1 lb semisweet chocolate, chopped
1 (300 ml) can sweetened condensed milk
1 teaspoon vanilla
1 cup dried cranberries or 1 cup raisins
1 cup chopped toasted pecans

Steps:

  • In bowl over saucepan of hot (not boiling) water, melt chocolate with condensed milk, stirring frequently, until smooth. Stir in vanilla. Stir in cranberries and pecans.
  • Pour into foil-lined 8-inch (2 L) square cake pan; smooth top. Refrigerate for about 3 hours or until firm.
  • Turn out onto cutting board; peel off foil. Cut into squares. (Make-ahead: Layer between waxed paper in airtight container and refrigerate for up to 2 weeks.).
  • Additional Information.
  • Tip: To toast nuts, bake on baking sheet in 350°F (180°C) oven for 8 to 10 minutes or until fragrant and golden.

This is a tasty fudge made with powdered sugar - no boiling required! It makes a great Christmas treat, or last minute bake sale donation.

1 lb powdered sugar, sifted
1/2 cup unsweetened cocoa, sifted
1/4 teaspoon table salt
6 tablespoons butter
1/4 cup evaporated milk
1 tablespoon vanilla extract
1 cup nuts, chopped

Steps:

  • Butter the bottom and sides of an 8" X 8" pan.
  • Place 6 TB butter and evaporated milk together in the top of a double boiler or large heatproof bowl.
  • Place over simmering water and stir until butter is melted.
  • May add 1/4 cup dark chocolate chips if desired, allow to melt.
  • Sift powdered sugar, cocoa, and salt into bowl with melted butter.
  • Stir with wooden spoon or rubber spatula until the mixture is smooth and shiny, about 5 minutes.
  • Stir in vanilla until combined; stir in nuts.
  • Spread quickly in buttered 8" X 8" pan.
  • Cool completely, cut into 1" squares to serve.

18 ounces milk chocolate chips (3 cups) or 18 ounces any flavor chips (3 cups)
14 ounces sweetened condensed milk (fat free is fine)
2 tablespoons coffee, any flavor, room temp
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 teaspoon vanilla extract or 1 teaspoon extract, flavor of choice

Steps:

  • Line an 8x8 pan with foil and butter it well.
  • Place all ingredients except for extract in a glass dish and microwave on high for 1 and 1/2 minutes.
  • Stir until smooth.
  • Stir in vanilla and spread into prepared pan.
  • Cover and refrigerate for 2 hours.
  • Remove from pan and cut into desired shape. Store at room temperature in an airtight container.

3 3/4 cups confectioners' sugar (1 lb box)
1/2 cup cocoa powder, unsweetened
6 tablespoons butter or 6 tablespoons margarine
1/4 cup milk
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup walnuts or 1 cup pecans, chopped

Steps:

  • Grease a 9x5x2-inch loaf pan; set aside.
  • In a heavy 3-quart saucepan, add all ingredients except nuts. Cook over very low heat, constantly stirring mixture until well combined and smooth.
  • Remove from heat; stir in nuts. Quickly spread into pan.
  • Refrigerate 2 hours or until firm. Cut into squares.

Some 17 years ago, when I was dating the man who is now my husband, his mother gave me this recipe for his favorite fudge. It's a tasty treat that's so simple to make.

3 tablespoons butter, divided
12 ounces German sweet chocolate, chopped
2 cups semisweet chocolate chips
1 jar (7 ounces) marshmallow creme
4-1/2 cups sugar
1 can (12 ounces) evaporated milk
2 cups pecans or walnuts, chopped

Steps:

  • Line a 13x9-in. pan with foil; butter the foil with 1 tablespoon butter and set aside. Break German chocolate into 1-in. pieces; place in a bowl. Add the chocolate chips and marshmallow creme; set aside., In a large saucepan, bring the sugar, milk and remaining butter to a boil over medium heat, stirring often. Reduce heat; simmer, uncovered, 6 minutes, stirring occasionally. Slowly pour over chocolate mixture; stir until mixture is smooth and blended. Stir in nuts., Pour into prepared pan. Let stand at room temperature until cool. Cut into 1-in. squares. Store in an airtight container in the refrigerator.

  • Toss the chocolates, baking soda, and salt in a medium heatproof bowl until baking soda is evenly distributed. Stir in sweetened condensed milk and vanilla. Set the bowl over a 4-quart saucepan containing 2 cups of simmering water. Stir with a rubber spatula until the chocolate is almost fully melted and just a few small pieces remain, 2 to 4 minutes. (Make sure to remove the fudge from the double boiler before the chocolate is fully melted. If the chocolate stays in the double boiler too long, there is the possibility of the chocolate separating and producing a greasy fudge.)
  • Remove the bowl from the heat and continue to stir until the chocolate is fully melted and the mixture is smooth, about 2 minutes. Stir in the walnuts. Transfer the fudge to the prepared pan and spread into an even layer with the spatula. Refrigerate until set, about 2 hours. Remove the fudge from the pan using the foil overhang and cut into squares. Store the fudge, tightly wrapped in plastic, in a cool place for up to 2 weeks.
  • TO MAKE A DOUBLE BATCH: Line a 13 by 9-inch pan; double amounts of all the ingredients; and use a large heatproof bowl and Dutch oven containing 4 cups of simmering water for melting the fudge mixture.
