WRAPPED SALMON
This is basically salmon Dijon, but with a twist. Very easy to make and delicious! Goes well with fresh steamed veggies and rice.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Cut the filets into log shaped pieces, about 2 inches wide by 5 inches long, keeping the filet portions separate. Take 2 sheets of phyllo dough, placing one on top of the other, and brush lightly with melted butter, covering the one side completely.
- Place a portion of salmon (6 ounces), on the edge, nearest you, of the phyllo dough. Sprinkle with salt and pepper to taste. Coat the portion of salmon with 1 tablespoon of Dijon mustard.
- Fold the phyllo dough, nearest you, over the salmon and make one complete wrap. Take the sides of the dough and fold them towards the center, and continue rolling up the dough. Brush all sides with butter, covering completely and place on a cookie sheet. Repeat steps for remaining portions of salmon.
- Bake in preheated oven for 20 minutes or until phyllo dough is golden brown.

SALMON WITH MANGO AND BRIE
Delicate salmon is topped with a wonderful combination of mango and Brie cheese. The best part is that the Brie bakes with the salmon. Wonderful with a spinach salad and fresh bread.

ROASTED SALMON & VEG TRAYBAKE
Wonderfully simple to knock together, this is the kind of dish you can make from memory again and again. The clean, light flavours are a joy to eat, and the basil & mustard yoghurt adds an extra punch of delicious flavour.

SALMON AND BRIE PIE
Russ and I bought individual ones of these in Tasmania. This is my attempt to recreate them (and I think I got them better than right). I made 1 pie in an 8 inch pie dish using pre rolled sheets of short crust (which is how we get it in Australia).

Steps:
- Preheat oven to 200c.
- Lay 1 sheet of pastry in pie dish, prick with a fork, cover with baking paper and then pour over a layer of dried beans, rice or lentils and bake in the oven for about 12 minutes. Remove, remove the foil and filling (and discard or save for your next pie.).
- Meanwhile, melt the butter, add the diced onion and cook until softened but not coloured. Add the flour and cook, stirring for about a minute. Add the milk and whisk until smooth and thickened.
- Remove from the heat and add in the lemon juice, salmon, brie, green onion, dill leaves and pepper (I tasted here and found it didn't need any salt).
- Brush a little milk around the edge of the pastry bottom, pop on the top and trim to fit your pie dish. Brush more milk across the top. Prick a few holes in the top pastry to allow steam to escape.
- Cook for 10 minutes at 200c then reduce the oven temp to 180c and cook a further 20 minutes or until golden brown.
- We ate ours served with a leafy grean salad dressed with lemon infused olive oil and white wine vinegar.

SALMON BRIE BAKE
I found this recipe when trying to find ways to use up an excess of a brie-like cheese I'd purchased. I changed it around to use canned salmon, which I find a great way to get those healthy fish in your diet. The flavors meld together so there's not really a strong flavor of either the brie or the salmon. Excellent as a brunch but also good for any meal.

SMOKED SALMON AND BRIE QUICHE
I found this in the latest (winter 2006) "Food & Drink" magazine put out by the LCBO (Liquor Control Board of Ontario). So many of their recipes are simple and so very tasty...just as this one is. I have used milk in the place of cream and it has worked out just fine. Makes a great meal with a nice green salad

BAKED BRIE WITH PHYLLO, HOT HONEY, AND ANCHOVIES
While most baked Bries are on the sweet side, with layers of jam or chutney under the crust, here I go savory with anchovies, garlic, and roasted bell peppers.
Provided by Melissa Clark
Yield Serves 10-12
Number Of Ingredients 9
Steps:
- Heat the oven to 425°F. In a small bowl, stir together the roasted bell pepper, anchovies, garlic, and lemon zest. Set aside.
- On a clean work surface, lay out the phyllo dough and cover it with a barely damp kitchen towel to keep it from drying out. Take 2 phyllo sheets and lay them in an 11 × 17-inch rimmed baking sheet. Brush the top sheet generously with melted butter, then lay another 2 phyllo sheets on top the opposite way, so they cross in the center and are perpendicular to the first two (like making a plus sign). Brush the top sheet with butter. Repeat the layers, reserving 4 sheets of phyllo.
- Using a long sharp kitchen knife, halve the Brie horizontally and lay one half, cut-side up, in the center of the phyllo (you will probably need another set of hands to help lift off the top layer of cheese). Then spread the red pepper mixture all over the top. Cover with the other half of Brie, cut-side down, and then fold the phyllo pieces up around the Brie. There will be a space in the center on top where the Brie is uncovered, and that's okay.
- Lightly crumple one of the remaining sheets of phyllo and place it on top of the phyllo/Brie package to cover up that space. Drizzle a little butter on top, then repeat with the remaining phyllo sheets, scattering them over the top of the pastry and drizzling a little butter each time. It may look messy but will bake up into gorgeous golden waves of pastry, so fear not.
- Bake until the phyllo is golden, 20 to 25 minutes. Remove it from the oven and let it rest for about 15 minutes before drizzling it with the hot honey. Slice (it will be runny) and serve with crackers or bread, and with more hot honey as needed.

- Juice the lemons. A tip: before you slice them, roll them around on the counter while squishing them down. This allows the juice to be squeezed out a lot easier. Squeeze the juice into a small mixing bowl.
- Add the oil, garlic, oregano, basil, and salt. Add a few turns of freshly ground black pepper. Stir.
- Lay out salmon in a glass baking dish (preferably one that fits all the salmon snugly, but without overlapping or being too squishy, like mine).
- Pour lemon mixture over the salmon, lifting each piece slightly with a fork to make sure each piece is coated. Let it marinate for 20-30 minutes (technically it should be in the fridge for food safety, but I left mine on my counter).

- Marinate the salmon with balsamic, sea salt and honey for 10 min. After that, sprinkle turmeric powder and cumin powder. Smear well on both the sides and marinate again for 10 min.
- With the help of a sharp knife, carefully make pockets in the fillets. Stuff a small sprig of rosemary in each.
- Grill the fillets in the oven for around 15 minutes, flipping the pieces once in between. Remove from the grill.
- For the smoking the salmon with ghee, heat a small iron wok. When it is very hot, switch off the gas and immediately add the salmon pieces. Quickly dot the insides of the wok with ghee. You will see lots of smoke coming out. Don’t let the smoke escape. Quickly cover the wok. Wait for 2 min. Remove the fish.
