2 tbsp paprika
1 tbsp onion powder
1 tbsp dried thyme
1 tbsp white pepper
1½ tsp Cayenne pepper

1½ tsp garlic powder

Steps:

  • Add the salt, paprika, onion powder, thyme, white pepper, cayenne pepper, black pepper, and garlic powder to a small food processor until the mixture is no longer full of thyme leaves.
  • Add to a glass jar to store.
  • Use 2 tablespoons of seasoning for 1 rotisserie chicken, cook, and enjoy!

1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon ground thyme (, (if using thyme leaves - process them))
1/2 teaspoon white pepper
1/4 teaspoon cayenne pepper
5 pound chicken

Steps:

  • Mix together the salt, paprika, garlic powder, black pepper, onion powder, ground thyme, white pepper and cayenne pepper.
  • Remove giblets from chicken and pat dry with paper towel.
  • Season chicken inside and out with the seasoning mix and let chicken marinate for 8 hours.

I have a George Foreman rotisserie and love the way everything comes out of it. This recipe makes the chicken juicy and skin crispy. Does not include marinade time.

4 lbs roasting chickens
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon sugar
2 teaspoons paprika
olive oil

Steps:

  • Remove the giblets from chicken and discard.
  • Wash chicken inside and out, drying with paper towels.
  • Rub chicken with a little olive oil.
  • Tie wings and legs with cooking twine.
  • Mix all the spices together well.
  • Rub all over chicken.
  • Place on plate and wrap with saran.
  • Put in fridge 4-24 hrs., the longer the better.
  • Put chicken onto rotisserie bar.
  • Set timer for 1 1/2 hours.
  • Chicken is done at 160 and no longer pink.

This is a no-fail yummy rotisserie chicken all-purpose rub! I use this to cook chicken in any manner of ways: oven, grill & crock pot, etc. This also works great on pork loin or chops! Recipe makes 2 1/2 cups of spice/rub blend, but I use at least a 1/4 cup per whole chicken, so it goes fast! Easily made salt-free or lower-salt by omitting or adjusting it. I hope you enjoy this as much as my family does :)
