LEMONY PRAWNS & AVOCADO
Make these starters up to two hours ahead and serve in glasses to show off the layers of colour

Steps:
- Mix the avocado in a bowl with the lemon or lime juice. Add the tomatoes to the bowl with 2 tbsp chives and the Tabasco, then season to taste.
- Divide the prawns between 12 glasses or glass dishes. Spoon over the avocado mixture. Mix the fromage frais with 1 tbsp chives, then season to taste. Spoon over, then sprinkle with the remaining chives. You can now chill for up to 2 hrs before serving. Brush the baguette slices with olive oil and toast on the barbecue to serve alongside.

- In a large bowl, mix dressing ingredients until blended. Season with salt, then set aside.
- To serve, halve and stone the avocados. Dice the flesh while it's still in the skin then scoop into a bowl. Add the prawns and toss in the dressing. Line six small serving bowls or tumblers with two or three chicory leaves. Pile in avocado and prawn mixture. Top with watercress and lime wedges. Serve with prawn crackers.

These shrimp are indeed garlicy, and the mayonnaise spicy--that's why we love them so much-- but be forewarned. The wasabi mayonnaise also makes a nice dip for crudites. Preparation time includes marinating time for the shrimp

- Stir together all the ingredients for the wasabi mayonnaise, beginning with 2 tsp wasabi paste, adding and tasting until you achieve your desired level of spiciness; place in the refrigerator until needed.
- Stir together all the"FOR THE SHRIMP" ingredients, EXCEPT the shrimp.
- When thoroughly combined, pour over the shrimp, and mix well making sure that each piece is well covered with the marinade.
- Place in the refrigerator and allow to marinate 15 minutes; do not go much beyond this time, or the lime juice will begin to"cook" the shrimp, making them tough.
- Put the shrimp (marinade and all) in one layer in a large dry non-stick frypan over medium-high heat, season with pepper to your taste and saute just until pink.
- I usually get them arranged in one layer, and by this time the first ones are beginning to color; I immediately begin to turn them over one by one and by then the first ones are ready to come out of the pan; by the time I've gotten to the last one they will all be cooked to my liking.
- Remove to a serving dish and don't forget to bring the wasabi mayo out of the fridge.

- Whisk all the sauce ingredients together in a small bowl. Season well and set aside.
- Halve the avocados lengthways and remove the stones. Scoop out the flesh and roughly dice. Season well and mix with 1 or 2 tbsp of the sauce.
- Half-fill 4 cocktail glasses with the avocado mixture. Mix the prawns and tomatoes together, season to taste, then pile on top of the avocado. Spoon over the cocktail sauce and serve immediately.

- Mix all the dressing ingredients together in a large bowl with some black pepper. Tip in the prawns and leave to marinate for 10 mins.
- Lift the prawns out of the bowl and transfer to a plate, then toss the spinach in the remaining dressing. Add in the avocado and cucumber, and carefully toss to combine.

- In a bowl, add a handful of ice cubes and cold water to cover. With a small or medium sharp knife, cut green onion stalks into 3" lengths. Slice the green onion lengthwise into long thin strips, as thin as possible (see video). Place green onion slivers into ice water. Set aside while you continue with rest of recipe.
- In a bowl, whisk together the soy sauce, sesame seeds, wasabi, sesame oil, salt and pepper. Add in the cooked shrimp, green onion and red pepper and toss to coat. Cut the avocados in half lengthwise. Remove the pit from the avocado and discard. Remove the avocado from the skin and place the avocado into a separate bowl. Add in the lime juice and use a fork to mash the avocado.
- Spread avocado on each cracker. Top with a spoonful of the wasabi shrimp. Garnish with green onion curls.
