NACHOS MY WAY

Number Of Ingredients 18

3 large heirloom tomatoes (about 2 1/2 pounds), cored
1 large red onion
1 serrano chile pepper, stemmed
1 cup fresh cilantro (leaves and stems)
1 tablespoon Mexican beer (drink the rest!)
Juice of 1 lime
Kosher salt and freshly ground pepper
6 to 8 ounces nduja (soft Italian salami; available at boccalone.com)
1 8-to-10-ounce bag white corn tortilla chips
1 bunch scallions, thinly sliced
2 cups canned pinto beans, drained and rinsed
Finely grated zest of 1 lime
12 radishes, thinly sliced
1 cup queso fresco
1 cup fresh corn kernels
2 tablespoons pickled jalapeno slices, drained, or more to taste
2 hass avocados
1/2 cup fresh cilantro leaves

Steps:

  • Make the salsa: Roughly chop the tomatoes, onion and chile pepper and transfer to a food processor. Add the cilantro and beer and blend until chunky-smooth. Add the lime juice, 1 teaspoon salt, and pepper to taste.
  • Make the nachos: Preheat the oven to 300 degrees F. Render the nduja by sauteing it in a skillet over medium heat to give it a loose, spoonable consistency, 3 to 4 minutes. Toss the tortilla chips with the scallions, beans, lime zest, radishes, 1/2 cup queso fresco, the corn and pickled jalapenos in a large bowl. Add the rendered nduja and mix well. Place in a nonreactive casserole dish, then top with the remaining 1/2 cup queso fresco. Bake until the nachos are heated through (the cheese will not melt completely), about 10 minutes.
  • Spoon some of the salsa on top of the nachos (reserve the rest for dipping). Slice the avocados in half, remove the pits and dice inside the skin. Scoop out the avocado pieces and drop them on the top of the nachos along with the cilantro.

8 to 10 large beef steak tomatoes - seeded -skins removed - chopped fine
2 cup(s) red onion - chopped fine
2 large jalapeno peppers - roasted - chopped fine
30 clove(s) garlic - roasted - mashed
1 bunch(es) cilantro - stems removed - chopped fine
1 1/2 teaspoon(s) smoked cumin
1/2 teaspoon(s) cayenne pepper - or to taste
1 teaspoon(s) course sea salt - or to taste
1/4 cup(s) fresh lime juice
- zest from limes
1/2 teaspoon(s) garlic salt

Steps:

  • Begin by drizzling the oil over the onions, jalapeno peppers, and garlic, then roast for 40 minutes. Set aside and allow to cool.
  • Combine tomatoes, cilantro, cumin, cayenne, salt and allow to sit for 30 minutes. Then add the cooled onions, jalapenos, and garlic. Stir till mixed completely.
  • Place in a food processor and blend till desired constancy.
  • Place entire mixture in a large pan and bring to a boil for 3 minutes, then simmer for an additional 45 minutes.
  • Just before serving, Stir in the Lime Juice and Lime zest.
  • Enjoy this Salsa Cold. Serving with your favorite chips or crusty bread...

3 medium tomatoes, seeds removed and cut into quarters
1/4 c red onion, cut into chunks
3 small cloves garlic
1/3 - 1/2 c cilantro
1/3 c tomato sauce
1/4 tsp coriander powder
1 tsp chochula or other hot sauce (to your taste)
1/4 tsp sugar
1/2 - 1 tsp red wine vinegar (to your taste)
salt to taste

Steps:

  • 1. Chop tomatoes and onion into chunks and place in a food processor. Add remaining ingredients and pulse to desired consistency
  • 2. Let salsa ingredients sit for at least 1/2 - 1 hour.
  • 3. Serve as a condiment to grilled chicken, beef or on tacos.

Hello, My daughter lives in the UK Cornwall Anyway we love spicy foods and this is a wonderful salsa recipe. Make it as hot or as mild as you want the flavor will still be wonderful. It can be doubled or tripled or whatever. This recipe will feed 4 adults a snack. Let me know what you think.

3 serrano peppers
½ cup chopped onion
⅔ cup chopped fresh cilantro
1 clove garlic, peeled and crushed
salt to taste

Steps:

  • Place roma (plum) tomatoes and serrano peppers in a medium saucepan over medium high heat with enough water to cover. Bring to a boil. Boil 15 minutes. Remove from heat and drain.
  • Place roma tomatoes, serrano peppers, onion, cilantro and garlic in a blender or food processor. Puree about 30 seconds, or to desired consistency. Transfer to a medium serving bowl, and salt to taste.
