1 1/2 cups all-purpose flour
1/2 tsp salt
1 1/2 sticks unsalted butter (very cold, cut into small cubes)
1/3 cup water (ice-cold, plus additional 1-2 Tbsp as needed)
1 1/2 lbs peaches (skin-on, pitted and cut into ½" slices)
1/4 cup sugar
1 Tbsp lime juice
2 Tbsp cornstarch
1 pinch salt
2 Tbsp unsalted butter (cut into small pieces)
1 egg (well beaten (for egg wash))
1 Tbsp apricot preserves
1 tsp water

Steps:

  • To make the crust, combine flour, salt and cold butter cubes in the bowl of a food processor. Pulse several times until cubes become the size of peas. Transfer the flour mixture to a large mixing bowl and add ⅓ cup of ice-cold water. Stir gently, adding additional water if necessary, until dough forms a ball that is moist, but not sticky. Remove dough and wrap it with plastic wrap then shape into a round disk. Chill in the fridge at least 45 minutes.
  • Once dough has chilled, preheat oven to 425 degrees and line a baking sheet with parchment paper. Remove dough from the fridge and place on a floured work surface. Roll the crust into a circle 14-16" in diameter, dusting with flour as needed to prevent sticking. Roll the dough around the rolling pin (to prevent dough from cracking) and lay it out flat on the baking sheet.
  • To make the filling, toss the sliced peaches, sugar, lime juice, cornstarch and salt in a large bowl until the cornstarch is completely dissolved. Spoon the filling into the center of the crust, leaving a 2" border all the way around. Fold the crust over the filling then brush some egg wash under any dough that overlaps-it'll help the folds stick to one another. Dot the top of the filling with butter then brush the entire surface of the crust with the remaining egg wash.
  • Bake 20 minutes then rotate the pan and bake an additional 20-25 minutes. When the crust is golden brown and the center is piping hot and bubbly, remove the tart from the oven.
  • Stir the apricot jelly and hot water together to create a glaze then brush over the filling. Allow the tart to cool just long enough for the filling to set. Cut into wedges and serve warm.

2 cups all-purpose flour, plus more for dusting
3 tablespoons sugar
1/4 teaspoon salt
1 lemon, zest finely grated
3/4 cup (1 1/2 sticks) unsalted butter, cold and cut into small chunks
1 large egg yolk
2 tablespoons ice water, plus more if needed
4 large ripe peaches, pitted and sliced
1 pint fresh blueberries
1/2 lemon, juiced
2 tablespoons sugar
2 teaspoons all-purpose flour
1 large egg, beaten with 1 tablespoon water, for egg wash
2 tablespoons sugar
Vanilla ice cream, for serving

Steps:

  • To make the pastry: combine the flour, sugar, salt, and lemon zest in a large mixing bowl. Add the butter and mix with a pastry blender or your hands until the mixture resembles coarse crumbs. Add the egg yolk and pour in the ice water; work it in to bind the dough until it holds together without being too wet or sticky. Squeeze a small amount together, if it is crumbly, add more ice water, 1 teaspoon at a time. Form the dough into a disk and wrap in plastic wrap; refrigerate for at least 30 minutes.
  • To make the filling: combine the peaches, blueberries, lemon juice, sugar, and flour in a large mixing bowl. Toss the mixture gently to coat the fruit.
  • Prepare your wooden burning brick oven according to manufacturer's directions or place a pizza stone in a conventional oven and preheat to 375 degrees F.
  • Sprinkle the counter and a rolling pin lightly with flour. Roll the dough out into a 14-inch circle, about 1/4-inch thick; it doesn't have to be perfect, free-form is the look you want for this rustic tart. Transfer the dough to a lightly floured pizza paddle. Spoon the fruit mixture into the center of the dough, leaving a 2-inch border all around; brush the border with the egg wash. Lift the edge of crust over the filling, leaving the fruit exposed in center. Gently fold and pinch the dough to seal any cracks. Brush the crust with the remaining egg wash and sprinkle with sugar. Bake the crostata directly on the brick oven floor towards the front or on the preheated pizza stone for 30 to 40 minutes or until the crust is golden brown and fruit is bubbly and tender. Slide a pizza paddle under the tart to remove it from the oven. Serve warm or at room temperature with vanilla ice cream.

