Rotisserie Chicken Pasta Salad image

Simple and easy Pasta Salad recipe that can be made ahead and uses store-bought rotisserie chicken and greek yogurt.

16 ounces farfalle pasta ((macaroni or shells would work too))
2 cups rotisserie chicken, diced
1 cup celery, diced
1 cup frozen peas
½ cup red onion, diced
½ cup mayo
½ cup greek yogurt ((nonfat works))
⅓ cup sweet relish
2 tablespoons lemon juice
¼ cup parmesan cheese, grated
½ teaspoon kosher salt

Steps:

  • Cook pasta according to package directions until al dente. Drain and pour into a large bowl.
  • With the pasta, add in the chicken, celery, peas, and red onion.
  • To make the dressing, whisk together all of the dressing ingredients. Pour over the pasta salad and toss well to combine. Season with salt and pepper to taste. Refrigerate until ready to serve.

1 apple, cored and chopped
10 seedless green grapes, quartered
1 cup mayonnaise
1 tablespoon low-fat vanilla yogurt
1 teaspoon Dijon mustard
1 teaspoon lemon juice
¼ teaspoon ground cumin
salt and ground black pepper to taste

Steps:

  • Place shredded chicken, pecans, apple, and quartered grapes in a bowl. Stir.
  • Mix mayonnaise, yogurt, mustard, lemon juice, cumin, salt, and pepper together in a small bowl. Pour over chicken mixture and toss to coat. Cover and refrigerate until chilled, about 1 hour.

½ cup mayonnaise, or to taste
salt and ground black pepper to taste

Steps:

  • Combine chicken, onion, eggs, pickle relish, mustard, paprika, and red pepper flakes in a bowl; stir in mayonnaise by spoonfuls until mixture holds together but isn't too moist. Season salad with salt and pepper.

  • Once your pasta is cooled down then add your chicken, greek yogurt, mayonnaise, green onions, hidden valley ranch mix, parsley, cheese, peas, salt & pepper.
  • Put your pasta salad in the fridge and chill until it is really cold. Then do a taste test and see if you want to add any more salt, pepper or mayo.
  • If you have any leftovers put them in the fridge pretty quickly (I'm weird about leaving stuff out) and just be sure to add a little bit of mayo to it before you serve it again because it tends to dry out overnight.
