SMOKED SALMON, DILL AND CUCUMBER PASTA SALAD

Smoked Salmon, Dill and Cucumber Pasta Salad image

This is an improvisation on two recipes that I found on 'Zaar (#78690 and #211843). It makes a great summer dinner. You can substitute lowfat or nonfat sour cream for the mayo if you want something a bit lighter.

Provided by Chef Jean Louise

Categories     < 30 Mins

Time 30m

Yield 5-6 serving(s)

Number Of Ingredients 12

1 (7 ounce) container low-fat Greek yogurt
1 cup mayonnaise
2 teaspoons dill
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons brown sugar
1 tablespoon lemon juice
1 teaspoon Tabasco sauce
4 -6 green onions, chopped
1 medium cucumber, chopped
8 ounces wood-smoked salmon, cubed
1 lb spiral pasta or 1 lb shell pasta

Steps:

  • Cook pasta according to package directions; drain and chill by running it under cold tap water or, if you have time, putting it in a covered bowl in the refrigerator.
  • Combine the yogurt, mayo, dill, salt, pepper, brown sugar, lemon juice and tabasco until well-blended (I use a kitchen mixer for this).
  • Toss the dressing with the green onions, cucumber, salmon and pasta, (I use a mixer for this, too) and serve immediately.

LEMONY DILL SALMON PASTA SALAD

Lemony Dill Salmon Pasta Salad image

Most pasta salads have a mayonnaise base, which I thought was too heavy for a salmon pasta salad. I swapped in a vinaigrette of sorts, with just a dusting of freshly grated Parmesan cheese for a touch of indulgence. It's the perfect way to use any leftover salmon.

SALMON, ASPARAGUS AND PASTA IN A CREAMY DILL SAUCE

Salmon, Asparagus and Pasta in a Creamy Dill Sauce image

Flaky salmon, fresh green asparagus and al dente pasta is at its best when topped with a delicious and light dill sauce. What makes it even better is that it can be on your plate in 20 minutes or less!

Provided by SuperSpike

Categories     One Dish Meal

Time 20m

Yield 2 serving(s)

Number Of Ingredients 21

4 ounces pasta, use a short pasta like rotini or 4 ounces penne
8 ounces asparagus, pencil thin and cut into 1-inch lengths
1/2 teaspoon salt
1 quart water
8 ounces salmon fillets
1/4 teaspoon dill
1/4 teaspoon lemon pepper
1/8 teaspoon salt
heavy duty aluminum foil
cooking spray
1/3 cup nonfat dry milk powder
2/3 cup water
1 tablespoon cornstarch
1 teaspoon Dijon mustard
1/2 teaspoon dry dill weed
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1/4 teaspoon pepper
1/2 teaspoon salt
1 teaspoon light butter
1 teaspoon lemon juice, fresh

Steps:

  • Turn on your broiler and set your upper rack to the middle position. Let it preheat 5 minutes.
  • Set 1 qt of water to boil in a medium pot.
  • Take a 12" wide section of heavy duty foil and fold into thirds and then fold over the edges by 1/4"- this is what you will bake the salmon on (who doesn't like easy cleanup?). Spray the foil with a spritz of cooking spray, and season the salmon on both sides. Place on the foil and give the top of the salmon a spritz of cooking spray.
  • Bake under the broiler- this should take about 6-8 minutes. When its done, remove from the oven and set it aside to rest.
  • When your water comes to a boil, salt it and add the pasta. You will add in the asparagus during the last minute of cooking.
  • To make the sauce, whisk together the first 9 ingredients of the sauce in a small saucepan and set over medium heat. Stir occasionally. When it has thickened and no longer has a starchy flavor, take off the heat.
  • When the pasta and asparagus is done cooking, drain and return to the pan you cooked it inches Dice the salmon into bite sized pieces and add to the pasta.
  • Just before adding the sauce to the pasta, stir in the lemon juice and light butter. Dump this into the pan with the pasta, asparagus and salmon, toss gently until the pasta is completely coated with sauce.
  • Serve!

SALMON PASTA SALAD

Salmon Pasta Salad image

Provided by A Family Feast

Categories     salad

Time 1h

Number Of Ingredients 13

3 cups cooked salmon (leftovers from this recipe work great, or canned)
1 pound box penne pasta, or other favorite pasta shape
2 cups mayonnaise
1 cup sour cream
1 ½ tablespoons spicy brown mustard
3 tablespoons cider vinegar
1 tablespoon granulated sugar
1 ½ teaspoons celery salt
½ teaspoon white pepper
½ teaspoon garlic powder
2 cups frozen green peas, thawed
1 cup red bell pepper, diced
½ cup thinly sliced red onion, coarsely chopped

Steps:

