- Preheat oven to 425°. In a large bowl, combine first nine ingredients. Transfer to a greased 15x10x1-in. baking pan., Bake, uncovered, 25 minutes, stirring once. Add Swiss chard. Bake 15-20 minutes longer or until potatoes are tender, stirring once.

THE BEST CRISPY ROAST POTATOES EVER RECIPE
Steps:
- Adjust oven rack to center position and preheat oven to 450°F (230°C) (or 400°F (200°C) if using convection). Heat 2 quarts (2L) water in a large pot over high heat until boiling. Add 2 tablespoons kosher salt (about 1 ounce; 25g), baking soda, and potatoes and stir. Return to a boil, reduce to a simmer, and cook until a knife meets little resistance when inserted into a potato chunk, about 10 minutes after returning to a boil.

Steps:
- Scrub potatoes.
- Cut, crosswise, into thin slices, using the handle of a wooden spoon to prevent knife from cutting all the way through.
- Put potatoes in a baking dish; fan slightly. Drizzle with butter.
- Sprinkle with salt and herbs.
- Bake potatoes in 425°F (220°C) oven for 50 minutes.
- Remove from oven.
- Sprinkle with cheeses.
- Bake 10-15 minutes longer or until lightly browned and cheeses are melted.

I made this to go with grilled pork chops and green beans and it was sheer perfection. I ate on it for four days.

Steps:
- Saute onions in butter until golden.
- In a deep, oiled casserole dish, layer 1/2 potatoes (sprinkle with salt and pepper), 1/2 onions and 1/2 jack and cheddar cheeses. Repeat layers.
- Beat sour cream and eggs. Pour over top. Sprinkle with paprika.
- Bake at 375 for 40 minutes.

- Preheat the oven to 425 degrees Fahrenheit with a rack in the middle of the oven. Line a large, rimmed baking sheet with parchment paper to prevent the potatoes from sticking.
- Slice the potatoes into 2-inch chunks (slice small potatoes in half, larger potatoes into quarters, and so on). Place them on the prepared baking sheet.
- Drizzle the olive oil over the potatoes, then sprinkle on the garlic powder, salt, and rosemary, if using. Toss with your hands until the potatoes are evenly coated in the mixture (it might seem like you don’t have enough oil, but you do—keep going!). Arrange the potatoes in an even layer across the pan with their flat edges against the pan.
- Roast the potatoes for 40 to 45 minutes, stirring halfway, until the potatoes are deeply golden (check the undersides) and easily pierced through by a fork. Stir in the parsley, if using, and season to taste with additional salt and some black pepper (careful, the potatoes are hot). Serve promptly.

- Cut your potatoes in quarters or halves (depending on the size), or if using Yukon Golds cut into sixths.
- Place the potatoes in a medium to large pot and cover with water, salt with a generous palm full of kosher salt. Set timer right now for 15 minutes. Place pot on stove and bring to a boil, then down to a simmer. Continue cooking at a simmer until your 15 minute timer goes off. Check at 13 minutes if you are nervous.
- Drain water, then transfer potatoes to a sheet pan. Toss well with olive oil, salt, pepper, and rosemary. Place in oven and cook 15 minutes. Toss and return to oven for 15-20 more minutes, until the potatoes look crispy and browned, and creamy on the inside.
