SALMON CAKES WITH HORSERADISH SAUCE



Salmon Cakes with Horseradish Sauce image

1 C canned wild salmon, flaked
1/3 C fresh whole grain bread crumbs
1/4 C cooked wild rice
3 lg egg whites
1/2 tsp. dark sesame oil
1/4 C organic low-fat plain greek yogurt
1 1/2 tsp. drained prepared horseradish
4 1/2 tsp. olive oil
2 C organic baby spinach
1 tbsp. lemon juice plus wedges for serving

Steps:

  • Combine first 5 ingredients and form into 4 patties (3" diameter). Mix yogurt and horseradish in small bowl for sauce.
  • Heat 3 tsp of the olive oil in large nonstick skillet over medium heat. Add patties and cook, turning, until golden on both sides, about 6 minutes.
  • Toss spinach with lemon juice and remaining 1 1/2 tsp olive oil. Season to taste. Serve cakes with spinach, lemon wedges, and sauce.

16 ounces cream cheese, at room temperature
2 ounces cornstarch
1-ounce horseradish juice
1 teaspoon salt
1 egg
4 ounces heavy cream
12 ounces diced smoked salmon
6 bagels split and toasted
1 red onion sliced thin

Steps:

  • Preheat oven to 350 degrees F. In a standing electric mixer fitted with a paddle, cream the cream cheese, cornstarch, horseradish juice and salt. Add egg and heavy cream. When filling is mixed thoroughly add diced smoked salmon and fold it in. Place in buttered 8-inch springform pan and bake for 1 hour or until cheesecake sets up. Remove from oven and let cool to room temperature. Slice into 6 equal portions and serve with bagels and sliced onions.

A lovely, spicy new way with salmon, with the horseradish perfectly complementing the fish, and a good source of omega-3 to boot.

2 slices bread , crusts removed
2 tbsp horseradish sauce
2 tsp chopped thyme or 1 tsp dried
4 thin skinless salmon steaks, about 140g/5oz each
1 small Savoy cabbage , shredded
2 rounded tbsp 0% Greek yogurt

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Whizz the bread into crumbs in a food processor. Add the horseradish and thyme, then season and mix well.
  • Put the salmon in one layer in a lightly oiled baking dish. Press the crumbs on to the flesh, then bake for 10-12 mins.
  • Meanwhile, put the cabbage in a large pan with a little salt and pour in boiling water to come halfway up. Cover and cook for 8-10 mins until tender. Drain well, then return to the pan with the yogurt and plenty of black pepper. Reheat gently. Pile the cabbage onto plates and serve with the salmon.

1 1/4 lbs salmon fillets, skinned
1/3 cup onion, finely chopped
3 tablespoons light mayonnaise
1/2 teaspoon dried dill weed
1/2 cup Italian seasoned breadcrumbs
salt and pepper
1/4 cup light mayonnaise
2 tablespoons prepared horseradish
1 tablespoon lemon juice
1 tablespoon onion, finely chopped
1 teaspoon capers, drained

Steps:

  • TO MAKE SAUCE: Stir together mayonnaise, horseradish, lemon juice, onion, and capers. Refrigerate.
  • TO MAKE PATTIES: Trim salmon and cut into pieces; place in the food processor or chop finely by hand. Add the onion, mayonnaise, dill weed, and bread crumbs; mix well. Add salt and pepper to taste. Coat a skillet with nonstick cooking spray and heat. Make the salmon mixture into 6 patties and brown the patties over a high heat for 1 minute. Lower heat and continue cooking for a few minutes; turn over and continue cooking about 3 more minutes. Serve with Horseradish Caper Sauce.

1 egg, beaten
2 tablespoons fresh dill, chopped, reserve some for garnish

Steps:

  • 1. In a medium bowl, add the potatoes, stir in the eggs, dill and horseradish. Mix well to combine.
  • 2. In a nonstick pan, over medium heat, place one ounce spoonfuls of the potato cake mixture into the pan. Cook until golden brown and turn. Cook on the other side until golden brown on both sides. Remove the cooked potato cakes to a serving platter.
  • 3. Top the potato cakes with a ruffled piece of smoked salmon and garnish with reserved dill sprigs.

Salmon and Whitefish Cakes (With Horseradish Cucumber Sauce) image

The combination of salmon and whitefish is delicious (and pretty). The recipe is from Diane Rossen Worthington and was published in Bon Appétit Magazine (April 2008) and is a great alternative to traditional gefilte fish. If you are preparing the accompanying sauce add the horseradish a little bit at a time as just a little goes a long way.

2 -3 tablespoons olive oil (plus more for frying fish cakes)
3 medium carrots, peeled, finely chopped
1 2/3 cups finely chopped leeks (white and pale green parts only)
2 large eggs
6 tablespoons unsalted matzo meal
1 3/4 teaspoons coarse kosher salt
3/4 teaspoon white pepper
18 ounces skinless white fish fillets, cut into 1-inch cubes
9 ounces skinless salmon fillet, cut into 1-inch cubes
lemon wedge
fresh italian parsley sprig
1 cup finely chopped unpeeled English cucumber (optional)
3/4 cup mayonnaise (optional)
3 tablespoons prepared white horseradish (optional)
2 tablespoons finely chopped fresh Italian parsley (optional)
1 tablespoon finely chopped fresh chives (optional)

Steps:

  • Line large rimmed baking sheet with plastic wrap. Heat 2-3 tablespoons oil in heavy large skillet over medium heat. Add carrots and leeks. Sauté until soft but not brown, about 15 minutes. Cool in skillet.
  • Beat eggs, matzo meal, coarse salt, and white pepper in large bowl to blend. Stir in carrot mixture. Place whitefish and salmon cubes in processor. Using on/off turns, chop fish to coarse paste (small pieces of fish will remain). Stir fish into matzo meal mixture.

  • A Chardonnay would be delicious with the haroseth and the salmon and whitefish cakes. We like the apple, pear, and vanilla notes of the Baron Herzog 2006 Chardonnay from Herzog Wine Cellars on California's Central Coast. It's a great kosher wine and a good value at $13.

800 g potatoes, peeled and chopped
60 ml extra virgin olive oil
600 g skinless salmon fillets
sea salt and black pepper
1 cup flat fresh parsley leaves, chopped
2/3 cup sour cream
1/4 cup horseradish cream
1 egg
2 1/2 cups panko breadcrumbs

Steps:

  • Place potato in a large saucepan of cold salted water. Bring to the boil and cook for 10 minutes, or until tender. Drain, transfer to a large bowl and roughly mash.
  • Heat 1 tablespoon of oil in a large non-stick frypan over high heat. Sprinkle salmon with salt and pepper and cook for 4 minutes on each side.
  • Flake the salmon. Add salmon, parsley, sour cream, horseradish, egg, salt, pepper and 1/2 cup of the breadcrumbs to the potato and mix until combined. Shape 1/3 cup of the mixture into a patty. Repeat with the remaining mixture to make 8 patties.
  • Place the remaining breadcrumbs on a tray and roll the patties in the crumbs to coat.
  • Heat the remaining oil in a large non-stick frypan over high heat. Cook the salmon and horseradish cakes in batches for 3 minutes each side. Sprinkle with salt. Mix the extra sour cream and extra horseradish in a small bowl and serve with the cakes.
