Salmon Loaf with Dill Sauce image

Elevate your meatloaf by serving a fish loaf with dill sauce! Your guests will love it, especially topped with the tasty white sauce.

18 ounced canned salmon (or leftover cooked salmon meat)
1 cup crushed pork rinds
1/2 cup almond milk (or canned coconut milk)
2 large eggs
1 tablespoon dried parsley
1 teaspoon dry dill weed
salt and ground black pepper (to taste)
1 batch dill dijon mustard sauce

Steps:

  • In large mixing bowl, combine all ingredients.
  • Press mixture into an 8x4-inch loaf pan or shape into a loaf on a baking pan.
  • Bake at 350°F for 45 minutes or until outside is browned. Serve with dill dijon mustard sauce.
  • In small bowl, whisk together all sauce ingredients. Chill before serving.

1 salmon fillet (about 2 pounds)
1 to 1-1/2 teaspoons lemon-pepper seasoning
1 teaspoon onion salt
1 small onion, sliced and separated into rings
6 lemon slices
1/4 cup butter, cubed
DILL SAUCE:
1/3 cup sour cream
1/3 cup mayonnaise
1 tablespoon finely chopped onion
1 teaspoon lemon juice
1 teaspoon prepared horseradish
3/4 teaspoon dill weed
1/4 teaspoon garlic salt
Pepper to taste

Steps:

  • Line a 15x10x1-in. baking pan with heavy-duty foil; grease lightly. Place salmon skin side down on foil. Sprinkle with lemon pepper and onion salt. Top with onion and lemon. Dot with butter. Fold foil around salmon; seal tightly,, Bake at 350° for 20 minutes. Open foil carefully, allowing steam to escape. Broil 4-6 in. from the heat for 3-5 minutes or until the fish flakes easily with a fork., Meanwhile, combine the sauce ingredients until smooth. Serve with salmon.

1 (14.75 ounce) can salmon, undrained
½ cup crushed saltine crackers
½ cup milk
1 egg, beaten
salt and pepper to taste
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine the salmon, cracker crumbs, milk, egg, salt, pepper, and melted butter. Mix thoroughly.

0.25 cups milk
2 units eggs
2 tablespoons parsley
1 tablespoons lemon juice
0.25 teaspoons dill weed
1 units black pepper
1 units creamy dill sauce
0.25 cups light cream
0.5 teaspoons dried dill
1 units salt and pepper
1 tablespoons butter

Steps:

  • Salmon Loaf
  • Drain and flake salmon, reserving 2 tablespoons liquid. Combine flaked salmon and reserved liquid with remaining ingredients.
  • Place in well-greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan or shape into loaf on greased baking pan. Bake at 350ºF for 45 minutes.
  • Creamy Dill Sauce
  • In a 1 cup glass measuring cup combine all ingredients. Cook on high for 1 minute or until sauce comes to a boil. Pour hot sauce over Salmon Loaf.

2 eggs, beaten
1/2 pint sour cream
3 tablespoons sugar

4 tablespoons Dijon mustard
2 tablespoons white vinegar
1/4-1/2 cup oil
1 bunch dill, chopped

Steps:

  • For the loaf, mix all loaf ingredients together and bake in a loaf pan at 350 degrees F. for 35 minutes.
  • For the sauce, add the oil slowly, a small amount at a time; may not use all, with the other sauce ingredients in a bowl.

2/3 cup skim evaporated milk

1 egg, beaten
1 tablespoon lemon juice
1/4 teaspoon celery salt
1/4 teaspoon pepper
vegetable oil cooking spray
3/4 cup plain low-fat yogurt
1/2 cup unpeeled diced cucumber
1/4 cup reduced-calorie mayonnaise
1 tablespoon minced fresh onion
1 teaspoon chopped fresh parsley
1/4 teaspoon dried whole dill weed
1/8 teaspoon salt

Steps:

  • For the Salmon Loaf:.
  • Combine salmon, breadcrumbs, milk, onion, green pepper, egg, lemon juice, celery salt, and pepper; mix well.
  • Press mixture into an 8x5x3-inch loaf pan coated with cooking spray.
  • Bake at 375 degrees F for 45--50 minutes, or until done. Remove from oven and let stand 3 minutes.

1/2 cup chopped onion
2 tablespoons canola oil
1 cup soft bread crumbs
1 large egg, lightly beaten
2 tablespoons 2% milk

1 can (7-1/2 ounces) salmon, drained, bones and skin removed
DILL SAUCE:
1/2 cup mayonnaise
1/4 cup sour cream

Steps:
