3 medium-large leaves romaine lettuce
1 tablespoon fat-free cream cheese
1/4 teaspoon salt-free lemon pepper seasoning
2 ounces lox-style smoked salmon
1/4 cup finely chopped red onion
1 small seedless cucumber, thinly sliced
2 tablespoons sun-dried tomatoes packed in oil, drained and sliced

Steps:

  • Lay lettuce leaves on a plate and evenly spread the insides with cream cheese, 1 teaspoon each. Sprinkle with lemon pepper seasoning and top with smoked salmon.
  • Top the salmon with onion. Equally distribute cucumber slices among the lettuce leaves. Evenly top with sun-dried tomatoes.
  • Wrap 'em up and devour!

1/3 cup sweet chili sauce
3 tablespoons coconut milk
12 ounces salmon fillet, skin removed
Kosher salt and freshly cracked black pepper
1 ripe mango
1 small red bell pepper
1/4 cup mint leaves
8 ounces bean sprouts
1/3 cup peanuts, roughly chopped
1 head butter lettuce, separated into leaves
2 limes, each sliced into 6 wedges

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  • Whisk together the sweet chili sauce and coconut milk.
  • Place the salmon on the prepared baking sheet and season with salt and pepper. Brush 1 tablespoon of chili sauce mixture on the salmon; reserve the remaining sauce for serving. Roast the salmon until firm and cooked through, about 15 minutes.
  • Meanwhile, peel and dice the mango into 1/2-inch pieces. Dice the bell pepper into 1/4-inch pieces. Slice the mint leaves into thin strips. Divide the mango, bell pepper, mint, bean sprouts, and peanuts and lettuce leaves between individual bowls or plates for serving.
  • Once the salmon is cooked, use a fork to flake apart the flesh. Divide between the plates or bowls; let diners build their own lettuce cups with the lettuce leaves.

1 teaspoon olive oil
1 cup thinly sliced shiitake mushrooms
1 tablespoon water
1/4 teaspoon kosher salt, plus more to taste
Freshly ground pepper to taste
8 large romaine lettuce leaves
Lemon grass, chili and mint steaming liquid (see recipe)
4 4-ounce pieces of salmon fillet, cut in half crosswise

Steps:

  • Heat the oil in a medium nonstick skillet over medium heat. Add the mushrooms and the water and cook until the mushrooms are wilted, about 5 minutes. Season with the salt and pepper to taste.
  • Steam the lettuce over the steaming liquid for 30 seconds. Remove the liquid from the heat. Cut the center stem out of each leaf and overlap the flaps where the stem was. Season the salmon with salt and pepper.
  • Place 1 piece of salmon on the center of each leaf and top with some mushrooms. Fold the sides of the leaf in over the salmon and mushrooms. Then fold the bottom over the salmon, rolling it up to make a tight package. Repeat.
  • Bring the steaming liquid back to a simmer, place the salmon in the steamer, cover and steam for 8 minutes. Place 2 packages on each of 4 plates and serve immediately.

4 (6-ounce) salmon fillets
8 large outer romaine lettuce leaves
2 teaspoons olive oil
3 lemons, 2 juiced, 1 sliced thinly
Salt and freshly ground black pepper
Salt and freshly ground black pepper
4 teaspoons capers
8 sprigs fresh dill

Steps:

  • Soak twine in hot water for 5 minutes.
  • Rinse salmon in cold water and pat dry with towel.
  • Repeat the following for each salmon steak: Rinse 2 romaine leaves in water, shake off excess water. Drizzle 1/2 teaspoon of oil over the inside (concave) side of leaves.
  • Place salmon fillet in the center of 1 leaf (concave side up).
  • Pour the juice of 1/2 lemon over salmon, trapping the drippings with the leaf. Season with salt and pepper. Top with 1 teaspoon capers, 2 sprigs of dill, and 1 lemon slice.
  • Place the second leaf, concave side down, over salmon. Fold the ends of the bottom leaf up to keep juices trapped, and wrap the string around the leaves to seal. Tie string in a knot.
  • Preheat oven to broil. Set rack in the highest position.
  • Broil romaine-wrapped salmon for 5 minutes per side. The lettuce will blacken-this is a good thing. Cooking time will vary according to the exact thickness of the fillet. (Salmon can also be grilled over direct heat for 5 minutes per side).
  • To serve, instruct guests to cut string and remove top leaf. Yes, they can eat the blackened lettuce.
  • Recommended beverage: Pinot Noir (if salmon is farm-raised), Zinfandel (if salmon is wild)

Kosher salt
Freshly ground black pepper
Extra-virgin olive oil
6 tablespoons unsalted butter
3/4 cup sliced shiitake mushrooms, stems removed
1/4 cup sliced leeks, white portion only

Steps:

  • Salmon is a really unique fish that we often take for granted. Everyone smothers it with heavy sauces or encrusts it with this and that...which is fine. But why not enjoy the fish for what it is from time to time? So, simply season the salmon fillet with a nice sprinkle of salt and coarse ground pepper, both sides. Rub the fillet with a small amount of olive oil. Grill or pan sear the salmon until just medium rare or medium, about 2 to 3 minutes per side. (The saying is, you don't cook salmon, you should merely threaten it!)
  • In a skillet over high heat, heat the butter until nearly smoking. Add the shiitakes and leeks and cook on high heat until the edges just begin to brown, about 4 to 5 minutes. Season with salt and pepper.
  • To serve, simply spoon the mushroom/leek mixture onto salmon. Serve with a side of spinach spaetzle and a simple red pepper compound butter.

8 ounces shiitake mushrooms, trimmed and thinly sliced
8 ounces medium asparagus (about 1/2 bunch), trimmed and halved lengthwise
4 scallions, thinly sliced
1/4 cup extra-virgin olive oil
Zest of 1 lemon, plus lemon wedges for serving
Coarse salt and freshly ground pepper
1/4 cup water
4 skinless wild-salmon fillets (5 ounces and 1 inch thick each)

Steps:

  • Preheat oven to 400 degrees with racks in upper and lower thirds. Cut four 12-by-17-inch pieces of parchment. Fold each in half crosswise to make a crease, then unfold and lay flat. Toss mushrooms, asparagus, and scallions with oil in a large bowl. Sprinkle with lemon zest and season with salt and pepper.
  • Remove asparagus from mixture and divide evenly among parchment pieces, creating a bed of spears on 1 side of crease. Top each with 1 piece of fish, then with mushroom mixture. Drizzle each serving with 1 tablespoon water. To close, fold parchment pieces over each serving; make small overlapping pleats to seal the open sides and create 4 half-moon-shaped packets.
  • Bake packets on 2 baking sheets 9 minutes. Carefully cut open packets with kitchen shears (steam will be released). Serve fish, asparagus, and mushrooms with lemon wedges for squeezing.

400g can cannellini beans , rinsed and drained
213g can wild red salmon , drained, skin and bones removed if you like
½ lemon , zested and juiced
1 spring onion , finely chopped
1 tbsp Greek yogurt
1 tbsp dill , chopped
8 large romaine lettuce leaves

Steps:

  • Mix together all the ingredients except the lettuce in a bowl.
  • Trim the chunky part of the stalk at the base of each lettuce leaf so they are easier to roll up, then place the leaves in pairs on top of each other, head to toe. Spoon on the salmon mixture, then roll up and keep in place with strips of baking parchment, which make the wraps easier to hold and eat. Pack into a container to keep the wraps from getting crushed and, if possible, chill to keep the lettuce crisp.
