ROASTED TOMATO SALSA

Roasted Tomato Salsa image

This spicy roasted salsa has a nice kick to it, but it's not the kind of heat where you're making a mad dash for milk. It's just right. It keeps really well in the refrigerator. I think it tastes even better the next day after the flavors have had time to meld. Try it over fajitas or serve with a pile of chips. This is good stuff!

Time 45m

Number Of Ingredients 9

Roasted Tomato Salsa Ingredients:
15-20 medium tomatoes
5-10 Serrano peppers (or 5-10 jalapeño peppers)
1 red or green bell pepper (optional (we use it when we have one on hand))
2 medium yellow onions
1 head of garlic
1 bunch of cilantro
1 Tbsp salt
Don't forget the tortilla chips!

Steps:

  • Preheat oven to 375°F.
  • Cut tomatoes, onions and peppers in half. Scrape out the seeds from the peppers. Peel garlic. Lay vegetables cut-side up on two baking sheets, and roast for 25 minutes or until tomatoes and onions are soft.
  • After 25 min, move the rack to the highest position, set the oven to broil and roast vegetables for an additional 5 minutes. The tops of the serrano peppers should start to look charred (check on the veggies a couple times to make sure they don't turn too black). Remove the baking sheets from the oven being careful not to spill any of the tomato juices that have accumulated.
  • Let vegetables cool down a bit then use a food processor to blend everything together along with one bunch of cilantro, 1 Tbsp of salt and any tomato juice left in the baking dish (feel free to discard tomato juice for a thicker salsa. If your food processor is small, process in a few batches then mix it all together. Let cool to room temp, then cover and refrigerate until ready to eat.

ROASTED TOMATILLO SALSA, (SALSA DE TOMATILLO ASADO)

Roasted Tomatillo Salsa, (Salsa de Tomatillo Asado) image

Tomatillo's are used a lot in Mexican cuisine. My grandmother grew them in her garden all summer long. They are round, & green with papery husks all around them. Almost like a little bag. You tear the husk off and and wash the waxy coating off the tomatillo well in water. They are usually split in half & roasted then I use to...

1 large vidalia onion or white onion cut in half
1/2 c fresh cilantro leaves
4/5 Tbsp fresh key lime or regular lime juice
1/4 tsp sugar
2 large jalapeno peppers stemmed, roasted and chopped
1 tsp salt and 1/2 tsp pepper
1/4 tsp ground cumin
1/2 tsp garlic powder

Steps:

  • 1. Remove papery husk from the tomatillos and wash well under cool water. Cut them in half and keep the cut side down on a foil lined baking sheet. Put the the two stemmed rinsed jalapenos cut in halves as well seed side down (cut length wise) next to the tomatillos. Cut vidalia onion in half and palce cut side down next to the jalapenos and tomatillos Broil for 5 to 7 minutes to lightly blacken the skins of the veggies. You are looking for a light char. Watch that they do char real bad.
  • 2. Next Place the tomatillos, onions, jalapenos, lime juice, cilantro, sugar, & cum,in the food processor and pulse till the ingredients are finely chopped. Add salt and pepper & galic powder to season. Place in refrigerator and serve cold with tortilla chips or on top of grilled meats. Enjoy
  • 3. If you do not like the taste of lime you can reduce the tablespoons of lime juice to two or three. I will post my picture tomorrow of my tomatillo salasa, My camera died and I am re-charging it tonight.

OVEN ROASTED TOMATO SAUCE

Oven Roasted Tomato Sauce image

I have used this recipe for years and it never fails. I usually make it in the summer as we usually have a vegetable garden and always end up with too many tomatoes, I then make in batches, for the freezer. I use a lot of garlic in this recipe but thats because we love it and the garlic sweetens in the roasting process. I have strained the sauce at times to remove the seeds. Though most people don't mind tomato seeds.

