THAI SALMON PARCELS

Adapted from the Uwajimaya recipe website. I haven't had a chance to try it yet (thus I'm guessing at preparation time), but I will! I will probably substitute butter-flavored cooking oil for the butter when I make it.

1 lime, zest of
1 lime, juice of
2 garlic cloves, crushed
2 scallions, finely chopped
1 tablespoon grated ginger
1 tablespoon fresh cilantro, finely chopped
4 sheets phyllo dough
2 tablespoons butter, melted
2 (4 -5 ounce) salmon fillets
salt and pepper

Steps:

  • Mix together lime zest through cilantro.
  • Lay out 1 sheet of filo and brush with 1/2 Tbs butter.
  • Lay 2nd sheet on top and brush with more butter.
  • Lay a salmon fillet 2-3 inches from short side of phyllo, season to taste with salt and pepper and put half of lime mixture on top.
  • Fold short end of phyllo over salmon, and then fold in the 2 long sides.
  • Fold the salmon over twice more, and cut off the remaining pastry.
  • Do the same with the other fillet.
  • Put the parcels on a greased baking sheet and brush with any remaining butter.
  • Bake at 325° 20-25 minutes until brown and crispy.

My best friend in England gave me this recipe. It's fast, tasty and quite elegant I think - and I usually have the ingredients on hand. Creme Fraiche is not readily available in Canada yet, so I have used both plain yogurt and sour cream, and even low-fat and no-fat versions. For petit pois I use good quality tiny peas and for greaseproof paper I substitue wax paper. Parchment would be fine too.

2 salmon fillets
2 small leeks, very finely sliced
2 ounces frozen petits pois
4 tablespoons creme fraiche, plus
2 tablespoons creme fraiche, to serve (optional)
1 tablespoon fresh tarragon or 1 teaspoon dried tarragon

Steps:

  • Arrange each salmon fillet on a 14" (35cm) square of greaseproof paper and season.
  • Top each fillet with leeks and peas and 2 tbsp of creme fraiche.
  • Sprinkle with pepper and salt and tarragon.
  • Fold the paper over at the top and fold the ends underneath (think gift wrapping) and put them on a microwave-proof plate.
  • Cook on full power for 5 minutes. (I have a smaller, older, over the stove microwave and they need 7 minutes).
  • Unwrap and slide onto 2 plates and top with extra creme fraiche if using.
  • I like to serve these with tiny new potatoes.

4 (200 g) salmon fillets, pinboned
250 g chat potatoes, thinly sliced
2 (175 g) Broccolini, trimmed and sliced
100 g butter, softened
3 teaspoons lemon rind, finely grated
1 tablespoon chives, chopped
salt and pepper

Steps:

  • Preheat oven to 355°F.
  • Cut 4 x 30 cms squares of non stick baking paper.
  • Lay potato on centre of each.
  • Top with broccolini and salmon.
  • Combine butter, rind, chives, salt and pepper in a bowl and spread onto salmon fillets.
  • Fold paper up to form sealed parcels.
  • Place, seam side up on a baking tray.
  • Bake 20 minutes, rest parcels 5 minutes before opening.

3 1/2 ounces egg noodles
2 skinless salmon fillets
2 scallions, shredded
1 red chili pepper, shredded
7/8 cup chicken stock
2 tablespoons mirin
1 tablespoon soy sauce

Steps:

  • Heat the oven to 375°F Cook the noodles until just tender as they will get cooked a little more in the oven. Drain and rinse under cold water, then drain again.
  • Take two large squares of baking parchment or foil and divide the noodles between them. Sit a salmon fillet on top, then add the scallions and chili.
  • Scrunch the edges up a bit, then pour over the rest of the ingredients. Seal at the top to make parcels, then bake for 10 minutes. Leave for 2 minutes before opening.
