3/4 cup mayonnaise

2 tablespoons capers, rinsed/drained and roughly chopped
1 small shallot, finely minced
1 clove garlic, finely minced
1 tablespoon chopped fresh parsley (fresh dill is also a great option for seafood)
2 teaspoons fresh lemon juice
1 teaspoon Dijon mustard
1/4 teaspoon onion powder
1/4 teaspoon freshly ground black pepper
1/4 teaspoon hot pepper sauce (optional)
1 tablespoon finely chopped olives (optional)

TARTAR SAUCE

Tartar Sauce image

I haven't purchased tartar sauce in many years. We do not like any hint of sweetness, preferring the combination of dill pickle, lemon, onion and Worcestershire to flavor the sauce. This will keep a long time in the refrigerator. Note to World Tour participants - this recipe is included in the British category. Similar sauce recipes (making the mayonnaise from scratch, of course) go back to Medieval times, and have been found in British books as early as 1685. It's also wonderful served with fish and chips, if you aren't very fond of malt vinegar.

TARTAR SAUCE

Tartar Sauce image

Packed with crunchy, sharp zing from onion, and tang and savoriness from capers, this homemade tartar sauce delivers bold freshness. Once you've mixed the base below, you can stir in more of whichever ingredients you most enjoy. And if you don't like the bite of raw onion, you can soak it in cold water for 10 minutes and drain before stirring it in. Thick yet spreadable, this works as a dip, too.

TARTAR SAUCE

Categories     condiment

Time 15m

Yield 6 to 8 servings

Number Of Ingredients 9

*3 egg yolks
1/4 cup malt vinegar
1 1/2 cups peanut or vegetable oil
2 shallots, finely diced
3/4 cup finely chopped cornichons
1/2 cup whole-grain mustard
1 teaspoon celery salt
Pinch cayenne pepper
Kosher salt

Steps:

  • In the food processor combine the egg yolks and malt vinegar. With the machine running, add the oil, drop by drop, until the mixture starts to look homogeneous and thick and silky. When the mixture looks like it has come together and is starting to thicken, the oil can be added a little bit faster until all the oil is added. Add the remaining ingredients and taste for seasoning. Season with salt, if needed. Transfer to a container with a lid and refrigerate until ready to use.
  • Dips away!
  • *RAW EGG WARNING
  • Food Network Kitchens suggest caution in consuming raw and lightly-cooked eggs due to the slight risk of Salmonella or other food-borne illness. To reduce this risk, we recommend you use only fresh, properly-refrigerated, clean, grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the shell.
