1 fully cooked boneless ham (4 to 5 pounds)
3/4 to 1 cup water
1/4 cup orange marmalade
1/4 cup prepared mustard
1/4 teaspoon ground ginger

Steps:

  • Place ham in a shallow roasting pan; add water to pan. Bake, uncovered, at 325° for 1 hour. , In a small bowl, combine the marmalade, mustard and ginger. Brush some over the ham. Bake 1 hour longer or until a thermometer reads 140°, brushing occasionally with glaze.

2kg unsmoked boneless gammon joint
2l cola (not diet)
1 carrot, chopped
1 onion, peeled and quartered
1 stick celery, chopped
1 cinnamon stick
½ tbsp peppercorns
1 bay leaf
150ml maple syrup
2 tbsp wholegrain mustard
2 tbsp red wine vinegar
pinch of ground cloves or five-spice

Steps:

  • Put 2kg unsmoked boneless gammon joint in a large pan and cover with 2l cola. Add 1 chopped carrot, 1 quartered onion, 1 chopped celery stick, 1 cinnamon stick, ½ tbsp peppercorns and 1 bay leaf.
  • Bring to the boil, then turn down to simmer for around 2 ½ hrs, topping up with boiling water if necessary to keep the gammon fully covered.
  • Carefully pour the liquid away, then let the ham cool a little while you heat the oven to 190C/170C fan/gas 5.
  • Lift the ham into a roasting tin, then cut away the skin leaving behind an even layer of fat. Score the fat all over in a criss-cross pattern.
  • Mix 150ml maple syrup, 2 tbsp wholegrain mustard, 2 tbsp red wine vinegar and a pinch of ground cloves or five-spice in a jug.
  • Pour half over the fat, roast for 15 mins, then pour over the rest and return to the oven for another 30 mins, baste half way through.
  • Remove from the oven and allow to rest for 10 mins, then spoon more glaze over the top. Can be roasted on the day or up to 2 days ahead and served cold.

¼ cup maple syrup
1 tablespoon red wine vinegar
2 tablespoons Dijon mustard

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Trim excess fat off the ham and score in a diamond pattern with a sharp knife, making shallow cuts about 1 inch apart. Place in a roasting pan.
  • Roast for 30 minutes in the preheated oven. In a small bowl, mix together the maple syrup, red wine vinegar, Dijon mustard and mustard powder.
  • When the 30 minutes are up, brush 1/3 of the glaze over the ham. Bake 20 minutes, and repeat twice with remaining glaze. Let the ham stand for 10 to 15 minutes before carving.

1/3 cup Real Maple Syrup (sugar free ok)
3 Tablespoons Cider Vinegar
1/4 cup Brown Sugar (sugar free ok)
3 Tablespoons Dijon Mustard
1/2 teaspoon Cinnamon, ground
1/4 teaspoon cloves, ground

Steps:

  • Pre-heat oven to 325°F
  • Remove ham from packaging. If there are any liquids, reserve add it and add to the roasting pan.
  • Place the ham cut side down in a shallow roasting pan and for a spiral ham as shown and cook uncovered.
  • Whisk cider vinegar, syrup, brown sugar, mustard and spices together in a small small saucepan.
  • Over medium heat stir until the sugar has dissolved.
  • When the internal temperature reaches 120°F spoon or brush the ham with the prepared glaze.
  • Increase the heat to 350°F for the last 10 minutes of cooking. Watch to make sure the glaze doesn't burn. Gently tent with foil and let rest for 10 minutes before serving. Ensure the internal temperature has reached 140°F before serving.

1 whole leg of gammon, smoked or unsmoked, around 5kg weight bone-in
1 cinnamon stick
1 tsp peppercorns
1 tsp coriander seeds
2 bay leaves
about 25 whole cloves
200ml maple syrup
2 tbsp coarse-grain mustard
2 tbsp Worcestershire sauce
2 tbsp soy sauce

Steps:

  • Put the gammon in a very large pan and cover with cold water. Add the spices and bay. Bring to the boil, then turn down and simmer for around 1 hr 50 mins, topping up the water level with boiling water, if necessary. Scoop off any scum that rises to the top every now and then.
  • Carefully pour the liquid away (I like to keep it for making soup), then let the ham cool a little while you heat the oven to 190C/fan 170C/gas 5. Lift the ham into a large roasting tin, then cut away the skin leaving behind an even layer of fat. Score the fat all over in a criss-cross pattern, then stud cloves all over the ham. Can now be chilled for up to 2 days.
  • Mix the glaze ingredients in a jug. Pour half over the fat, roast for 15 mins, then pour over the rest and return to the oven for another 35 mins, basting with the pan juices 3-4 times as it bakes. Turn the pan around a few times during cooking so the fat colours evenly. Remove from the oven and allow to rest for 15 mins before carving. Can be roasted on the day or up to 2 days ahead and served cold.

