Steps:

  • Peel and roughly chop 3 pounds rutabagas. Place in a pot and cover with equal parts milk and water (about 2 1/2 cups each); add a pinch of salt. Bring to a simmer and cook until soft, 20 to 25 minutes; drain. Puree with 1/2 cup heavy cream and 2 tablespoons butter. Cook a few sliced garlic cloves and some fresh rosemary in olive oil; drizzle over the mash.
  • TIP: Use a food processor or immersion blender to puree these veggies-they're too fibrous for a potato masher.

Categories     main-dish

Time 3h10m

Yield 6 pasties

Number Of Ingredients 18

2 1/2 cups all-purpose flour, plus more as needed
1 teaspoon sugar
1 teaspoon kosher salt
1 1/2 sticks cold unsalted butter, cut into small pieces
1 large egg, separated
1 tablespoon cider vinegar
12 ounces sirloin steak, cut into 1/4-inch dice
1 medium carrot, finely diced (about 3/4 cup)
1 medium russet potato, peeled and finely diced (about 1 cup)
1 small rutabaga, peeled and finely diced (about 1 cup)
1/2 medium onion, finely chopped (about 1 cup)
2 teaspoons chopped fresh thyme
1 teaspoon kosher salt
Freshly ground black pepper
Spicy Ketchup, recipe follows
1/2 cup ketchup
2 tablespoons chopped pickled jalapeno plus 2 teaspoons brine from the jar
1 teaspoon Worcestershire sauce

Steps:

  • For the pastry: Combine the flour, sugar and salt in the bowl of a food processor and pulse to combine. Add the cold butter and pulse until the butter is the size of small peas. Whisk the egg yolk, vinegar and 1/2 cup ice water together in a spouted measuring cup. Drizzle over the flour mixture and pulse just until the dough comes together. (If the dough is too crumbly, add a little more water; add more flour if it is too wet.) Dump the dough onto a floured counter and knead a few times to bring it together. Roll into a fat log and wrap in plastic. Chill until firm, about 1 hour.
  • For the filling: Combine the beef, carrot, potato, rutabaga, onion, thyme, salt and pepper in a large bowl and mix well.
  • To make the pastries, cut the chilled dough crosswise into 6 equal pieces. Roll each piece on a floured surface to an approximate 6-by-8-inch oval. Pack a scant cup of the filling in a measuring cup and invert near the bottom of the oval to make a high mound of filling. Beat the remaining egg white in a small bowl with a splash of water. Brush the edges of the pastry with the egg wash. Fold the top of the pastry over the filling and press the dough to make a circular mound of filling in the center. Trim the edges of the dough, if needed, to even them out. Crimp the edges of the pastry and cut two air vents in the top. Place on a parchment-lined baking sheet. Repeat with the remaining dough and filling. Chill 30 minutes.
  • Preheat the oven to 400 degrees F.
  • Brush the chilled pastries with egg wash. Bake the pastries 15 minutes, then reduce the oven temperature to 350 degrees F and continue to bake until deep golden and cooked through, 30 to 35 minutes more.
  • Serve the pastries with Spicy Ketchup.
  • Combine the ketchup, jalapenos, brine and Worcestershire in a small bowl. Chill while the pasties bake.

MASHED RUTABAGA

Provided by Anne Burrell

Time 1h10m

Yield 6 to 8 servings

Number Of Ingredients 5

1 large rutabaga, peeled and cut into 1-inch chunks
Kosher salt
3 Yukon gold potatoes, peeled and cut into 1-inch chunks
1 cup heavy cream
1/2 stick cold butter

Steps:

  • Put the rutabaga in a large saucepan and cover by about 2 inches of water. Season the water generously with salt.
  • Partially cover the pot and bring the water to a boil over medium-high heat. Boil the rutabaga for 40 minutes; rutabagas take a long time to bring out their natural sweetness. Add the potatoes to the pot and cook until the potatoes are fork tender, about 15 minutes.
  • Heat the cream in a small saucepan over medium heat.
  • Drain the rutabagas and potatoes from the water and pass through a food mill. Add half the hot cream and cold butter into the milled rutabaga/potato mixture and stir vigorously to combine. Repeat this with the remaining cream and butter. Taste to make sure the seasoning is correct.

