VEGAN CHOCOLATE PUDDING CAKE (CROCK POT)
Originally a Betty Crocker recipe - I veganized it and baked it in the Crockpot (2-3 quart capacity). Reminds me of the chocolate pudding cakes my mom used to make when I was little. A great comfort food dessert, especially for chilly wet nights!

Steps:
- Spray crock pot insert with cooking spray.
- Mix flour, 1/2 cup sugar, 2 tbsp cocoa, baking powder, and salt together in bowl.
- Stir in soy milk, oil, and vanilla until smooth.
- Pour batter into crock pot insert.
- Mix brown sugar and remaining 1/4 cup cocoa in bowl (make sure there are no big lumps). Sprinkle over batter.
- Pour hot water over contents of crockpot - DO NOT STIR!
- Cook on high for 2 hours or until toothpick inserted in centre comes out clean. Remove lid of crock pot and let stand for 30 minutes.
- Spoon cake into bowls. Spoon sauce over top.
- Great on its own; also yummy with soy whipped cream or vanilla ice cream.
OLD-FASHIONED CHOCOLATE PUDDING CAKE
I was searching for the old fashioned kind of pudding cake and found this on Recipeland.com. This is like the one I made when in high school! Back in the '50s! Finally found it and will keep it here for safekeeping.

Steps:
- Heat oven to 350 degrees F.
- In medium bowl stir together flour, sugar, 2 tablespoons cocoa, milk, vegetable oil, baking powder, salt and vanilla.
- Spread into greased 8 inch square baking pan.
- In medium bowl stir together remaining 4 tablespoons cocoa, brown sugar and hot water; pour over mixture in pan.
- Bake for 45 to 50 minutes or until pudding bubbles around edges.
- Remove from oven; let stand 20 minutes.
- OPTIONAL SERVING METHOD:.
- Meanwhile, in small bowl stir jam until smooth.
- Drizzle each serving of warm pudding with jam.

- Beat pudding mix, sour cream and milk in large bowl with whisk 2 min. Pour into slow cooker sprayed with cooking spray.
- Prepare cake batter as directed on package; slowly pour over pudding in slow cooker. (Do not stir.) Cover with lid.
- Cook on LOW 5 to 6 hours (or on HIGH 2-3/4 to 3-1/4 hours) or until toothpick inserted in center of cake comes out clean. Top with chopped chocolate. Turn off heat. Let slow cooker stand, covered, 30 min. or until pudding is thickened.
- Serve topped with COOL WHIP.

FUDGE PUDDING CAKE FOR THE SLOW-COOKER
This recipe is from the Wheat Foods Council. Fudge pudding cake was the first thing I cooked as a new wife 30 years ago. Its a dark fudgy chocolate cake with thick fudgy sauce that bakes right in the pan, served warm with icecream or whipped cream. Heaven in a crockpot is the only way to describe this cake.

- Note: Crock pot times vary greatly. The cooking time is correct for my crock pot but may not be correct for yours. Watch cake closely the first time you use the recipe to get the right cooking length for your your particular crock pot. This recipe was written for a 4 quart crockpot. If different size is used, that will also impact the cooking time.
- Spray the crock-pot with baking spray.
- Mix 1 cup brown sugar, flour, 3 tablespoons cocoa, baking powder and salt in a mixing bowl. Stir in milk, margarine and vanilla. Spoon batter into bottom of crock pot (dough is very thick).
- In another bowl, mix together 3/4 cup brown sugar and 1/4 cup cocoa. Sprinkle evenly over batter. Do not stir.
- Pour boiling water over the top. Do not stir. Cover and cook on high for 2 to 2-1/2 hours or until the cake pulls away from the sides of the crock-pot (pudding will be bubbling through).
- Serve immediately with ice cream or whipped topping if desired. Or let set for 10 minutes and then invert onto a plate. Spoon pudding left in the pot over the cake.

- Preheat slow cooker for 20 minutes on high.
- Grease the slow cooker bowl (would recommend if using butter to put on wax paper or baking/parchment paper to do).
- In a separate bowl, combine the first 7 ingredients mixing or whisking well together.

- Using a spoon, gently and evenly pour the boiling water over the mixture.