This tart is not only pleasing to the eye but the taste buds as well. The crust is meant to be hand-crimped in a rustic fashion, so don't worry about perfection. I used peaches, strawberries and blueberries, but good substitutes for the berries would be raspberries or blackberries. A sprinkling of powdered sugar atop this tart makes for elegant presentation. Preparation time does not include cooling time.

1/4 cup sugar
1/2 cup butter, cold, cubed
2 egg yolks
2 tablespoons water, ice-cold

1 cup strawberry, hulled and quartered
1 cup blueberries
1/4 cup sugar
4 tablespoons flour
2 tablespoons dark rum (or lemon juice)
1/2 teaspoon nutmeg
1 tablespoon powdered sugar

Steps:

  • Pastry:.
  • In a medium bowl, combine flour and sugar.
  • Thoroughly cut in cubed butter until mixture resembles pea-sized crumbles.
  • In a small bowl, whisk together egg yolks and ice water.
  • Slowly add yolk mixture to flour mixture, working with hands to form a smooth ball. If the mixture doesn't form into a ball easily, drizzle more ice water a little at a time until desired texture.
  • Wrap dough in plastic wrap and refrigerate for 30-45 minutes or until able to be worked with more easily.
  • Filling:.
  • In a medium-large bowl, thoroughly combine all ingredients except powdered sugar. If the mixture is too juicy, add 1 teaspoons at a time of additional flour as desired. Don't use too much flour, as the filling will become too starchy and gummy.
  • Tart:.
  • Preheat oven to 375°F
  • On a large baking sheet or pizza stone, sprinkle a pinch of flour and roll out pastry dough into a 16-inch circle.
  • Spread filling evenly onto pastry, leaving 1 1/2-inch dry outside edge.
  • Carefully pull up edge of pastry and fold up over outside edge of filling, gently crimping with fingers all around tart. Remember, it is meant to look rustic, so don't worry about perfection.
  • Brush edges of pastry with melted butter.
  • Bake at 375 F for 30-45 minutes or until pastry is lightly browned and filling is set.
  • Allow to cool for 20-30 minutes.
  • Sprinkle top of tart with powdered sugar.
  • Slice into eighths and serve warm.

1 1/2 cups flour
2 teaspoons sugar
1/2 teaspoon salt
11 tablespoons cold unsalted butter, cut into chunks
1 egg yolk
3 tablespoons whole milk
4 cups fresh fruit, blueberries, blackberries, raspberries (apricots, peaches, pears, apples cutting larger fruits to size may also be used)
1/4 cup sugar
1 pinch salt
lemon zest or orange zest, about 1 teaspoon
3 tablespoons flour or 3 tablespoons quick-acting tapioca
1/2 teaspoon vanilla
1 egg (for the egg wash)
raw sugar or brown sugar, to top the crust

Steps:

  • In a stand mixer, combine dry ingredients for crust and stir to mix. On low speed, add butter until the flour is crumbly and the butter is the size of peas.
  • Mix egg yolk and milk together then add to flour mixture until just combined (about 15 seconds).
  • Remove the mixture from the bowl and put on a floured surface. Knead quickly until it just comes together. The dough will be dotted with butter spots throughout. Tightly wrap in plastic wrap, refrigerate and let it rest for 15-20 minutes.
  • Preheat oven to 350 degrees.
  • In the meantime, in a large bowl toss together ingredients for the fruit filling; set aside.
  • Remove pastry ball from refrigerator and place on a floured surface or a floured Silpat. (Just rolling between 2 pieces of plastic wrap may be easier.) Place the plastic wrap on top of the dough ball and proceed to roll out until approximately 12 inches across and 1/8 inch thick. Transfer crust to a baking sheet.
  • Ladle filling in the center, leaving a few inches of dough around the edges and pull over the free edges on top of the fruit filling leaving the center exposed. Brush the dough edges with egg wash and top with sugar in the raw or brown sugar.
  • Cook for 55 minutes or until crust is browned and the fruit is bubbling.

