1 (16 ounce) package dry mostaccioli pasta
2 cups frozen green peas
½ cup olive oil
¼ cup butter
1 bunch green onions, chopped
2 teaspoons minced garlic
salt to taste
½ teaspoon ground black pepper
¾ teaspoon ground cayenne pepper
8 ounces thinly sliced hard salami
1 cup freshly grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Place pasta in the pot, and cook for 6 minutes. Mix in peas. Continue cooking 4 to 6 minutes, until pasta is al dente. Drain, and return to pot.
  • Heat the oil and butter in a skillet over medium heat. Stir in green onions and garlic. Season with salt, black pepper, and cayenne pepper. Cook and stir until green onions are tender. Mix in salami, and continue cooking until heated through. Transfer to the pot with the cooked pasta. Add Parmesan cheese, and gently toss.

3 cups uncooked penne pasta
8 ounces hard salami, cubed
1/2 cup minced fresh parsley
4 green onions, sliced
1/2 cup olive oil
1/4 cup cider vinegar
4 teaspoons minced fresh oregano or 1 teaspoon dried oregano
4 teaspoons minced fresh basil or 1 teaspoon dried basil
2 garlic cloves, minced
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded Parmesan cheese

Steps:

  • In a large saucepan, cook pasta according to package directions; rinse in cold water and drain. Transfer to a large bowl; add salami, parsley and onions. , In a small bowl, whisk the oil, vinegar and seasonings. Drizzle over pasta mixture and toss to coat. Cover and refrigerate overnight. Just before serving, stir in cheese.

2 tbsp olive oil
½ small onion ((peeled and chopped))
6oz salami ((170g) Cut into cubes (skin removed if it has skin))
2 garlic cloves ((peeled & chopped))
1 can tomato polpa or passata (not puree) ((finely chopped tomatoes)(400g/14oz))
Penne Pasta ((around 300-400g/10-14oz))
salt & pepper
Parmigiano Reggiano ((optional))

Steps:

  • In a saucepan or deep frying pan, heat the oil until just hot. Add the onion and fry gently for 4-5 minutes until soft. Add the salami and garlic and continue to fry for 4-5 minutes until the salami has rendered out its fat.
  • Pour in the tomato and 1 cup of water and bring to a simmer. Reduce the heat to low and cook gently for 10 minutes. Season with salt & pepper then remove from the heat.
  • Cook the penne to the packet instructions in salted water - and when done, drain (retain about a cup of the cooking liquid).
  • Toss the pasta through the sauce, adding some of the cooking liquid to keep the dish nice and saucy.
  • Serve in bowls with Parmigiano Reggiano sprinkled over.

1/4 cup grated Parmesan cheese, (plus more for serving)
1 teaspoon freshly ground black pepper
1/4 cup chopped fresh Italian parsley

Steps:

  • Bring a large pot of salted water to a boil and cook the pasta until al dente (tender, but slightly firm to the bite).
  • Meanwhile, in a large skillet over medium-high heat, heat the olive oil and butter. Add the salami and cook until brown and crisp. Add the garlic and sauté for 1 minute.
  • In a bowl, whisk the egg yolks. Add the cream, cheese and pepper.
  • Drain the pasta (saving 1/2 cup of the starchy pasta water, setting it aside) and add the hot pasta to the skillet. Sauté 30 seconds and toss with the salami. Remove the skillet from the heat and add the egg mixture; toss. If the pasta seems like it needs more moisture, you can add in a little of the starchy pasta water and toss.
  • Top with additional Parmesan cheese and parsley. Serve immediately.

4 ounces sliced genoa salami, cut in 1/2-inch squares
2 tablespoons butter, divided
1/4 yellow onion, minced
1 (14 ounce) can diced tomatoes
1/4 cup red wine
1/4 cup water
1 (15 ounce) can cannellini beans, drained and rinsed
1/2 teaspoon dried thyme
1 pinch dried oregano
1 pinch dried basil

Steps:

  • Bring a pot of salted water to a boil. Cook penne per directions.
  • Heat a wide, heavy-bottomed skillet over medium-high heat, dry. When hot, add salami. Stir until crispy and fat has rendered.
  • Add 1 tbsp butter. When melted, add onion and saute until limp 2-3 minutes. Add tomatoes and wine. Add water to tomato can and rinse out; add to pan. Add beans, thyme, oregano, basil, bay leaf, salt and pepper. Stir well and let bubble while pasta cooks. Just before pasta is done, swirl in remaining butter.
  • Reserve a cup or so of pasta cooking water, then drain pasta. Add pasta to skillet and stir well; add small amounts of pasta water if needed to correct the consistency. Let stand 2-3 minutes to meld flavors. Remove and discard bay leaf before serving.

