CANADIAN MAPLE CEDAR PLANK SALMON

Canadian Maple Cedar Plank Salmon image

This rich, mildly smoky Canadian Maple Cedar Plank Salmon is glazed with maple syrup, balsamic, grainy mustard, butter & garlic. Easy and mouthwatering!

Categories     Main Course

Time 25m

Number Of Ingredients 9

2 salmon fillets with skin on one side - 3/4 to 1 pound ((about 1-1.5 inch thick))
chopped parsley for garnish (optional)
sea salt for finishing
2 tablespoon butter
3 tablespoon pure Maple Syrup ((or brown sugar))
2 tablespoon grainy or old fashioned mustard
2 tablespoon balsamic vinegar
1 teaspoon minced garlic ((1 clove))
1 teaspoon cornstarch ((this will help glaze adhere to salmon))

Steps:

  • SOAK THE PLANK: Soak a plank in cold water for 10 minutes for a 1/4 inch plank (or 30-60 minutes for 1/2 inch plank). I use a thin plank and just toss it out when I'm done. Cedar planks are great for salmon as they provide a gentle smoky taste.
  • HEAT THE GRILL TO HIGH.
  • MAKE THE GLAZE: Place all glaze ingredients in a microwaveable bowl or measuring cup. Stir. Microwave for 1 minute on high. Glaze will be slightly thickened. Let cool for 5 minutes if using part as a marinade (Note 1). Alternatively, place ingredients in a small saucepan and simmer on medium heat for a few minutes until thickened.
  • GRILL PLANKED SALMON: Note 2. Pat plank dry. Spray with oil. Place salmon on top of plank, skin side down. Brush salmon with 1/3 of glaze. Place plank on grate of barbecue, close cover and grill for 3 minutes for thinner plank (a little longer if using a thicker plank) until plank starts charring and smoking. Have a glass of water on hand in case of flare ups. Brush 1/3 more glaze on top of salmon. Turn off burner/heat under the salmon (salmon should now be on indirect heat) and close lid. The other burner(s) should still be left on high or med-high heat with the temperature of the BBQ at about 425F-450F/218-232C. Cook for another 7 minutes or until salmon just begins to turn opaque. Instant thermometer will show an internal core temperature of 130-135F/54.4-57C (temp will rise while resting). Salmon should be a warm pink in the thickest part. Drizzle with remaining glaze. Rest salmon for 5 minutes loosely covered with a foil.
  • SERVE: Slide a spatula between the skin and the salmon. The salmon will lift right off leaving the skin on the charred wood plank. Transfer to a plate. Sprinkle with chopped parsley if desired and some good sea salt and/or lemon zest.

GRILLED CEDAR PLANK SALMON

Grilled Cedar Plank Salmon image

Using a cedar plank to grill salmon is an effortless way to add enormous flavor to your dish. The fish takes on a lovely smokiness, stays wonderfully moist and the skin doesn't stick to the grates. We spiced ours up with a maple-ginger marinade and whipped up a quick side salad for a tasty, incredibly easy weeknight meal.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h30m

Yield 4 servings

Number Of Ingredients 11

1/2 cup rice wine vinegar
2 tablespoons pure maple syrup
2 tablespoons low-sodium soy sauce
2 tablespoons grated ginger (from a 2-inch knob)
3 cloves garlic, grated
1/2 cup olive oil
Four 6-ounce salmon fillets, skin on (about 1 1/2 pounds)
Kosher salt and freshly ground black pepper
One 10-ounce bag coleslaw mix
1/2 cup sliced almonds
1/2 cup sesame sticks or wonton chips

Steps:

  • Soak a cedar grill plank in water for at least 1 hour and up to 4 hours. Preheat the grill to medium.
  • Mix the rice wine vinegar, maple syrup, soy sauce, ginger and garlic in a medium bowl. Slowly drizzle in the olive oil, whisking constantly, until emulsified. Reserve 1/4 cup for the salad dressing and set aside. Pour the remaining mixture over the salmon and let marinate in the refrigerator for 15 minutes.
  • Meanwhile, place the soaked cedar plank in the center of the preheated grill. Close the lid and let the plank heat until you hear it start to crack, about 15 minutes. Place the salmon fillets, skin-side down, on the plank. Season with 1/2 teaspoon salt and a few grinds of pepper. Close the lid and cook until the salmon is opaque throughout and large flakes break off when flecked with a fork, 15 to 20 minutes. Remove the plank from the grill and serve the salmon from the plank (the fish will slide right off with a metal spatula, leaving the skin behind). Discard the plank.
  • While the salmon is cooking, add the coleslaw mix, almonds, sesame sticks or wonton chips and the reserved dressing to a large bowl and toss until well combined. Serve alongside the salmon.

