet, and repeat with remaining caramel and pretzels. Refrigerate the wrapped pretzels.

2 cups milk chocolate chips
sea salt to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line an 11x17-inch baking sheet with aluminum foil or parchment paper.
  • Spread pretzels onto the prepared baking sheet.
  • Combine butter and brown sugar in a saucepan over medium-low heat; cook and stir until sugar is dissolved and mixture is thickened, 5 to 8 minutes. Pour mixture over pretzels.
  • Bake in the preheated oven for 5 minutes. Sprinkle chocolate chips over pretzel mixture. Bake for 1 minute more. Stir mixture to evenly spread chocolate over pretzels. Lightly sprinkle salt over pretzels. Cool until set, 2 to 3 hours. Break into pieces.

250g digestive biscuits
125g unsalted butter, melted
2 tbsp salted caramel sauce
750g full-fat soft cheese
2 tbsp salted caramel sauce
3 tbsp icing sugar
1 tsp vanilla extract
handful of chocolate-covered malted milk balls
20g chocolate-covered honeycomb, chopped
3 tbsp salted caramel sauce

Steps:

  • Tip the digestive biscuits into a food processor and pulse to fine crumbs. Pour in the butter and caramel sauce and pulse again until damp and sandy. Tip the mixture into a 20cm springform cake tin and use a spoon to press it into an even layer in the base of the tin. Chill for 30 mins.
  • For the filling, mix together the soft cheese, salted caramel sauce, sugar and vanilla extract. Once the base is cold and has firmed up, spoon over the filling and smooth the top with the back of the spoon. Chill for at least 4 hrs. If making ahead, wrap the cheesecake and freeze for up to three months instead. Leave in the fridge overnight to defrost.
  • To serve, carefully remove the cheesecake from the tin and put onto a serving platter or cake stand. Scatter over the shop-bought chocolates, crushing a few of the malted milk balls, then drizzle with the salted caramel sauce before cutting into slices.

50g butter, melted, plus extra for the tin
200g chocolate digestives
750g (3 tubs) cream cheese
300g caramel sauce (dulce de leche) from a tin or jar
1 tsp vanilla extract
150g golden caster sugar
2 tbsp plain flour
4 medium eggs

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter a 23cm springform cake tin and line the base with baking parchment. Tip the biscuits into a food processor, blitz to crumbs and pour in the melted butter. (You could also tip the biscuits into a bag, bash with a rolling pin into crumbs and mix in the butter.) Press the biscuit mixture into the base of the tin - the easiest way to do this is by flattening it with your hand under a sheet of cling film. Place the tin on a tray and bake for 10 mins, then remove from the oven to cool.
  • Meanwhile, scrape the cream cheese into a bowl with 3 tbsp of the caramel sauce, the vanilla, sugar and flour, and beat until smooth. Beat in the eggs, one at a time, until you have a thick, smooth custard consistency. Tip over the base, scraping the bowl clean, and bake in the oven for 10 mins. Reduce the temperature to 140C/120C fan/gas 1 and continue to bake for 25-30 mins until there is a slight wobble in the centre. Turn off the heat and leave the door just slightly ajar - a tea towel holding the door open is ideal. This should leave you with a completely smooth top, but if there are a couple of small cracks, don't worry. Leave the cheesecake in the oven until completely cool (overnight is fine), then chill until needed. Will keep in the fridge for two days.
  • On the day, loosen the sides of the cheesecake from the tin with a knife and remove the base (although I usually serve it straight from the tin base). Add a large pinch of flaky sea salt to the rest of the caramel sauce, then spoon it over the cake and swirl with the back of the spoon. The cheesecake will sit happily on a stand at room temperature for a couple of hours. Just before serving, sprinkle with extra sea salt, if you like.