One 20-pound bone-in fully cooked ham
1 1/2 cups maple syrup
1 1/2 cups Dijon mustard
1/2 cup soy sauce
1/2 cup dark brown sugar
1/2 cup apple cider vinegar
1/2 cup Worcestershire sauce
Pinch cayenne pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the ham in a roasting dish with 1 cup water in the bottom of the dish. Roast for 1 hour and 15 minutes. (Check the ham after 45 minutes and add more water if necessary or tent with aluminum foil if it is getting past a dark golden brown.)
  • Meanwhile, combine the syrup, mustard, soy sauce, brown sugar, vinegar, Worcestershire and cayenne in a saucepan over medium-high heat. Cook, stirring frequently, until the mixture is thick and bubbly, 15 to 20 minutes.
  • If you used it, remove the foil from the ham and slather the ham with the glaze. Return the ham to the oven uncovered. Continue to roast, brushing the ham with the glaze every 15 minutes, until the internal temperature is between 140 and 150 degrees F, another 1 hour and 30 minutes. (If the ham starts to become too dark on the outside, tent it with aluminum foil. We are looking for a dark, sticky, flavorful glaze on the outside of the ham. Use all the glaze! 2 onions, quartered
3 qt pineapple juice
2 teaspoons dijon mustard
½ cup pineapple juice
½ cup maple syrup
25 cloves

Steps:

  • Place the gammon joint in a large pot and add the onions and pineapple juice. Bring to a boil over high heat.
  • Once boiling, reduce the heat to medium, cover, and simmer for 70 minutes. (Gammon joints need to cook for 40 minutes per kilo (2 ¼ lbs), so if you are using a smaller or large gammon joint, adjust the cooking time accordingly.)
  • Once cooked, carefully remove the gammon joint from the pan and place on a baking sheet to cool slightly.
  • Preheat the oven to 375°F (190°C).
  • Make the glaze: in a small pan over a medium heat, combine the Dijon mustard, pineapple juice, and maple syrup and bring to a boil. Cook for 10 minutes, or until slightly reduced and glossy.
  • Carefully remove the skin from the gammon joint, using a small paring knife to help ease the fat away from the skin. Be sure to leave a small layer of fat on top of the gammon.
  • Score the fat in a diamond pattern and push a clove into each cross section.
  • Liberally brush the gammon joint with the glaze, making sure to reserve at least half of the glaze.
  • Roast the gammon joint for 40 minutes, glazing again halfway through.

3/4 cup real maple syrup
1/4 cup brown sugar

1 (12 ounce) package frozen unsweetened raspberries, thawed
1 (16 ounce) jar red currant jelly
1 (8 ounce) jar Dijon mustard
1 (10 -13 lb) precooked bone-in whole ham
1 1/2 cups firmly packed light brown sugar
1 cup water
kale leaf, to garnish
flat leaf parsley, to garnish

Steps:

  • Preheat the oven to 350°.
  • Purée the berries with their juices in a blender or food processor, and pass the purée through a fine-mesh sieve. You should have about 1 cup purée.
  • Stir together the raspberry purée, red currant jelly, and Dijon mustard in a saucepan over medium heat until the jelly dissolves. Boost the heat to high and bring mixture to a boil. Cook, stirring constantly, for 1 minute. Remove from the heat and set aside to use as a glaze. You should have just about 3 cups.
  • Place the ham, fatty side up, in a roasting pan. Peel off the skin and trim off most of the fat. Score the remaining fat in a diamond pattern. Rub the brown sugar over the surface.
  • Roast the ham for 30 minutes. Remove from the oven and pour the water over the ham. Spoon 1 cup of the glaze over the ham, and return it to the oven. Bake for 2 1/2 hours longer, basting every 15-20 minutes with the pan juices and adding 1/3 cup of the raspberry glaze in the process until it is all used up.
  • Line a large platter with the kale and parsley and place ham on it. Carve at the table.

1 bone-in smoked spiral-sliced ham ((8-11 pounds))
Aluminum foil
2 tablespoons unsalted butter, cubed
1 1/2 cups apple cider
1/2 cup pure maple syrup (NOT imitation)
1/2 cup packed light brown sugar
3 tablespoons apple cider vinegar
3 tablespoons Dijon mustard
2 tablespoons yellow mustard
2 teaspoons cornstarch
1/2 teaspoon ground cinnamon
1/4 tsp EACH ground nutmeg, ground cloves, dried thyme, pepper, chili pwder

Steps:

  • Remove ham from refrigerator and let sit at room temperature 2-3 hours.
  • Whisk together all of the Apple Cider Maple Glaze ingredients in a medium saucepan. Bring to a boil. Reduce to a simmer over medium heat, stirring often, until thickened and reduced, approximately 15-20 minutes. Stir in butter until melted. Glaze will thicken more as it stands.
  • Preheat oven to 325 degrees F. Adjust oven rack to lowest position. Pour 2 cups water into bottom of roasting pan IF you have a roasting rack. Place roasting rack inside pan. (Skip step if you don't have a roasting rack.)
  • Roll out 2 large pieces of foil to wrap your ham in. Place ham on foil and brush all over with some of the Glaze, including in between slices. Tightly wrap ham with foil and place on its side on the roasting rack (or bottom of pan). Bake ham until the center registers 100-110 degrees F, about 2 hours (about 12 minutes per pound).
  • Remove ham from oven and increase oven temperature to 400 degrees F.
  • Carefully unfold foil to expose ham and brush ham all over with Glaze (if Glaze has become to thick to brush, return to heat to loosen). Leave ham exposed and bake for 20-30 minutes or until edges are golden brown and caramelized.
  • Remove ham from oven and brush again all over with Glaze. Spoon juices from bottom of pan all over ham. Loosely cover with foil. Let rest for 15 minutes then spoon more juices over ham and serve with any remaining Glaze.