MAPLE-SOY GLAZED SALMON

Maple-Soy Glazed Salmon image

A fabulous sweet and salty glaze is basted on salmon as it grills on cedar planks. The quick and easy glaze can be used on chicken and pork as well. Good quality, grade B, pure maple syrup makes all the difference.

CEDAR PLANK-GRILLED SALMON

Cedar Plank-Grilled Salmon image

Salmon did planking before it was a thing! Cedar keeps the fish from getting burned or blackened and infuses it with delectably earthy flavor. Brush with my Awesome Sauce recipe before serving.

CEDAR-PLANK SALMON

Cedar-Plank Salmon image

Where this recipe calls for lemon zest and rosemary, the native Coast Salish Indians on Vancouver Island would use grand-fir needles. Either way, the salmon takes on a light, smoky woodiness from grilling on a cedar plank, for a lovely pairing of earth and ocean.

Time 35m

Yield 6-8 serving(s)

Number Of Ingredients 12

4 (1 -1 1/2 lb) salmon fillets, with skin on
2 tablespoons coarse salt, to sprinkle on cedar boards
4 tablespoons extra virgin olive oil
1 tablespoon coarse salt, to sprinkle on salmon
1 teaspoon granulated garlic powder
1/2 cup fresh dill weed, chopped or 2 tablespoons dry dill weed
4 large green onions or 4 large scallions, chopped into small pieces
1 large fresh lemon, juice of, for sprinkle on salmon filets
1 teaspoon freshly ground coarse black pepper
1 large lemon, sliced very thin, to layer on salmon filets
1/4 cup pure maple syrup
2 large lemons, cut into wedges

Steps:

  • Purchase 2 pieces of cedar boards, 3/4 inch thick, 7 1/2 inches wide and 18 inches long, untreated.
  • Soak cedar boards in water for at least 12 hours before using.
  • Preheat barbecue to HIGH heat.
  • Remove cedar boards from the water and sprinkle with coarse salt on one side that will be used for placing the salmon filets.
  • Place boards on the NOW HOT barbecue for about 3 minutes, DO NOT BURN CEDAR BOARDS.
  • Rub salmon filets with olive oil.
  • Sprinkle coarse salt and granulated garlic powder on salmon filets.
  • Sprinkle salmon filets heavily with dill weed and green onions.
  • Drizzle lemon juice over salmon filets and then sprinkle with black pepper.
  • Place the salmon filets on the cedar boards, skin side down and layer the top of filets with thinly sliced lemons.
  • Drizzle MAPLE SYRUP over the filets.
  • Turn barbecue down to medium heat.
  • Place prepared salmon on the barbecue grates.
  • Close BBQ cover and cook on medium heat for 10 to 15 minutes or until salmon just starts to flake.
  • Remove from the barbecue.
  • If you have a heavy duty screen with about 1/4" squares, spray with olive oil and place on the barbecue grates. This will prevent any salmon to drop through the grates.
  • Slide the salmon filets off the cedar plank onto the screen, with skin side down.
  • Turn barbecue heat to HIGH.
  • Sprinkle more MAPLE SYRUP on filets, close BBQ lid and cook for another 2 to 4 minutes or until salmon flakes easy. DO NOT OVERCOOK SALMON.
  • Remove salmon to large plates.
  • Serve immediately with lemon wedges.
  • You may also use dark brown sugar on filets instead of Maple Syrup. After you rub the salmon filets with olive oil, spread about 1 tablespoon of brown sugar on each filet (4 tablespoons).
  • You may also use white onions sliced instead of green onions or scallions.
  • DO NOT RE-USE THE Cedar Boards a second time.
  • Purchase your cedar boards at a lumber yard, but make certain that the boards are not treated. They are also much cheaper at the lumber yard and are just as good as the prepared cedar boards.

Categories     Canadian

Time 30m

Yield 4-8 serving(s)

Number Of Ingredients 9

1 fresh salmon or 2 -4 good sized salmon fillets, preferably with the skin still on
1 cedar plank, to cook the salmon on
fresh diced dill
fresh diced green onion
fresh coarse ground black pepper
coarse salt
1 whole lemon
real maple syrup
pure virgin olive oil

Steps:

  • Soak the cedar plank (s) overnight.
  • You can buy cedar planks for cooking salmon at many grocery stores.
  • If you can't find one at a grocery store, make sure the cedar you use has no wood preservatives or other chemicals in it, unless you're into eating that sort of stuff.
  • Might I recommend a glass of turpentine as a lovely accompanyment if you use preserved wood.
  • GAG.
  • Start the BBQ and preheat to HIGH.
  • Rub the filets all over with olive oil.
  • Sprinkle them with fresh dill and onion.
  • Drizzle with juice from the fresh lemon.
  • Sprinkle the cedar plank with the salt and place it on the now hot BBQ grill.
  • Leave it there for about 3 minutes, until it appears mostly dry on top (remember, it was soaking in water and should be quite wet....) Place your salmon filets (skin side down if the skin's still on them) on the plank.
  • Turn down the BBQ to low.
  • Drizzle some real maple syrup over the filets.
  • This is the secret ingredient.
  • REAL!
  • Not Aunt Jemima.
  • Cook on low for about 10-15 min depending on the size of the filets.
  • When it appears the salmon is done ie.
  • flakes easily, slide the filets off the cedar plank onto the BBQ grill, skin down.
  • Crank up the BBQ to high, put some more maple syrup on top and cover for about 2 minutes.
  • This should finish off the salmon nicely, leaving delicious filets ready to eat, and skin that peels off easily if you don't like to eat it.
  • Enjoy!

