1 round steak, cut into chunks
2 tablespoons flour
2 tablespoons oil
1 (10 ounce) can cream of mushroom soup, undiluted
1/2 cup chicken broth
1 (4 ounce) can diced mushrooms, drained
salt & pepper

Steps:

  • Preheat oven 350 degrees.
  • Dust steak chunks in flour that has been seasoned with salt and pepper or montreal steak seasoning.
  • Brown steak chunks in oil in a skillet.
  • Place steaks pieces in a 9 X 13 pan that has been sprayed with pam.
  • In a small pot, bring soup, broth and mushrooms to a boil. Mix well and pour over steak -- Cover with foil and bake 2 hours or until steak is tender. Serve over mashed potatoes or buttered noodles.

3 Tbsp (45 ml) butter, divided
1 lb (450 g) round steak, cut into 4 equal pieces
1/2 tsp (2.5 ml) salt
1/2 tsp (2.5 ml) ground black pepper
1 small onion, diced
1 clove garlic, minced
1 cup (250 ml) tomato sauce
1/4 cup (60 ml) maple syrup
2 Tbsp (30 ml) soy sauce
1/2 tsp (2.5 ml) red pepper flakes (optional)
1 Tbsp (15 ml) apple cider vinegar
1 cup (250 ml) beef broth or beef stock

Steps:

  • Melt 1 Tbsp (15 ml) butter in a large skillet. Heat the butter over medium-high heat, long enough for it to melt.For a stronger flavor, consider using tallow, which is a rendered form of beef fat, or lard, which is a rendered form of pig fat. Vegetable oils can also be used.Season the steak with salt and pepper. Make sure to sprinkle both sides evenly to distribute the flavor throughout the meat.
  • Brown the steaks in the butter. Add the steaks to the hot, melted butter and cook for roughly 3 minutes per side or until both sides are brown. Once brown, remove the steaks from the skillet and put them on a plate with a shallow rim. This rim is necessary since it prevents any juices from running off the side of the plate.
  • Melt the remaining butter in your skillet. Add the remaining 2 Tbsp (30 ml) of butter to the skillet and heat over medium-high until the butter melts. As before, consider using tallow or lard instead of butter to enhance the flavor. For a healthier alternative, replace the butter with a vegetable oil.
  • Cook the onion and garlic in the butter. Add the onion to the skillet and sauté it in the hot butter, stirring frequently, for about 5 minutes. Add the minced garlic and sauté for another 1 minute, again stirring frequently. The onions should be tender and fragrant when done. The garlic should be toasted and fragrant when ready. Garlic cooks faster than onion, so the two should not be added simultaneously. Moreover, garlic burns easily, so you will need to keep a close eye on it to prevent that from happening.
  • Stir in the sauce ingredients. Add the tomato sauce, maple syrup, soy sauce, apple cider vinegar, and red pepper flakes (if desired) to the skillet. Stir well, then add the beef broth, and stir again. It is a good idea to combine the sauce ingredients before returning the steak pieces to the skillet. If the steak remained in the skillet, they would create an obstruction, and you would have a harder time blending the sauce ingredients together.
  • Return the steaks to the skillet. Bring the mixture to a boil before dropping the heat to low or medium-low, letting the mixture reach a steady simmer. Make sure that you also return to the skillet any juices from the steak that seeped out onto the plate. These juices are valuable, both in terms of moisture and flavor.
  • Cook until tender. Cover the skillet and cook for 60 to 90 minutes. During the last 20 minutes, uncover the skillet. Stir the contents of the skillet occasionally as the steaks cook. Uncovering the skillet during the final part of the cooking process will allow the sauce to reduce and become thicker. Slow braising is an ideal cooking method for round steaks, which tend to be fairly lean and not very tender. The slow cooking process helps the meat break down more, and the liquid involved in braising prevents the beef from drying out.
  • Serve warm. Transfer the steak to individual serving platters and ladle the thickened sauce on top.

Grilled Steak and Potato Packets (also called Hobo Packets) are stuffed full of meat and potatoes with tons of flavor and easy cleanup!

2-3 pounds steaks, cubed ((ribeye or flat iron steaks))
olive oil
1 small onion, (diced or sliced)
2 large russet potatoes
2 cloves garlic, (minced)
8 Tablespoons (1 stick) salted butter
salt and pepper, (to taste)
steak seasoning, (optional)

Steps:

  • Tear off 4 large square sheets of aluminum foil. Drizzle all 4 foil aluminum square pieces with olive oil.
  • Put 1 Tablespoon of butter on each foil sheet.
  • Dice potatoes into cubes (about 1-inch). Leaving the skin on. Divide up the cubed potatoes and place on top of the butter on each aluminum foil square.
  • Evenly sprinkle minced garlic and diced onion over each of the four servings. Then sprinkle with kosher salt and pepper.
  • Drizzle with a little bit more olive oil.
  • Put steak pieces on top of potatoes. Season with a bit more salt and pepper or your favorite steak seasoning.
  • Drizzle with a tiny bit more olive oil and put another pat of butter on top.
  • Fold up each of the sides to make a nice little bed for the potatoes, making a square so none of the butter and oil can escape while cooking.
  • Preheat grill to medium-high heat. Grill packets for about 35-45 minutes. Check periodically for your preferrer level of doneness for the steak.