  • If using canned salmon, pick the salmon meat from the bones and skin and set aside. If using cooked fresh salmon, break into large, bite-sized pieces.
  • The cooked pasta will be added to the dressing while it is still hot so make the dressing and prepare the vegetables before cooking the pasta.
  • Make the dressing in a very large bowl by combining the mayonnaise, sour cream, mustard, vinegar, sugar, celery salt, pepper and garlic powder.
  • Measure out and prepare the rest of the ingredients.
  • Place a large pot of salted water on to boil and cook the pasta to al dente.
  • Just before pouring the pasta into a colander, add the frozen peas to the water then immediately pour the pasta and peas to drain into the colander.
  • Shake off as much water as possible and dab the pasta with paper towels to soak up any last drops.
  • *Pour the hot pasta and peas into the large bowl that has the dressing and gentle toss to combine.
  • Add the red bell pepper and the onions and toss again.
  • Finally add the cooked salmon and gently fold to combine without breaking up the salmon too much.
  • Pour the mixture onto a sheet tray in a single layer* and place in the refrigerator uncovered for a quick cool down.
  • After an hour, remove the tray from the refrigerator and pour into a large serving bowl and refrigerate again until completely chilled, about 1-2 more hours.
  • Serve as a cold entrée over a bed of lettuce or as a side dish with a grilled meat.

SALMON PASTA SALAD WITH LEMON & CAPERS

Salmon pasta salad with lemon & capers image

Use frozen, skinless wild salmon fillets for a cheap and filling lunch on the go. This low-calorie, healthy dish couldn't be easier to whip up

Provided by Sara Buenfeld

Categories     Lunch

Time 30m

Number Of Ingredients 11

85g wholewheat penne
1 tbsp rapeseed oil
1 large red pepper , roughly chopped
2 frozen, skinless wild salmon fillets (about 120g each)
1 lemon , zested and juiced
2 garlic cloves , finely grated
1 shallot , very finely chopped
2 tbsp capers
6 pitted Kalamata olives , sliced
1 tsp extra virgin olive oil
2 handfuls rocket

Steps:

  • Cook the pasta following pack instructions. Meanwhile, heat the rapeseed oil in a frying pan, add the pepper, cover and leave for about 5 mins until it softens and starts to char a little. Stir, then push the pepper to one side and add the salmon. Cover and fry for 8-10 mins until just cooked.
  • Meanwhile, mix the lemon zest and juice in a large bowl with the garlic, shallot, capers and olives.
  • Add the cooked pepper and salmon to the bowl. Drain the pasta and add it too, with black pepper and the olive oil. Toss everything together, flaking the salmon as you do so. If eating now, toss through the rocket; if packing a lunch, leave to cool, then put in a container with the rocket on top and mix through just before eating.

Time 20m

Number Of Ingredients 12

Salt & pepper (to taste)
Flour (for dredging)
1 tablespoon olive oil
1 tablespoon butter
1/4 cup chicken broth (or dry white wine)
1 teaspoon lemon juice

1/2 cup heavy/whipping cream
1 tablespoon fresh dill (chopped)
Optional garnish: fresh parsley, parmesan cheese

  • Boil a salted pot of water for your pasta. Cook it al dente according to package directions. I suggest starting the sauce once the water's boiling.
  • Season the salmon with salt & pepper and coat it in the flour.
  • Add the oil and butter to a skillet over medium-high heat. Once the pan is hot, add the salmon and cook it for 2 minutes/side, then take the fish out of the pan and set it aside.
  • Add the chicken broth, lemon juice, and garlic to the pan. Let it bubble for about 30 seconds. Reduce the heat to medium.
  • Add the cream, dill, and salmon back into the pan. Break the fish up with your spoon into bite-size pieces. Cook it for a few more minutes until it's cooked through and the sauce has reduced and thickened a bit.
  • Drain the pasta and add it to the skillet. Toss it & serve immediately with parsley and parmesan cheese if desired.

CREAMY SALMON PASTA

Creamy salmon pasta image

Indulge in this creamy salmon dish for two. It's comforting and filling, and ready in just 30 minutes. Serve with a green salad

Provided by Anna Glover

Categories     Dinner

Time 30m

Number Of Ingredients 9

2 salmon fillets
1 tbsp olive oil, plus 1 tsp if roasting
175g penne
2 shallots or 1 small onion, finely chopped
1 garlic clove, crushed
100ml white wine
200ml double cream or crème fraîche
¼ lemon, zested and juiced
½ small bunch dill, finely chopped

Steps:

  • You can either steam or roast the salmon, depending if you want to turn the oven on or not. To roast, heat the oven to 200C/180C fan/gas 6, place on a baking tray, drizzle with oil and roast for 12 mins until opaque and the flesh starts to flake when pressed. To steam, place the fillets skin-side down in a steamer, and steam over a pan of simmering water for 8-10 mins until cooked.
  • While the salmon is cooking, boil the pasta for 10 mins until al dente, then drain, reserving 100ml of the pasta water.
  • Heat the oil on a medium heat in a wide frying pan and fry the shallot for 6 mins until softened, but not turning golden. Add the garlic and fry for a minute more until fragrant. Add the wine, bubble for a few minutes until reduced by half, then add the cream and season well. Bring to a very gentle simmer.
  • Flake the cooked salmon into big chunky pieces, leaving the skin behind. Add to the sauce with the cooked pasta. Add the lemon zest, a squeeze of the juice and most of the dill. Add a splash of the pasta water to the sauce to coat the pasta if you need to. Toss gently to keep the salmon in big pieces. Check the seasoning, if using double cream you may need a squeeze more lemon juice. Grind over some black pepper and scatter over the remaining dill. Serve with a green salad.
