2 garlic cloves, minced
6 tablespoons light olive oil
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon lemon juice

2 (6 ounce) salmon fillets

Steps:

  • In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley.
  • Place salmon fillets in a medium glass baking dish, and cover with the marinade.
  • Marinate in the refrigerator about 1 hour, turning occasionally.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Place fillets in aluminum foil, cover with marinade, and seal.
  • Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

4 salmon fillets (about 6 ounces each)
Coarse salt and ground pepper
2 cups packed fresh basil leaves, thinly sliced crosswise
1 large shallot, thinly sliced crosswise (about 1/4 cup)
Grated zest of 1 lemon (2 to 3 teaspoons)
2 tablespoons fresh lemon juice
1 tablespoon olive oil
Lemon wedges, for serving (optional)

Steps:

  • Lightly season salmon with salt and pepper; arrange in a 9-by-13-inch baking dish, about 1 inch apart.
  • In a small bowl, stir together basil, shallot, lemon zest and juice, oil, 1/4 teaspoon salt, and a pinch of pepper. Dividing evenly, spread mixture over the salmon fillets. Cover with foil; place in the refrigerator, and let marinate 20 minutes.
  • Preheat oven to 325 degrees. Bake (still covered) until salmon is opaque throughout, 20 to 25 minutes. Serve with lemon wedges, if desired.

  • Prepare campfire or grill for medium heat. Place each fillet, skin side down, on a piece of heavy-duty foil (about 12 in. square). 1 clove garlic, minced

4 medium salmon, skinless filets
1/2 medium lemon
salt & pepper
2 Tbsp flour
2 large onions, cut into thin rings
4 Tbsp butter
3 Tbsp oil
1/2 c fish stock

Steps:

  • 1. Season the fillets with salt and pepper, squeeze the lemon juice over them, and leave to marinate for a short time.
  • 2. Dredge the onion rings in the flour. Shake off the excess.
  • 3. Dredge the fish in the remaining flour, then brown quickly in the combined butter and oil for 5-6 minutes on each side. Brown the onion rings as well (after the fish have been removed from the pan).
  • 4. Arrange the fish on a warm plate and cover with the onion rings. Deglaze the pan with the fish stock and serve as a sauce over the salmon.
  • 5. This is typically served with boiled potatoes.

2 limes
6 cups water
1 (4-inch) piece fresh ginger, peeled and chopped, about 1/4 cup
1 teaspoon whole black peppercorns
4 (6-ounce) boneless skinless salmon fillets
1/3 cup packed fresh basil leaves
Kosher salt and freshly cracked black pepper
1/2 cup creme fraiche or sour cream

Steps:

  • Halve 1 lime and squeeze the juice into a large straight sided skillet or pot with a lid. Add 6 cups water, the squeezed lime halves, ginger, and peppercorns and bring to a boil over medium-high heat. Reduce heat to a simmer, cover, and cook for 10 minutes to infuse the water with flavor; reduce heat to lowest setting, carefully slide salmon into the water, cover, and poach until fish is just cooked through, 5 to 7 minutes. Remove the fish with a slotted spoon and cool completely before transferring to an airtight container. Add about 1/2 cup poaching liquid to the container to keep the fish moist and chill in the refrigerator until ready to serve.
  • Meanwhile, zest the remaining lime and add about 1/2 teaspoon zest to the bowl of a food processor; add the juice from half the lime to the bowl (should be about 1 teaspoon juice). Add the basil leaves, a pinch of salt and a few grinds black pepper and pulse until it begins to turn into a paste. Add the creme fraiche and puree until very smooth. Transfer to a serving bowl and refrigerate until ready to serve.
  • To serve, plate the cold salmon with a drizzle of lime basil cream over the top.

