WARM WINTER FRUIT COMPOTE

Number Of Ingredients 7

1 can (16 ounces) whole cranberry sauce
3 cups cooking apples, cored, peeled and sliced (about 3 medium)
1 1/2 cups red OR Asian pears, cored, peeled and sliced (about 2 medium)
1/4 cup orange juice
1/2 teaspoon Spice Islands Ground Saigon Cinnamon
1/2 teaspoon Spice Islands Ground Ginger
1/4 teaspoon Spice Islands Ground Cardamom

Steps:

  • Combine all ingredients in a large saucepan. Cover and simmer 20 minutes. Remove cover and simmer an additional 35 minutes or until liquid is reduced to desired consistency. Serve warm with turkey or pork.
  • Recipe note: Compote may be made ahead of serving time. Cover and store in refrigerator. Reheat to a simmer for 10 minutes before serving.
  • Garnish with sprigs of fresh rosemary, if desired.

Kompot is a thick, sweet fruit drink that makes an excellent dessert or snack. Serve kompot in tall glasses with spoons for scooping up the fruit at the bottom. You may use a single type of fruit or an assortment of fruit for kompot. Apples, pears, plums, and berries are all delicious choices. This can be served chilled. 1 - 2 hour chilling time is not included in prep/cook times. Found at BridgetoRussian.com for Culinary Quest 2014.

1 pound(s) fruit such as apples, pears, plums, berries
6 cup(s) water
1/2 - 2 cup(s) sugar ~ to taste
1 stick(s) cinnamon
1/8 teaspoon(s) nutmeg, freshly grated

Steps:

  • Wash fruit in cold water and cut into small pieces. Remove all pits and inedible seeds.
  • Place fruit in a large kettle and add 6 c. water. Bring to a boil over high heat.
  • Reduce heat to low, add 1/2 c. sugar, and stir. Cover and simmer for 20 to 25 minutes.
  • Depending on the combination of fruits you have used, you may want to add more sugar. (Add sugar sparingly-if kompot tastes sweet when hot, it will taste even sweeter when cold.)
  • Add cinnamon stick and nutmeg and stir well. Simmer for another 10 minutes. (*I* would add these at the beginning)
  • Remove cinnamon stick before serving. Serve hot, or chill and serve cold.

This is one of the best fruit compotes I've ever tasted. Perfect for the winter months, and great over ice cream or whatever you want.

1/2 cup brown sugar
1 cup wine (your favorite kind)
2 1/2 cups dried apricots
1 cup pitted prune
1 (20 ounce) can pineapple chunks in juice, not drained
1 (21 ounce) can cherry pie filling

Steps:

  • Heat oven to 350. Have ready a 2 - 2 1/2 quart shallow baking dish.
  • Dissolve sugar in wine.
  • Put dried and canned fruits in baking dish, add wine mixture and stir to mix. Cover with foil.
  • Bake 1 hour, or until most of the liquor is absorbed. Uncover, cool and transfer to serving dish; cover and regrigerate overnight.

Sounds great but is as yet untried by me - so many great recipes and so little time !!! Preparation/cooking time does not include time soaking overnight.

160 g dried apricots
100 g dried peaches
100 g dried pears
100 g sultanas
150 g pitted prunes
2 apples
4 sticks rhubarb
2 pears
2 cinnamon sticks

Steps:

  • Mix together all dried fruits.
  • Cover with boiling water.
  • Leave in a sealed container overnight to soften.
  • Peel all fresh fruits and cut into quarters.
  • Place in saucepan and cover with water.
  • Bring to boil and simmer till soft - about 15 - 20 minutes.
  • When soft, drain and combine with drained dried fruit.
  • Allow to cool, refrigerate before serving.
  • Can be served hot or cold.

SUMMER FRUIT COMPOTE

I cut this recipe out of the newspaper last summer and have made it once, using Cointreau as the liquor and blackberries. I served it with pound cake and ice cream and it was wonderful. Easy to fix when you've already got the grill up and going. You can just throw these packets on while the burgers are cooking.

4 plums, thinly sliced
2 nectarines, thinly sliced
1 cup blueberries or 1 cup blackberry (or a combination)
1/4 cup fruit liqueur (Cointreau, Framboise or Chambord)

Steps:

  • Prepare a low fire in the grill.
  • Divide the fruit between 2 squares of heavy-duty foil.
  • Drizzle each with 2 tablespoons of liqueur.
  • Seal tightly into packets so no liquid or steam will escape.
  • Grill the packets, turning once, 15 to 20 minutes.
  • Open carefully over a bowl; the fruit will have formed a syrup.
  • Sprinkle with sugar to taste.
  • Serve warm or let sit for an hour so flavors will intensify.
  • Serves 2 on its own, 4 if used as an ice cream topping.

1 pint blueberries
1 pint blackberry
1 pint strawberry
1/2 pint raspberries
1/2 cup frozen apple juice concentrate
1 cup water
1/4 cup maple syrup
1 tablespoon potato starch or 1 tablespoon cornstarch
1/4 teaspoon cinnamon
mint leaf (for garnish)

Steps:

  • Clean all berries separately.
  • Pick over and discard inferior berries.
  • Hull strawberries, cutting the larger ones in half.
  • Set all berries aside in separate bowls.
  • Combine apple-juice concentrate, water and maple syrup in a medium saucepan
  • Place potato or cornstarch in a small bowl and stir in 1/4 cup of the apple-juice mixture; add starch back to pan.
  • Add blueberries and cinnamon and bring to a simmer (mixture will be cloudy at first) until mixture turn clear and transparent
  • Carefully stir in blackberries and strawberries and remove from heat.
  • Refrigerate and let cool completely.
  • Gently stir in raspberries.
  • Serve in goblets or large wine glasses and garnish each portion with a sprig of mint.

8 ounces dried apples, slices
8 ounces dried pear halves, quarters
1 cup honey (clover or wild)

Steps:

  • Combine fruit in a large pot and fill with enough cider to cover it by a third or more.
  • (The fruit will absorb a lot of liquid.) Add cloves and lemon peel.
  • Simmer until the larger pieces are cooked but not falling apart.
  • Pour off liquid and cook until reduced by a third.
  • To reduced liquid add honey, cinnamon, lemon juice, and fruit.
  • Reheat, stirring.
  • Taste, and add more lemon juice if needed.
  • Serve warm in crystal or clear glass bowls.
  • Keeps in the refrigerator for up to 2 weeks.
