Here is a great way of of getting that special taste of Scotland with salmon (or many other fish). The quantities given below are sufficient for six people. As with most cooking, it is best just to use blended whisky rather than more expensive malt. Found at www.rampantscotland.com

six salmon steak
2/3 cup Scotch whisky
2/3 cup water
8 black peppercorns
3 bay leaves
1 chopped carrot
1 finely chopped onion
3 tablespoons lemon juice
1/2 teaspoon thyme
salt and pepper
3 egg yolks
1 tablespoon lemon juice
1/2 cup butter
3 tablespoons Scotch whisky
3 tablespoons poaching liquid

Steps:

  • Place all the ingredients for the poaching liquid in a pan and gently poach the salmon for 7-10 minutes or until the fish is cooked. Strain and reserve the poaching liquid.
  • Place the salmon on a warm serving plate, cover and keep hot.
  • Make the butter sauce by whisking the egg yolks and lemon juice together. Place in a heat-proof bowl and set over a pan of hot but not boiling water on a very low heat. Whisk until the mixture begins to thicken. Stir in the butter gradually, allowing a small amount to melt at a time. If any lumps appear in the mixture, remove the bowl from the heat and add a teaspoon of cold water before placing back on the heat.
  • Once all the butter has been mixed in and the sauce is to the required thickness, remove from the heat and add in the three tablespoons of whisky and the three tablespoons of poaching liquid. Pour over the salmon and serve with fresh vegetables.

These salmon fillets are grilled hot and fast with a sweet whiskey marinade that gives them a lot of great flavor and nice, crisp glaze when grilled.

4 8-ounce salmon fillets
1/2 cup whiskey
1/4 cup light soy sauce
1/4 cup orange juice
2 tablespoons vegetable oil
2 cloves garlic minced

Steps:

  • Gather the ingredients.
  • Mix whiskey, soy sauce , orange juice, oil, and garlic in a medium bowl.
  • Place salmon in a shallow dish and pour mixture over the top. Cover with plastic wrap and place in the refrigerator for 3 minutes to 1 hour.
  • Preheat the grill for medium-high heat. Once heated, oil the grill grates to create a nonstick surface. Make at least 4 to 5 passes on the grates.
  • Place the fish on the hot grill and cook for 5 minutes on each side.
  • The salmon is done when it flakes easily, has faded in color, and reaches an internal temperature of at least 145 F. Carefully remove fish from the grill and serve.
  • Plate the fish and serve with your favorite sides.
  • Enjoy.

2 tablespoons honey
1/4 cup cider vinegar
1/4 cup Irish whiskey
2 teaspoons chopped fresh thyme
1 1/2 teaspoons grated lemon zest
2 tablespoons vegetable oil
salt & freshly ground black pepper
4 salmon fillets, 6 oz (175 g)

Steps:

  • Mix together honey, vinegar, whiskey, thyme, lemon zest, oil, salt and pepper. Pour over salmon and marinate 1 hour on the counter, or 4 hours refrigerated.
  • Preheat oven to 450°F (230°C).
  • Remove salmon from marinade and place on a rack over a roasting pan.
  • Bake for 10 to 12 minutes, basting once with the marinade or until golden and white juices are just beginning to appear.
  • Place on 4 plates and serve.

1 tablespoon black peppercorns,
crushed
½ tablespoon white peppercorns,
crushed
2 x 175g (6oz) salmon steaks
1 level teaspoon Dijon mustard
freshly ground sea salt
15g (½ oz ) butter
2 1/2 tablespoons Irish whisky
150ml (¼ pint) double cream
1 tablespoon chopped fresh chives, plus extra to garnish

Steps:

  • Mix together the crushed peppercorns. Smear the salmon steaks all over with the mustard and then press the peppercorns into the cut sides of the salmon - just enough to give it a nice thin coating. Season with salt. 2 Heat a frying pan until hot. Add the butter and, as soon as it starts to foam, lay in the salmon steaks. Reduce the heat to medium and fry the steaks for about 3 minutes on one side to brown them. 3 Turn up the heat, flip the steaks over, then splash in the whisky. Boil fast until the whisky has almost disappeared, then pour in the cream. Carefully scraping up any bits that are sticking to the bottom of the pan around the steaks, bring to a fast bubble. 4 Boil for 1 - 2 minutes until the sauce starts to thicken, then taste and season with more black pepper if necessary, and some salt. By this time the salmon should be just cooked - test with the tip of a knife; if it is still a wee bit pink, simmer over a low heat for a further minute. Stir in the chopped chives and serve immediately, garnished with the extra chives.

This is a DELICIOUS, tasty, easy to make recipe for salmon. The sauce really makes the recipe. I seen it made on the local TV station and I made it the next day. The recipe comes courtesy Debra Stice & The Broiler Steakhouse. Note: The recipe calls for 1/2 cup regular brown sugar,I used 1/4 cup brown sugar Splenda also 1/4 cup butter(instead of 1/2 cup), with GREAT results.

This indulgent whisky cream sauce will elevate your standard midweek meal. Serve this silky smooth sauce with haggis, steak or mashed potatoes

2 tsp soft butter
2 tsp olive oil
2 shallots , finely chopped
1 bay leaf
2 garlic cloves , crushed
120ml Scotch whisky
200ml beef stock or chicken stock
200ml double cream

Steps:

  • Heat the butter and oil in a small pan over a medium heat until the butter starts to foam. Fry the shallot until soft but not golden, about 8 mins.
  • Add the bay leaf and garlic, then cook for 1 min more. Add 100ml whisky and simmer until absorbed by the shallots, and almost evaporated.
  • Pour in the stock and simmer for 5-10 mins until reduced by half. Stir in the cream and simmer for another 5 mins until thickened slightly. Season with salt and taste the sauce. Stir in the remaining whisky for a stronger flavour. Serve with haggis, steak or mashed potatoes.

500 g spinach tagliatelle, cooked per package directions
50 g butter
4 fresh sage leaves
2 cloves garlic, peeled and finely chopped
200 g smoked salmon, cut in strips
50 g shelled pistachio nuts
4 tablespoons fresh lemon juice
4 tablespoons whiskey
200 g mascarpone cheese
fresh ground black pepper, to taste

Steps:

  • In a large frying pan, saute the sage in the butter; when it begins to be fragrant and turn color, remove and discard.
  • Add the garlic to the pan, and saute for 30 seconds.
  • Add the salmon to the pan, toss well, add nuts and cook for 30 seconds (the salmon will break down into small pieces, don't be alarmed).
  • Add the lemon juice and the whiskey, and cook for another minute.
  • Add in the mascarpone cheese and stir well until it melts and is completely incorporated with the other ingredients.
  • Add ground black pepper to taste.
  • Add the hot cooked pasta to your pan and mix it well into the sauce.
  • It is now ready to serve!