Steps:

  • Preheat Oven: Preheat oven to 375F with rack on lower middle position. Line a large sheet pan with foil and grease the foil with some olive oil. Set aside.
  • Remove Moisture: Use paper towels to pat-dry the salmon fillet, ensuring that all excess moisture is removed (this step is important, as excess water/moisture causes fish to be "steamed" instead.) Place salmon on the prepared sheet pan.
  • Mix Seasonings: In a small bowl, stir together all remaining ingredients until combined. Evenly press the mixture over the top of salmon.
  • Bake: Bake salmon for 10 minutes in preheated oven. Carefully but quickly take salmon out, move rack to top position underneath the broiler, and place salmon tray back on rack.
  • Broil: Broil on high for up to 5 minutes or until top is nicely browned, but watch carefully for even browning without burning. Remove from heat immediately. Serve with extra slices of lemon.

1 cup packed basil leaves, plus 1/4 cup finely chopped stems
3 tablespoons olive oil
1 teaspoon plus pinch shichimi togarashi
1 lemon, zested and juiced
1 clove garlic, peeled
1/4 cup panko
Four 6-ounce skin-on salmon fillets
3 tablespoons honey
1/3 cup raw pine nuts
4 cups sugar snap peas, trimmed (about 14 ounces)
1 tablespoon Dijon mustard
1 tablespoon rice wine vinegar
2 teaspoons fish sauce
1 shallot, minced
2 tablespoons vegetable oil
1/2 cup flat-leaf parsley leaves

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil. Bring a medium pot of heavily salted water to a boil. Fill a medium bowl with ice water and set aside.
  • Add the basil leaves, 2 tablespoons olive oil, 1 teaspoon shichimi togarashi, lemon zest, garlic, 1 teaspoon salt and a few grinds of pepper to a food processor and process until finely chopped, scraping down the sides of the bowl as needed. Transfer to a small bowl and fold in the panko.
  • Place the salmon fillets skin-side down on the prepared baking sheet and brush the tops with 2 tablespoons honey. Press the breadcrumb mixture all over the tops of each fillet (about 1 tablespoon per fillet). Bake until the breadcrumbs are golden brown and the salmon is firm and flakes easily when pressed, 12 to 15 minutes.
  • Meanwhile, place the pine nuts in a single layer in a small nonstick skillet and cook, shaking frequently, until they're golden brown and smell nutty, 3 to 5 minutes. Transfer to a plate to cool.
  • Add the sugar snap peas to the boiling water and cook until very bright green and crisp tender, 1 to 2 minutes. Use a slotted spoon to immediately transfer the peas to the ice water to stop the cooking. Drain the snap peas, then cut them into thirds on a deep bias.
  • Put the lemon juice, mustard, vinegar, fish sauce, shallots, 1/4 teaspoon salt, a few grinds of pepper, the remaining 1 tablespoon of honey and the remaining pinch of shichimi togarashi in a large bowl. Use an immersion blender to mix and drizzle in the vegetable oil and the remaining 1 tablespoon of olive oil until all the ingredients are emulsified.
  • Fold in the snap peas until coated. Fold in the parsley leaves, toasted pine nuts and basil stems and serve alongside the salmon.

WHOLE SALMON "SLASHED AND STUFFED" WITH BASIL BUTTER

2 bunches fresh basil leaves, divided
2 sticks unsalted butter, room temperature
Kosher salt and freshly ground black pepper
1 (4 pound) whole salmon, cleaned and scaled
2 lemons, cut into wedges
Extra-virgin olive oil
Sea salt

Steps:

  • Begin by preheating a large outdoor grill. Using a paper-towel folded in 4, wipe down the grill with olive oil to clean it and also create a nonstick surface.
  • Prepare the compound butter by roughly chopping 1/2 the basil leaves and adding it along with the butter and salt and pepper, to taste, to a food processor. Pulse until fully combined and creamy.
  • Using a chef's knife, make slits in each side of the fish, place a few slices of lemon and basil in each of the slits. Stuff the remaining herbs and lemon inside of the fish and head. Paint the whole fish with the basil butter and refrigerate the remaining butter to serve with the finished fish. Carefully place the fish on the grill and grill for 10 to 12 minutes until it lifts off easily - use 2 large spatulas. Turn the fish over and grill for 10 minutes more.
  • Serve on a large platter family style and dot with the remaining basil butter. Sprinkle with sea salt and fresh basil leaves. Serve with lemon wedges.