Time 1h

Yield 8 servings

Number Of Ingredients 10

2 pounds rutabaga (yellow turnip), peeled and cut into 2- inch pieces
2 pounds Yukon gold potatoes, peeled and quartered
12 tablespoons unsalted butter, at room temperature
1 1/2 cups half-and-half, warmed
Kosher salt
1 tablespoon extra-virgin olive oil
1 1/2 tablespoons finely grated lemon zest
8 scallions, white and green parts, chopped, plus extra, whole, for garnish
1/3 cup finely chopped fresh parsley
1 1/2 cups fresh, unseasoned breadcrumbs

Steps:

  • Cover the rutabaga and potatoes with cold, generously salted water in a large pot and bring to a boil over medium-high heat. Reduce the heat and simmer until the vegetables are fork-tender, about 30 minutes.
  • Drain the vegetables and return to the pot over low heat. Stir in 8 tablespoons butter. Mash with a potato masher, ricer or food mill until smooth, adding the warm half-and-half and 2 teaspoons salt. Keep warm while preparing breadcrumbs.
  • Melt the remaining 4 tablespoons butter with the olive oil in a large skillet over medium-high heat. Add the lemon zest and scallions. Add 1/2 teaspoon salt and cook, stirring, until fragrant, about 2 minutes. Add the parsley and breadcrumbs and cook over medium-low heat, stirring until evenly toasted, 3 to 4 more minutes. (If the breadcrumbs toast too quickly, reduce the heat.)
  • Transfer the mashed vegetables to a large shallow platter and sprinkle with the breadcrumbs just before serving. Garnish with scallion slices. (To curl them, julienne whole scallions and place in ice water.)

CIDER-BRAISED CORNED BEEF WITH RUTABAGA

Cider-Braised Corned Beef with Rutabaga image

Provided by Food Network Kitchen

Categories     main-dish

Time 4h

Yield 6 to 8 servings

Number Of Ingredients 15

1 4- to 5-pound piece corned beef brisket (spice packet discarded)
2 teaspoons allspice berries
1 teaspoon black peppercorns
5 bay leaves
8 sprigs thyme
5 cloves garlic, crushed
2 12-ounce bottles hard cider
1/2 cup Irish whiskey (or use low-sodium chicken broth)
3 tablespoons brown mustard
3 tablespoons packed light brown sugar
2 tablespoons honey
2 tablespoons prepared horseradish
1 medium rutabaga, peeled and cut into 1-inch chunks
2 leeks (white and light green parts only), halved lengthwise, cut into 1/2-inch pieces and well rinsed
Chopped fresh parsley, for topping

Steps:

  • Preheat the oven to 325 degrees F. Trim the fat cap on the corned beef to about 1/4 inch thick, then rinse the corned beef. Place in a large Dutch oven and cover with water by 1 inch. Bring to a boil, then turn off the heat and skim off any foam from the top. Transfer the beef to a plate, discard the water and wipe out the pot. Combine the allspice, peppercorns, bay leaves, thyme and garlic on a large square of cheesecloth. Gather the edges to make a bundle, tie with kitchen twine and set aside.
  • Return the beef to the pot. Add the cheesecloth bundle, cider, whiskey and 4 cups water. Bring to a boil, then reduce the heat so the liquid simmers. Cover, transfer to the oven and bake 1 1/2 hours. Remove the pot from the oven and flip the beef; cover and continue baking until tender, about 1 1/2 more hours.
  • Line a rimmed baking sheet with parchment paper. Transfer the pot to the stovetop and increase the oven temperature to 400 degrees F. Remove the beef from the liquid and place on the prepared baking sheet, fat-side up; reserve the pot of liquid.
  • Whisk the mustard, brown sugar, honey and horseradish in a bowl. Brush 1/4 cup of the mustard glaze on the corned beef. Return to the oven and bake until the glaze is lightly browned and sticky, about 15 minutes. Brush with the remaining glaze and bake 15 more minutes. Remove from the oven and let rest 10 minutes.
  • Meanwhile, bring the liquid in the pot to a boil. Add the rutabaga and reduce the heat so the liquid simmers; cook until the rutabaga is very tender, about 20 minutes, adding the leeks halfway through. Transfer the vegetables to a platter using a slotted spoon. Slice the corned beef and arrange on the platter; sprinkle the vegetables with parsley.
