MUSTARD-MAPLE ROASTED SALMON

Mustard-Maple Roasted Salmon image

Cilantro adds a nice note of freshness. If you don't like cilantro, you can use dill or parsley instead. This is super easy, but you can even prep the salmon ahead, coating it with the mix, and just pop it in the oven when ready to eat.

Provided by Food Network Kitchen

Categories     main-dish

Time 20m

Number Of Ingredients 6

2 tablespoons Dijon mustard
2 tablespoons finely chopped fresh cilantro

CEDAR PLANKED SALMON WITH MAPLE GLAZE AND MUSTARD MASHED POTATOES

Cedar Planked Salmon With Maple Glaze and Mustard Mashed Potatoes image

Plank cooking is a Native American technique that imparts a subtle smoky flavor to fish, meat, poultry, and vegetables. It is recommended to use a plank of untreated Western red cedar made specifically for cooking purposes.

Categories     Fish     Garlic     Ginger     Onion     Roast     Dinner     Lemon     Seafood     Salmon     Healthy     Maple Syrup     Soy Sauce     Simmer     Gourmet     Pescatarian     Dairy Free     Peanut Free     Tree Nut Free

Yield Serves 6

Number Of Ingredients 10

1 cup pure maple syrup
2 tablespoons finely grated peeled fresh gingerroot
4 tablespoons fresh lemon juice
3 tablespoons soy sauce
1 1/2 teaspoons minced garlic
2 1/2-pound center-cut salmon fillet with skin
Greens from 1 bunch scallions
Mustard Mashed Potatoes, to serve
Special Equipment
An untreated cedar plank (about 17x10 1/2") if desired

Steps:

  • In a small heavy saucepan simmer maple syrup, gingerroot, 3 tablespoons lemon juice, soy sauce, garlic, and salt and pepper to taste until reduced to about 1 cup, about 30 minutes, and let cool. (Maple glaze may be made 2 days ahead and chilled, covered. Bring maple glaze to room temperature before proceeding.)
  • Preheat oven to 350° F. If using cedar plank, lightly oil and heat in middle of oven 15 minutes; or lightly oil a shallow baking pan large enough to hold salmon.
  • Arrange scallion greens in one layer on plank or in baking pan to form a bed for fish.
  • In another small saucepan heat half of glaze over low heat until heated through to use as a sauce. Stir in remaining tablespoon lemon juice. Remove pan from heat and keep sauce warm, covered.
  • Put salmon, skin side down, on scallion greens and brush with remaining glaze. Season salmon with salt and pepper and roast in middle of oven until just cooked through, about 20 minutes if using baking pan or about 35 if using plank.
  • Cut salmon crosswise into 6 pieces. On each of 6 plates arrange salmon and scallion greens on a bed of mashed potatoes. Drizzle salmon with warm sauce.

SALMON WITH MAPLE AND MUSTARD SEED SAUCE

Salmon With Maple and Mustard Seed Sauce image

A French-Canadian entree recipe for salmon fillet seared over a high heat and served with a maple mustard seed sauce. I found this recipe on a French-Canadian food website, and have adapted it for posting for the 2005 Zaar World Tour. No serving sizes or preparation or cooking times were provided, so I have provided guesstimates. If you are reviewing this recipe, it would be helpful if you comment on these if you find the times to be different from my guesstimates. Thank you! This recipe was recommended on the website as being a particularly suitable dish to serve during Fall and Spring.

Maple Mustard Salmon Recipe by Tasty image

Here's what you need: unsalted butter, French's spicy brown mustard, maple syrup, apple cider vinegar, orange juice, kosher salt, paprika, salmon, olive oil, salt, peach, avocado, fresh cilantro leaves, jalapeño, lime, salt

Provided by Tayo Ola

Categories     Dinner

Yield 2 servings

Number Of Ingredients 16

2 tablespoons unsalted butter
1 ½ tablespoons French's spicy brown mustard
2 tablespoons maple syrup
1 tablespoon apple cider vinegar
1 tablespoon orange juice
1 ½ teaspoons kosher salt, plus a pinch, divided
½ teaspoon paprika
1 lb salmon, cut into fillets
1 teaspoon olive oil
1 teaspoon salt
½ peach, diced, small
½ avocado, diced small
¼ cup fresh cilantro leaves
½ jalapeño, thinly sliced
1 lime
1 pinch of salt