1/4 cup flour
1 large onion, sliced thin
2 tablespoons lemon juice

Steps:

  • Tear off a 5' length of aluminum foil: fold double.
  • Combine ketchup and flour.
  • Spoon about 1/3 of mixture in center of foil, spreading slightly.
  • Place steak on top of this.
  • Season with salt and pepper.

  • Sprinkle lemon juice over everything.

These Steak Foil Packets (sometimes called Hobo Dinners) are so easy you will not believe it! Fold rice, steak, and onion soup mix into some foil, bake, and voila. Deliciously tender steak and rice, ready to pair with whatever vegetables you want!

4 cups cooked rice
1 (1-oz) packet onion soup mix
1 pound steak (cube steak or top round steak)
1/2 cup evaporated milk (divided)
carrots, zucchini, asparagus, bell peppers, green beans, etc. ((optional)*)
heavy duty foil

Steps:

  • Preheat the oven to 350 degrees F. (Or see notes for camp fire or grill instructions.)
  • Tear off 4 large sheets of heavy duty foil, about 10-12 inches across. Regular foil will work too, just be careful not to tear it. You can double wrap if you're worried about it.
  • Add 1 cup of cooked rice to the center of each sheet of foil.
  • Top rice with about 1-2 teaspoons of onion soup mix.
  • Use a sharp knife to slice the steak into 12 thin strips, about 1 inch across. See photos.
  • Place 3 strips of steak on top of each mound of rice.
  • (At this point, you can add chopped vegetables around the edges of the rice. Season with salt and pepper. See notes.)
  • Pour 2 tablespoons of evaporated milk over the top of each mound of steak and rice.
  • Sprinkle the remaining onion soup mix evenly over the rest of the steak in each packet.
  • For each sheet of foil, bring the short ends of the foil together over the rice and steak. Press together and fold down securely over the food. For each end, fold the corners in, and then continue folding until you have a nice secure packet. See photos!
  • Place the 4 packets on a large baking sheet.
  • Bake at 350 for 1 hour.
  • Remove from the oven and carefully open each packet, being very careful not to burn yourself with the steam.
  • Serve hot!

1 tablespoon olive oil
1 ½ - 2 lbs. boneless beef round steak ((I use top round steak))
1 tablespoon butter
8 ounces sliced fresh mushrooms, sliced
1 sweet onion, sliced
1 clove garlic, minced or pressed
2 ½ cups low-sodium beef broth, plus more as needed
1 tablespoon Worcestershire sauce
1 tablespoon dry onion soup mix (from a 1-ounce packet), such as Lipton brand
2 sprigs fresh thyme, about 3-4 inches long each
1 sprig fresh rosemary, about 5-6 inches long
1 tablespoon cornstarch mixed with 1 tablespoon of cold water
Kosher salt and pepper, to taste
Optional garnish: chopped fresh parsley or thyme

Steps:

  • Preheat oven to 300°F.
  • Use a meat mallet to tenderize the meat by pounding to ½-inch thickness.
  • Heat 1 tablespoon of olive oil in a Dutch oven or deep braising skillet over medium-high heat. Working in batches, if necessary, add the steak and cook until browned, about 5 minutes per side. Remove from the pan and set aside.
  • Reduce the heat to medium; add the butter to the drippings in the pan. When the butter melts, stir in the mushrooms and onion; cook until starting to soften, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Stir in the broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan with a wooden spoon.
  • Return the steaks and any juices to the pan. Sprinkle dry onion soup mix over all. Tuck thyme and rosemary sprigs into the broth.
  • Cover and bake for 2 ½ - 3 hours, or until the meat is tender. Check the steaks once or twice during the cooking process, adding more broth to the pan if necessary. You want about ½ - ⅓ of the steaks submerged in the liquid for proper braising. If the steaks are still tough at the end of the cooking time, return the pan to the oven and continue baking.
  • Remove the meat from the pan and cover loosely with foil to keep warm. Discard the herb sprigs.
  • To thicken the gravy, bring the liquid to a boil over medium-high heat. If you'd like even more gravy in your pan, you can add more beef broth at this time. Add about half of the cornstarch slurry, whisking until the mixture thickens. If you'd like a thicker gravy, add the remaining cornstarch slurry (I find that I don't usually need all of the cornstarch). To thin the gravy, add extra broth. Taste and season with salt and pepper, if necessary.
  • Slice the steaks thinly against the grain. Spoon the gravy over top and serve with mashed potatoes, noodles or rice. Garnish with chopped fresh herbs.
