Steps:
- In the bowl of a stand mixer, dissolve the yeast in ½ cup (100 ml) of lukewarm water (taken from the 3 cups / 700 ml).
- Leave to rest for 15 minutes.
- Add the olive oil and the flour, and mix, gradually adding the water, until you obtain a smooth and elastic dough.
- Finally, add the salt, and knead for 3 minutes.
- Cover the dough, and let it rise at room temperature for 2 hours, when it should double in size.
- Knock back the dough on a floured work surface, and divide it into 8 equal pieces, about 4 oz (125 g) each, and roll out.
- In a bowl, mix the ricotta, salami or ham, and a little pepper. Add the egg yolks and the Pecorino Romano, then the mozzarella and the Scamorza.
- Mix to obtain a somewhat firm, homogeneous cream. Set aside.
- On a floured work surface, thinly roll out a piece of dough into a disc like a pizza.
- Spread 2 tablespoons of passata in the center, and then spread ⅛ of the filling, leaving about ½ inch (1 cm) around the edges.
- Fold the disc into a half-moon shape, then starting from the center and working toward the ends, seal it well by firmly pressing the edges together.
- Fold the edges inward, and press down again.
- Repeat with the rest of the dough, the passata, and the filling.
- Place the calzoni onto 4 baking sheets lined with parchment paper (2 calzoni per sheet).
- Brush the surface of each calzone with passata.
- Place in a warm place for another 20 minutes to rise again.
- Meanwhile, preheat the oven to 440 F (225˚C).
- Drizzle olive oil on each calzone, and place one baking sheet of calzoni toward the bottom of the oven.
- Bake for 15 to 20 minutes.
- The calzoni should swell a little, turn a little brown, and their surface should dry a little.
- To check if the calzone is fully baked, check the underside: the dough must be golden and not white.
- Remove the calzoni from the oven, and bake the rest, two at a time.
- Eat hot or warm.

Steps:
- Tip the flour into a large bowl, then stir in the yeast and 1 tsp salt. Pour in 250ml warm water and the olive oil, and bring together with a wooden spoon to make a soft dough. Tip onto a surface and knead for 10 mins until smooth. Put the dough back in the bowl, cover with a tea towel and set aside for 40 mins or until doubled in size.
- Roll the dough out on a lightly floured surface to a rectangle roughly 35 x 20cm. Layer over the salami (leaving a bit of a border), then scatter over the mozzarella and finally the basil leaves. Tuck the shorter edges in and roll the whole thing up like a swiss roll. Will keep frozen, tightly wrapped in foil, for up to one month. Can either be defrosted and baked, or baked from frozen (see step 3).
- Leave the loaf to rest for 20 mins on a baking tray. Meanwhile, heat the oven to 200C/180C/gas 6. Brush all over with olive oil and sprinkle with sea salt. Bake for 40 mins until puffed up and golden. If cooking from frozen, bake for 1 hr. Leave to cool for 10 mins before slicing and serving with salad.

Steps:
- Preheat the oven: Preheat the oven to 375°F
- Divide the dough: Using the prepared pizza dough, split the dough into 4 evenly sized balls for large calzones or 6 for smaller ones. Work with one dough ball at a time and keep the remaining dough balls covered so they don't dry out.
- Roll out the dough: Transfer dough ball to a lightly floured surface. Using a rolling pin roll it out until you have a circle that is 6-8 inches in diameter, again depending on size you are looking for. If you are making four larger calzones, I would shoot for around 8 inches in diameter. If making the smaller version go for 6-inches. Roll out all the dough balls, so you can have an assembly line when it comes to time to fill the calzones. In the end you should have what looks like 4 to 6 mini pizza crusts waiting to be filled.
- Brush with egg wash: Once your calzones are sealed, make the egg wash. Add the egg and 1 tablespoon of water in small bowl and beat with a fork until combined. Use a pastry brush to brush the egg wash over the top of the calzones.
- To Serve: Serve the calzones while warm with extra marinara for dipping.

- To make salami stuffed calzone, first mix the ricotta with 1 tbsp water until creamy, then season to taste with salt. Cut the salami into thin strips.
- Roll out the pizza dough fully to create a flat disc. Spread only one half of this disc with the ricotta, leaving about one inch free around the edge; top with the salami, a few pieces of mozzarella, and a grind of pepper. Fold over the calzone, line up the edges, and press carefully to create a good seal.
- Gently puncture the calzone in the center to allow steam to escape. Shred 1 1/2 oz of the tomatoes and season with a pinch of salt. Scatter the tomatoes over the top of the calzone, then drizzle with oil and add a few mozzarella strips. Bake at maximum temperature for 4-6 minutes; cooking time will vary depending on the oven. Remove from the oven and serve immediately, garnished with a few basil leaves.