4 salmon steaks, 1 inch thick,thawed if frozen (4-6oz.)
1 cup mesquite wood chips
1/2 cup packed fresh basil leaf
3 tablespoons olive oil

1/8 teaspoon salt

  • Combine marinade ingredients in a blender container.
  • Process until smooth.

1 stick of celery chopped
1 clove of garlic finely chopped
1 medium salmon steak cut into four equal chunks
half a glass of dry white wine
2 table spoons of creme fraiche
10 plum cherry tomatoes cut into quarters
Salt and black pepper
Cooked Spaghetti or any pasta of your choice for 2 pers.
1 tbs of olive oil
A handful of fresh basil

Steps:

  • Add the olive oil to a deep frying pan and heat on a medium-high flame. Add the spring onion and cook for 4 mins until soft.
  • Next, add the celery to the pan and cook for a further 4 mins. Once the celery has softened, add the garlic to the pan and cook for a further 1 minute.
  • Put the salmon in the pan and cook for 2-3 mins, turning as appropriate, then pour in the wine and continue on the heat until the salmon is cooked through and the wine has been mostly absorbed.
  • Take off the heat. Break up the salmon into flakes and add the creme fraiche. Add a pich of salt and black pepper to taste. Mix in the tomatoes and the basil.
  • Mix the pasta together with the sauce and serve.

1 cup fresh basil leaf, packed
2 garlic cloves, minced
1/4 cup olive oil
1/4 cup parmesan cheese, freshly grated
1 pinch crushed red pepper flakes (I use a generous pinch)
1 tablespoon fresh lemon juice
kosher salt & freshly ground black pepper
12 ounces salmon fillets (2, 6-oz each)
cooking spray

Steps:

  • Heat a dry skillet, over medium heat, and lightly toast pine nuts (gently toss and shake pan occasionally); then place in a food processor.
  • To the food processor, add basil and garlic; pulse just to combine.
  • With processor running, drizzle in olive oil, and process, scraping down sides once or twice with a rubber spatula, to desired consistency (I like it sort of chunky).

6 oz salmon fillets, (2 fillets)
1/2 medium white onion, (sliced)
1 cup basil leaves
3 Thai peppers, (crushed)
1 tbsp soy sauce
1 tbsp fish sauce
1 pinch stevia
Oyster sauce (to taste)
2 tbsp olive oil

Steps:

  • Turn on the stove and set it to medium heat. Add 1-2 tablespoons of oil and heat it up
  • Add the salmon fillets skin side down onto the pan
  • Sear it until it's tender (You can choose to cook till it's cooked to your preference)
  • To make sure it cooks evenly, try to maintain the temperature between 140-160 degrees
  • Take the salmon out and keep it aside
  • Add 1-2 tablespoons of olive oil into the pan, keeping the heat medium-high
  • Add the onions, and stir-fry until they start turning transparent
  • Add in basil leaves, soy sauce, oyster sauce, fish sauce, Thai chili, and stevia
  • Keep stir-frying till the mixture turns a darker green
  • When the sauce is done, pour it over the seared salmon
  • Serve hot and enjoy!

4 pieces filleted salmon
1/2 lemon
salt & pepper
2 tablespoons flour
2 onions, cut into thin rings
4 tablespoons butter
3 tablespoons oil
1/2 cup fish stock

Steps:

  • Season the fillets with salt and pepper, squeeze the lemon juice over them, and leave to marinate for a short time.
  • Dredge the onion rings in the flour. Shake off the excess.
  • Dredge the fish in the remaining flour, then brown quickly in the combined butter and oil for 5-6 minutes on each side. Brown the onion rings as well (after the fish have been removed from the pan).
  • Arrange the fish on a warm plate and cover with the onion rings. Deglaze the pan with the fish stock and serve as a sauce over the salmon.
  • Serve with boiled potatoes.