1 onion (finely chopped)
4 garlic cloves (crushed)
2 tsp dried oregano
400 g (14 oz) tomato puree ((alternatively use chopped tomatoes and a tablespoon of tomato paste) )
handful fresh basil leaves and stalks
pinch of sugar
salt and pepper (to taste )
500 g (1lb) Fussili pasta ((cooked + reserve 1 cup of cooking water) )
100 g (3.5oz) pepperoni/salami
1-2 cups grated/shredded mozzarella cheese
handful fresh basil leaves (chopped)

Steps:

  • Pre-heat the oven to 200ºC/400ºF.
  • To make the sauce, sweat the onions, garlic and oregano in a few tablespoons of olive oil until soft and translucent.
  • Add the tomatoes, basil (I use a medium bunch that I can remove from the sauce once cooked) and seasoning and allow to simmer for 5 minutes until slightly reduced. Adjust seasoning if necessary.
  • Slice 3/4 of the pepperoni/salami (reserving a few slices for presentation).
  • Add the cooked pasta (and stir in some of the reserved pasta cooking water). Add the sliced salami to the pasta with the sliced basil.
  • Transfer half of the pasta to an oven-proof dish, add half of the cheese then the remainder of the pasta and cheese. Top with the rest of the pepperoni/salami and place in the oven to bake for 10 minutes or until the cheese has melted.
  • Remove from the oven, top with more basil and serve.

3 ounces (about 15 slices) Milano salami, scissored into strips
1 (14-ounce) can diced tomatoes, plus 1/2 can water
2 tablespoons butter
1 bouquet garni (mixed herb sachet or bag), optional
1 (15-ounce) can cannellini beans, drained and rinsed

Steps:

  • Bring some water for the pasta to a boil over medium heat and salt it generously. Add the pasta and cook for about 10 minutes or as the package directs.
  • Warm a fairly wide, heavy-based saucepan over medium heat. Add the salami strips, not worrying if they clump together. Stir with a wooden spoon for 1 to 2 minutes.
  • Stir in the tomatoes and add about 1/2 a tomato can of water.
  • Stir in 1 tablespoon butter, then add the bouquet garni, if using, and the drained beans. Leave it to bubble away, firmly but gently, while the pasta finishes cooking.
  • Just before draining the pasta, remove and reserve a little of the cooking water.
  • Stir the drained pasta into the sauce, then remove from the heat, and stir in the remaining butter. If you think the sauce needs it, splash in some of the pasta cooking water, and stir again with a wooden spoon. Leave to stand for 2 minutes before serving, removing the bouquet garni, if used.

  • Bring some water for the pasta to the boil in a pan and salt generously – or to taste – then put in the ditalini or mezzi tubetti, which will probably need around 10 minutes (though check the packet instructions).
  • Meanwhile, get on with making the sauce. Warm a fairly wide, heavy-based pan and toss in the salami strips, not worrying if they clump together. Stir with a wooden spoon over a medium heat for a minute or two.
  • Tip in the tomatoes and slosh about ½ can water around in the empty can, then add that, too.
  • Drop in one tablespoon of the butter and stir well with your wooden spoon, then add the bouquet garni and the drained beans. Stir well, then leave it to bubble away – firmly but gently – while the pasta finishes cooking.
  • Just before draining the pasta, lower in a small cup and take out a little of the cooking water. Drain the pasta well.
  • Stir the drained pasta into the sauce, then remove the pan from the heat and stir in the remaining butter. If you think the sauce needs loosening a little, splash in some of the reserved pasta cooking water and stir again with your wooden spoon. Leave to stand for 2 minutes before serving, then remove the bouquet garni.