ROASTED WHOLE TOMATO SAUCE

Roasted Whole Tomato Sauce image

This is what you've been waiting for: A sauce that can be made with fresh or frozen tomatoes that doesn't require any peeling or seeding--you don't even need to cut them up! Just toss the whole tomatoes in a pot with some onion, garlic and seasonings and let your oven do all the work. Cooking the vegetables low and slow breaks everything down to a rich flavorful base. A quick hit with a blender makes the sauce rich and smooth, without adding a bit of cream. It's so delicious you'd never guess how easy it is.

Provided by Food Network Kitchen

Time 2h15m

Yield 4 to 6 servings

Number Of Ingredients 9

2 1/5 pounds Roma or plum tomatoes
3 tablespoons extra-virgin olive oil
1 tablespoon packed fresh oregano leaves
4 cloves garlic
1 red onion, quartered
Kosher salt and freshly ground black pepper
1/2 teaspoon crushed red pepper flakes, plus more for serving, optional
1 pound spaghetti
Fresh basil leaves, for serving

Steps:

  • Preheat the oven to 300 degrees F.
  • Add the tomatoes, olive oil, oregano, garlic, onion, 1 teaspoon salt, 1/2 teaspoon black pepper and the red pepper flakes to a large Dutch oven or oven-safe pot with a lid. Stir so that everything is coated in oil and spices. Roast in the Dutch oven, uncovered, until the tomatoes start to soften and split, about 1 hour.
  • Stir and flip the tomatoes, then cook until the tomatoes, garlic and onion are all browned and very soft, about 1 hour more. At this point everything should be easily smashed with the back of a spoon. Transfer the pot to the stove and keep covered.
  • While the tomatoes finish roasting, bring a large pot of water to a rolling boil over high heat. Add 2 tablespoons salt and the pasta. Cook 2 minutes less than package instructions. Reserve 1 cup pasta water and drain the pasta.
  • Add 1/2 cup of the pasta water to the cooked tomatoes and carefully blend with an immersion blender, tipping the pot slightly if necessary to fully submerge the blender (or transfer to a regular blender) and blend until smooth. Bring the blended sauce to a simmer over medium-high heat, then add the drained pasta and cook for 2 minutes, stirring frequently. Adding more pasta water if the mixture needs to be saucier. Serve warm with a few basil leaves and a sprinkle of red pepper flakes.

Time 1h30m

Yield 6 cups

Number Of Ingredients 10

1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes

PESCADO GUISADO EN SALSA DE TOMATE (FISH IN TOMATO SAUCE)

Pescado Guisado En Salsa De Tomate (Fish in Tomato Sauce) image

This dish is almost like a thick fish stew. Wonderful server over rice or alongside rice and beans. Would be great served alone as well as a low carb dish.

Provided by cervantesbrandi

Categories     Mexican

Time 35m

Yield 4 serving(s)

Number Of Ingredients 10

4 red snapper steaks
4 tablespoons oil
3 jalapenos (sliced lenghwise in 8ths, stem removed)
6 roma tomatoes (roughly chopped)
1 medium white onion (roughly chopped)
6 garlic cloves (minced)
2 cups water
1/2 fish bouillon cube
salt and pepper
1 lime

Steps:

  • Start by heating the 4 tbsp of oil in a large pot on medium high heat.
  • Sprinkle each steak with salt and pepper and place them in the hot oil. As the fish is sauteing squeeze small amounts of lime juice onto each piece. This will keep the fish skin from becoming slimy during the cooking process.
  • Once the fish has sauteed on one side for 4 minutes carefully turn each piece onto the other side and saute an additional 2 minutes. Continue until all sides have been cooked.
  • Remove the fish onto a platter and set aside. Add the garlic, onions, and jalapenos into the oil that the fish cooked inches Saute the mixture for 5 minutes or until the onion has softened and translucent.
  • Next, add the tomatoes and saute for an additional 5 minutes. Add the water and fish flavored bouillon cube. Cover and bring to a boil. Let the tomatoes boil for 10 minutes and then turn the heat down to medium low.
  • Add the pieces of fish back into the pot and cover. Cook on medium low (low boil) for an additional 15 minutes. The dish is fully cooked once the fish flakes easily off of the bones.
  • Enjoy!
  • Note; If you love cilantro like I do you can dice up a handful and add it into the pot the last 2 minutes of cooking.