CEDAR PLANK SALMON WITH MAPLE-GINGER GLAZE

Cedar Plank Salmon With Maple-Ginger Glaze image

Provided by Food Network Kitchen

Categories     main-dish

Time 1h10m

Yield 6-8 servings

Number Of Ingredients 7

1 2-to-3-pound skin-on center-cut salmon fillet (about 1 1/2 inches thick)
2 teaspoons ground coriander
Kosher salt and freshly ground pepper
1/4 cup pure maple syrup
1 2-inch piece ginger, peeled and grated
Grated zest and juice of 1 lemon
2 tablespoons unsalted butter

Steps:

  • Soak 1 large cedar grilling plank (15 by 6 inches) in a baking dish of water, about 2 hours; put a plate or mug on top to keep the plank submerged.
  • Preheat the oven to 425 degrees F. Sprinkle the salmon with the coriander, 1 teaspoon salt and 1/2 teaspoon pepper. Let stand at room temperature about 15 minutes.
  • Meanwhile, heat the maple syrup, ginger, lemon zest and butter in a small saucepan over medium heat until slightly thickened, about 7 minutes. Stir in the lemon juice and set aside.
  • Remove the cedar plank from the water and pat dry. Place the plank directly on the oven rack and preheat about 15 minutes. Using tongs or oven mitts, remove the hot plank from the oven and place the fish, skin-side down, on the wood. Brush the fish with half of the ginger glaze. Transfer the fish on the plank to the oven; put a baking sheet on the rack below to catch any drips. Cook until the salmon is just firm and slightly golden on top, about 12 minutes.
  • Remove the fish from the oven and change the oven setting to broil. Brush the remaining ginger glaze over the salmon and broil until golden, 2 to 3 more minutes. Remove from the oven and let rest 5 minutes on the plank before serving. Serve warm or at room temperature.

CEDAR PLANKED SALMON WITH WHISKEY MAPLE GLAZE

Cedar Planked Salmon With Whiskey Maple Glaze image

There is nothing comparable to the taste of freshly caught salmon, but to serve it planked.....is phenomenal!!! Out on the west coast, we get an abundance of salmon, so I am always looking for a different recipe. This recipe was published in our local paper from cookbook author Ronnie Shewchuk, Barbecue Secrets

Provided by Abby Girl

Categories     High Protein

Time 40m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 cedar plank (soaked overnight or at least 1 hour)
6 tablespoons whiskey
3/4 cup maple syrup
1 teaspoon crushed red pepper flakes
1 tablespoon butter, room temperature
3 lbs salmon, skin on
kosher salt
ground black pepper
2 teaspoons granulated onion (or onion powder)
2 lemons, halved

Steps:

  • Plank: Make sure that the plank has soaked for at least 1 hour and up to 24.
  • Glaze: Combine the whiskey and maple syrup in a small saucepan, bringing the mixture to a low boil and reduce by about half. You should have a thick syrup that coats the back of a spoon. Add chilies and butter and stir until just combined. Set aside and keep warm.
  • Season the salmon with salt, pepper and granulated onion. Pour the glaze over the salmon carefully. Let the salmon sit for 10 - 15 minutes at room temperature, until the rub is moistened.
  • Preheat the grill on medium high heat for 5 - 10 minutes. Rinse the plank and place it on the cooking grate. Cover the grill and heat the plank for 4 - 5 minutes or until it starts to throw off a bit of smoke and crackles lightly.
  • Reduce the heat to medium low. Season the plank with kosher salt and place the salmon, skin side down, on the plank. Cover the grill and cook for 15 to 20 minutes or until the fish flakes.
  • Check periodically to make sure the plank doesn't catch fire and spray the burning edges with water if it does, making sure to close the lid afterwards.
  • When the salmon is done, squeeze half a lemon along its length and carefully transfer to a platter. Garish with remaining lemon cut into slices.

CANADIAN CEDAR PLANKED SALMON

Canadian Cedar Planked Salmon image

My son prepared this wonderful dish for us and it was my first time to taste this method of griiling; what flavour! Planked salmon is a method of cooking salmon that has been used for many years. The salmon is slow cooked, which produces a rich, smoky flavor. Use only untreated cedar; look for planks at the fish counter at your supermarket or ask your fishmonger.