1 large egg, separated (see Tip, save the white to glaze the pastry)
1 teaspoon lemon juice or 1 teaspoon white vinegar
1/4 cup slivered almonds (1 ounce)
1/4 cup whole wheat flour (regular or pastry flour)
1/4 cup plus 3 tablespoons sugar or 1/4 cup Splenda granular
4 cups mixed berries, such as blackberries, raspberries and blueberries
2 teaspoons lemon juice
1 tablespoon water
2 tablespoons jam (raspberry, blueberry or blackberry jam)

Steps:

  • TO PREPARE CRUST:.
  • Whisk whole-wheat flour, all-purpose flour, 2 tablespoons sugar and salt in a medium bowl.
  • Cut in butter with a pastry blender or your fingers until the mixture resembles coarse crumbs with a few larger pieces.
  • Add oil and stir with a fork to blend.
  • Mix 1/4 cup water, egg yolk and 1 teaspoon lemon juice (or vinegar) in a measuring cup.
  • Add just enough of the egg yolk mixture to the flour mixture, stirring with a fork, until the dough clumps together. (Add a little water if the dough seems too dry.)
  • Turn the dough out onto a lightly floured surface and knead several times.
  • Form the dough into a ball, then flatten into a disk.
  • Wrap in plastic wrap and refrigerate for at least 1 hour.
  • Preheat oven to 425°F Line a baking sheet with parchment paper or foil and coat with cooking spray.
  • TO PREPARE FILLING AND ASSEMBLE TART:.
  • Spread almonds in a small baking pan. Bake until light golden and fragrant, about 5 minutes. Let cool.
  • Combine whole-wheat flour, 1/4 cup sugar (or Splenda) and the toasted almonds in a food processor or blender; process until the almonds are ground.
  • Roll the dough into a rough 13- to 14-inch circle on a lightly floured surface, about 1/4 inch thick. Roll it back over the rolling pin, brush off excess flour, and transfer to the prepared baking sheet.
  • Spread the almond mixture over the pastry, leaving a 2-inch border all around.
  • Toss berries with the remaining 3 tablespoons sugar (or Splenda) and 2 teaspoons lemon juice in a large bowl; spoon over the almond mixture.
  • Fold the border up and over the filling, pleating as necessary.
  • Blend the reserved egg white and 1 tablespoon water with a fork; brush lightly over the tart rim. Sprinkle with the remaining 1 teaspoon sugar.
  • Bake the tart for 15 minutes at 425°F.
  • Reduce oven temperature to 350°F and bake until the crust is golden and the juices are bubbling, 30 to 40 minutes.
  • Leaving the tart on the parchment (or foil), carefully slide it onto a wire rack. Let cool.
  • Shortly before serving, melt jam in a small saucepan over low heat; brush over the berries.
  • Cut the tart into wedges and serve.
  • MAKE AHEAD TIP: Prepare crust through Step 1; wrap in plastic wrap and refrigerate for up to 2 days or freeze for up to 3 months.

  • To make Cornmeal Crust:.

  • Let stand 15 minutes, or until sugar is dissolved.
  • Place sheet of parchment paper on work surface, and sprinkle with flour. Roll dough into 12-inch round.
  • Fold in edge 1/2 inch to create sides.
  • Slide parchment and dough onto ungreased baking sheet or pizza pan.
  • Using a slotted spoon, place fruit in center of crust .
  • Discard the juice.
  • Bake 15 minutes at 425°F.
  • Reduce heat to 350°F, and bake 20 minutes more, or until crust is crisp and brown.
  • Allow tart to cool 10 minutes.
  • Slide tart from parchment onto serving plate.
  • Serve warm or at room temperature, and top with ice cream or whipped cream, if desired.
