2 wild salmon fillets (approximately 6 ounces (175 g) grams each)
salt and pepper
1 clove garlic, minced
1 tablespoon olive oil
1/4 teaspoon Dijon mustard
2 tablespoons lemon juice, freshly squeezed
1 tablespoon honey
1/3 cup pistachios, coarsely chopped

Steps:

  • Preheat oven to 375 F.
  • Rinse salmon and pat dry. Place salmon on a lined baking sheet. Season with salt and pepper to taste. Place salmon on a parchment-lined quarter sheet baking pan.
  • In a small bowl, combine garlic, olive oil, mustard, lemon juice, and honey. Spread 3/4 of the mixture evenly over the salmon.
  • Add pistachios to the remaining mixture and stir to combine. Spoon the pistachio mixture on top of the salmon and press lightly into salmon using the back of a spoon.
  • Bake for 15-20 minutes until salmon is flaky. Remove from oven and let rest for 5 minutes before serving.

Salt and pepper to taste
½ lemon (juiced)
1/4 tsp lemon zest
1 Tbsp course grain mustard (or Dijon)
1 Tbsp honey
¼ cup pistachio nuts (shelled)
2 Tbsp panko bread crumbs
1 Tbsp olive oil (or avocado oil)

Steps:

  • Preheat oven to 375F
  • Rinse salmon and pat dry with paper towel. Arrange salmon on a foil (or parchment paper) lined baking sheet, skin side down. Sprinkle salt and pepper to taste.
  • In a small bowl, combine lemon juice, lemon zest, mustard and honey. Spoon mixture and spread evenly over top of each salmon fillet.
  • Coarsely chop pistachios in a food processor (or with a knife ) and combine with panko and olive oil. Spread pistachio mixture on top of salmon, pressing lightly to adhere.
  • Bake until salmon is cooked through to your liking and pistachios are golden brown, approx. 15-20 min. Let salmon rest 5 min.(outside of oven) before serving (Salmon will continue to cook during this time so keep this in mind when removing salmon from oven) .

1/2 cup pistachios
1 large egg white, beaten

2 lemons, juiced
4 tablespoons stone-ground mustard
1 cup shelled pistachio nuts
1/2 cup panko bread crumbs
4 tablespoons canola oil
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the side of salmon on an oven proof baking sheet, skin side down. Mix the lemon juice and mustard together in a small bowl and spread sparingly over the top of the salmon.
  • Coarsely grind the pistachios in a food processer. Add the panko bread crumbs, the oil and salt and pepper, to taste. (The bread crumbs should be slightly wet, as it helps the stick to the salmon.)
  • Sprinkle the pistachio mixture over the mustard to cover the salmon evenly.
  • Put in the preheated oven and bake until the salmon reaches the correct doneness, about 15 to 20 minutes. Remove from the oven to a serving platter.

2 -3 teaspoons seafood, magic seasoning blend
1/2 cup pistachios, shelled

  • Process pistachios, 10 basil leaves and garlic cloves in processor until finely chopped. Add 1/2 cup butter and 1 teaspoon lime juice and process until incorporated into mixture. Steps:

  • Preheat oven to 425°F.
  • In a small bowl combine pistachio nuts, brown sugar, lemon juice, dillweed, and pepper; set aside.
  • Place salmon fillets in a greased, foil-lined 15x10x1-inch baking pan.
  • Measure thickness of fish.
  • Spoon pistachio mixture evenly on each fillet.
  • Gently press in place to form a crust.
  • Bake for 6 to 8 minutes for each 1/2-inch thickness of fish or until fish flakes easily when tested with a fork.
  • Pass pesto to serve with fish.
