HEALTHY MEDITERRANEAN BAKED HADDOCK



Healthy Mediterranean Baked Haddock image

Haddock is a mild-tasting, flaky white fish similar to cod. Here it is baked to perfection atop a sweet cherry tomato sauce spiked with salty capers and olives. Pair it with some crusty bread to soak up the juices.

Two 14-ounce cans cherry tomatoes
1/2 cup dry white wine
1/2 cup pitted Kalamata olives, sliced in half
4 cloves garlic, minced
2 tablespoons capers, drained
1 tablespoon honey
Kosher salt and freshly ground black pepper
Four 6-ounce haddock fillets, skin removed
1/2 teaspoon Italian seasoning
1/2 teaspoon sweet paprika
2 tablespoons olive oil
4 slices crusty bread

Steps:

  • Preheat the oven to 425 degrees F. Combine the cherry tomatoes, white wine, olives, 3 of the garlic cloves, capers, honey, 1/2 teaspoon salt and a few grinds of pepper in a 9-by-13-inch baking dish.
  • Pat the haddock fillets dry with a paper towel and season the flesh side with the Italian seasoning, paprika, 1 teaspoon salt and a few grinds of pepper. Nestle the fillets into the sauce in the baking dish. Bake until the sauce is bubbling around the edges and the fillets are cooked through and easily flaked with a fork, 15 to 20 minutes.
  • Meanwhile, mix the remaining 1 garlic clove with the olive oil, 1/4 teaspoon salt and a few grinds of pepper in a small bowl. Brush both sides of each slice of bread with the oil mixture and place onto a baking sheet. Bake until the bread is toasted, 5 to 7 minutes.
  • Serve the fish on plates with the sauce and bread on the side.

With bold Mediterranean flavors this One Pan Lemon Garlic Haddock with Artichoke Hearts, tomatoes and olives is the kind of fish dinner that people who don't love fish can enjoy! The fish itself is mild, flavored with a delightful lemon and garlic sauce, and served with artichoke hearts, fresh tomatoes and herbs.

1 teaspoon dried oregano
1 teaspoon Aleppo pepper
1 teaspoon coriander
1/2 teaspoon paprika
4 fillets haddock ((thawed if previously frozen, 6 ounces each))
Black pepper
1/4 cup extra virgin olive oil
1 tablespoon butter
3 cloves garlic ((minced))
1 shallot ((minced))
Kosher salt
1/2 cup white wine
1 lemon ((juice of))
15 ounces artichoke hearts ((rinsed and drained))
1 roma tomato ((chopped))
1/4 cup fresh parsley ((chopped))
1/4 cup fresh dill ((chopped))
1/2 cup green olives ((pitted))

Steps:

  • In a small bowl, combine the oregano, Aleppo pepper, coriander, and paprika. Stir to mix.
  • Pat the fish dry and season with kosher salt and black pepper on both sides, then rub the spice mixture all over the fish. Set aside for now.
  • In a large cast iron skillet, heat the olive oil and butter over medium heat. Add the garlic and shallot and cook for 3 to 5 minutes, stirring occasionally until softened (manage your heat so the garlic does not burn)
  • Add the white wine, lemon juice, and artichoke hearts and cook for another 5 minutes until the liquid is slightly reduced.
  • Add the fish to the skillet and turn the heat down to medium-low. Cover and cook for 4 to 5 minutes, or until the fish is flakey and fully cooked through.
  • When the fish is ready, remove it from the heat and finish with the Roma tomato, fresh herbs, and olives. Serve immediately!

2 fillets haddock or other firm white flesh fish -- skinned; 1/2 cup bruschetta topping -- from deli or canned; 2 strips bacon -- small dice; 1/8 cup cilantro, fresh chopped; 2 large mushrooms, white, fresh - sliced small; 2 teaspoons jalapenos, canned -- chopped; 1/4 stick butter or margarine;
grated Parmesan cheese

Steps:

  • Prepare mushrooms, jalapenos, cilantro, and bacon and mix in with the bruschetta topping. Slice butter into small chips. Place each haddock fillet on a large square of heavy-duty foil. Top each fillet with half of the veggie mixture, then dot with the butter. Shake grated parmesan cheese over all. Leave foil open at top while forming into a "boat" shape to put on barbecue grill. Grill for about 25-30 minutes over a "medium" indirect heat setting (about 350 degrees). Cook time depends on thickness of fillet. Test with fork - fish will flake when done. If desired, finish under broiler to brown topping. Serve immediately.

½ cup cumin seeds
5 jalapeno peppers, seeds and ribs removed, chopped
3 cloves garlic
1 tablespoon cracked black pepper
⅓ cup fresh lime juice
1 ½ teaspoons salt
1 ½ cups olive oil
2 bunches cilantro (leaves and stems)
1 (3 pound) skirt or flank steak

Steps:

  • Toast the cumin seeds in a medium saute pan over medium-low heat for 5 minutes, or until fragrant.
  • In a blender, combine the cumin seeds, jalapenos, garlic, pepper, lime juice, and salt. Pulse the blender to finely chop ingredients. Add the oil and cilantro and puree until smooth.
  • Lightly score both sides of the meat with a knife so that the marinade will penetrate. Place the meat in a large plastic bag or bowl, pour in the marinade, and coat well. Marinate in the refrigerator for 24 to 48 hours.
  • Preheat an outdoor grill for high heat and lightly oil grate.
  • Remove the meat from the marinade and discard the remaining marinade. Cook on high, 1 to 2 minutes per side, to sear the meat. Turn the heat down to low and cook for an additional 3 to 4 minutes per side, or until the it has reached the desired doneness.

  • Preheat your grill or grill pan to medium heat. Pat the fish dry and spray with non-stick cooking spray or olive oil. Season with the salt and garlic seasoning.
  • If you are using your grill, coat it with a little bit of olive oil. Next, place about 2-3 slices of lemon (for each filet) onto the grill grates. Now, place a fish filet onto the lemons, close the grill, and cook for about 8 minutes or until the fish is opaque and flaky.
  • If you are using a grill pan, you can do the same thing with the lemon slices, or you can spray the pay with olive oil, then sear on medium/high heat, each side of the filets for about 4 minutes then flip and do the same until the fish is opaque and flaky.
  • In the meantime in a small saucepan, combine all of the ingredients for the sauce. Simmer on low for about 5 minutes. Just long enough to soften the shallots a bit.

  • If your haddock filets are small, leave them whole. If you have one large filet, cut into three or four pieces. (Our filet was 1¼ pounds and we cut it into four servings.) Set the fish aside.
  • In a large sauté pan over medium high, melt butter and add shallots, and garlic. Sauté for three minutes then add wine. Cook until wine is almost evaporated then add stock and lemon juice. Simmer this on medium high for about 5 minutes or until the mixture has reduced by one third. Move the pan to low heat, add pepperoncini and olives. Keep on low heat while you fry the fish.
  • In a cast iron skillet or similar pan, heat olive and canola oil until hot, about 350 degrees F. (Use a candy thermometer to ensure you have the correct temperature.)