Steps:

  • Place butter, French's Spicy Brown Mustard, maple syrup, apple cider vinegar, orange juice, ½ teaspoon salt, and paprika in a small pot. Heat over low heat and whisk until butter has fully melted and the sauce starts to simmer. Continue simmering for a few minutes until sauce reduces to a glaze. Remove from heat and set aside.
  • Rub salmon with olive oil and sprinkle evenly with 1 teaspoon salt. Drizzle with a bit of the glaze.
  • Heat an oiled grill pan (or heat up a grill) over high heat. When hot, place the salmon flesh-side down into the pan. Cook until the salmon has clear grill marks, then carefully flip to cook on the other side. Brush with more glaze. Once salmon is cooked to your liking, remove from pan.
  • For salsa, lightly toss peach, avocado, jalapeño, cilantro, lime juice, and pinch of salt in bowl.
  • Top the salmon fillets with the peach-avocado salsa and serve immediately.
  • Enjoy!

1 tablespoon butter
1/4 cup finely chopped onions or shallots
1/2 cup white wine
1 tablespoon Canadian style whiskey
2 teaspoons dijon style mustard
2 tablespoons whole grain style mustard
1 teaspoon dried thyme
1/2 cup chicken or vegetable broth (plus more if needed)
1 cup cream
salt and pepper to taste
About a pound of salmon (cut into portions)
salt and pepper to taste
maple syrup for basting

Steps:

  • In a medium saucepan, saute the onions in the butter until tender.
  • Stir in the white wine, splash of whiskey and the mustards. Cook for 5 minutes or so.
  • Stir in the broth and thyme.
  • Reduce the heat and allow the liquid to reduce about half.
  • Stir in the cream and season with salt and pepper.
  • Continue to simmer over low heat until the desired consistency is reached. Add more broth, cream or mustard as needed. Season to taste with salt and pepper.

MAPLE-BAKED SALMON

Maple-Baked Salmon image

Salmon baked at a low temperature until medium-rare delivers a silky texture that tastes special enough to make it a festive centerpiece. This easy dish works any night of the week, since it comes together in less than half an hour. Maple syrup sweetens the glaze, which gets a savory pop from whole mustard seeds in Dijon. Even though salmon is naturally fatty, a dollop of mayonnaise adds extra richness while thickening the glaze to help it seal onto the fish. The herbaceous aroma of cilantro stems baked into the sauce brightens the dish, as do tender leaves scattered on top. Fill out your feast with any combination of steamed rice, roasted potatoes, green beans or salad.

Categories     dinner, lunch, snack, weeknight, seafood, main course

Time 25m

Yield 4 servings

Number Of Ingredients 7

1 (1 1/2-pound) skin-on or skinless salmon fillet
12 fresh cilantro sprigs
2 tablespoons pure maple syrup
2 tablespoons whole-grain Dijon mustard
1 tablespoon mayonnaise
Kosher salt and freshly ground black pepper
Lemon wedges, for serving

Steps:

  • Remove salmon from the refrigerator. Heat oven to 325 degrees.
  • Bundle the cilantro sprigs by their stems and hold them tightly, then slice the stems crosswise until you get to the leaves. Reserve leaves for garnish. Transfer sliced stems to a small bowl and stir in the maple syrup, mustard and mayonnaise until well mixed.
  • Season the salmon all over with salt and pepper and place in a baking dish, skin-side down if there is skin. Slather the maple sauce all over the top.
  • Bake until a paring knife slides into the center with only a little resistance, 15 to 20 minutes. When you remove the knife and touch the blade to your upper lip, it should feel very warm but not hot. The salmon will continue to heat through out of the oven while in the baking dish. Top with the reserved cilantro leaves, and squeeze lemon wedges all over just before serving.
