  • Melt the butter in a skillet over medium heat; cook the salmon in the butter until browned and flaky, about 5 minutes per side. Serve each piece of salmon with a lemon wedge.

3/4 lb salmon fillet, cut in half
lemon
1 teaspoon fresh dill, chopped
2 tablespoons mayonnaise
salt
white pepper

Steps:

  • Preheat oven to 400°F.
  • Place the filets skin-side down in a baking dish.
  • Squeeze the lemon over and lightly sprinkle with salt and white pepper, then sprinkle the dill over the filets and let set for fifteen minutes.
  • Spread the mayonnaise evenly over the entire surface.
  • Place on a high shelf in the oven, just under the broiler element, and bake for 10 to 15 minutes for each inch of thickness.
  • Turn on the broiler for a few minutes, just until the mayonnaise starts to brown.

1/4 teaspoon black pepper
½ teaspoon garlic powder

1 tablespoon olive oil

4 lemon slices (¼-inch thick)
2 tablespoons chopped parsley

Steps:

  • Season the salmon with salt, pepper, garlic powder, and dried thyme.
  • Heat the olive oil and butter over medium-high heat in a large nonstick skillet, swirling to coat.
  • When the butter starts foaming, add the salmon fillets to the pan, skin-side-down. If using, add the lemon slices too.
  • Fry the salmon, undisturbed, until the skin is crisp and browned, about 4 minutes.
  • Flip the fish and the lemon slices over, lower the heat to medium, and continue cooking until the fish is cooked through, 2-3 more minutes.*

Living on the west coast, we have eaten a great deal of salmon. This is ABSOLUTELY the best way we have found to cook it. It is so moist and the flavor is fantastic! Many reviewers have said that they think the cheese, especially the cheddar is unnecessary, and I have to admit that I omit the cheddar cheese myself. The flavour is a little too strong and it is extra fat that is not needed. I do like the sprinkling of parmesan with the paprika because it looks so nice when it is broiled. Using light mayonnaise and light sour cream or yogurt tastes just as good as the full fat versions and cuts down fat and calories even more. Thanks for all the great reviews!

1/3 cup sour cream (light is fine) or 1/3 cup yogurt
2 teaspoons prepared mustard
2 teaspoons onions, finely minced
2 teaspoons dried dill weed

  • Preheat oven to 450 degrees.

  • Generously season the salmon fillets with salt and pepper. Put the oil and butter in a non-stick frying pan over a medium heat, swirling around the pan until melted and foaming, then turn up the heat. Kosher salt
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
1/2 lemon, sliced into rounds
Parsley for garnish
Zest of 1 large lemon
Juice of 2 lemons
3 tbsp extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
5 garlic cloves, chopped
2 tsp dry oregano
1 tsp sweet paprika
1/2 tsp black pepper

Steps:

  • Heat oven to 375 degrees F.
  • Make the lemon-garlic sauce. In a small bowl or measuring cup, mix together the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano, paprika and black pepper. Give the sauce a good whisk.
  • Prepare a sheet pan lined with a large piece of foil (should be large enough to fold over salmon). Brush top of the foil with extra virgin olive oil.
  • Now, pat salmon dry and season well on both sides with kosher salt. Place it on the foiled sheetpan. Top with lemon garlic sauce (make sure to spread the sauce evenly.)
  • Fold foil over the salmon (seam-side up). Bake for 15 to 20 minutes until salmon is almost completely cooked through at the thickest part (cooking time will vary based on the thickness of your fish. If your salmon is thinner, check several minutes early to ensure your salmon does not overcook. If your piece is very thick, 1 1/2 or more inches, it may take a bit longer.)
  • Carefully remove from oven and open foil to uncover the top of the salmon. Place under the broiler briefly, about 3 minutes or so. Watch closely as it broils to make sure it doesn't overcook and the garlic does not burn.)

1 cup orange juice (or pineapple juice)
1 tablespoon honey
2 tablespoons dark brown sugar
1 ½ tablespoons low sodium soy sauce
1 tablespoon fresh ginger (grated)
2 cloves garlic (minced)
½ teaspoon sesame oil

Steps:

  • Combine all marinade ingredients in a small bowl. Set aside two tablespoons of marinade for brushing salmon. Pour remaining marinade over salmon and marinate at least 1 hour or up to 4 hours.
  • Preheat oven to 400°F.
  • Place salmon, skin side down, in a baking dish and discard marinade. Season with salt and pepper.

4 wild caught salmon fillets (about 1/2 pound or 250 grams each, skin off or on)
Salt and pepper, (to season)
1/2 teaspoon paprika ((mild, sweet or smokey))
2 tablespoons butter
4 cloves garlic, (finely chopped or minced)
4 tablespoons honey
1 tablespoon water
2 teaspoons soy sauce
1 tablespoon fresh squeezed lemon juice, ((plus extra to serve))
Lemon wedges (to serve)

Steps:

  • Arrange oven shelf to the middle of your oven. Preheat oven to broil/grill settings on medium heat.
  • Season salmon with salt, pepper and paprika. Set aside.
  • Heat the butter in a skillet or pan over medium-high heat until melted. Add the garlic and sauté for about a minute, until fragrant. Pour in the honey, water and soy sauce; allow the flavours to heat through and combine. Add in the lemon juice; stir well to combine all of the flavours together.
  • Add the salmon steaks to the sauce in the pan; cook each fillet (skin-side down if there's any skin) for 3-4 minutes or until golden, while basting the tops with the pan juices. Season with salt and pepper, to taste (if desired).
  • Optional -- Add the lemon wedges around the salmon (adds a stronger lemon taste). Baste salmon one more time then transfer the pan to your oven to broil / grill for a further 5-6 minutes, or until the tops of the salmon are nicely charred, and the salmon is cooked to your liking.
  • To serve, drizzle with the sauce and a squeeze of lemon juice. Serve with steamed vegetables; over rice or with a salad.
