HEALTHY MEDITERRANEAN BAKED HADDOCK
Haddock is a mild-tasting, flaky white fish similar to cod. Here it is baked to perfection atop a sweet cherry tomato sauce spiked with salty capers and olives. Pair it with some crusty bread to soak up the juices.

- Preheat the oven to 425 degrees F. Combine the cherry tomatoes, white wine, olives, 3 of the garlic cloves, capers, honey, 1/2 teaspoon salt and a few grinds of pepper in a 9-by-13-inch baking dish.
- Pat the haddock fillets dry with a paper towel and season the flesh side with the Italian seasoning, paprika, 1 teaspoon salt and a few grinds of pepper. Nestle the fillets into the sauce in the baking dish. Bake until the sauce is bubbling around the edges and the fillets are cooked through and easily flaked with a fork, 15 to 20 minutes.
- Meanwhile, mix the remaining 1 garlic clove with the olive oil, 1/4 teaspoon salt and a few grinds of pepper in a small bowl. Brush both sides of each slice of bread with the oil mixture and place onto a baking sheet. Bake until the bread is toasted, 5 to 7 minutes.
- Serve the fish on plates with the sauce and bread on the side.

- In a small bowl, combine the oregano, Aleppo pepper, coriander, and paprika. Stir to mix.
- Pat the fish dry and season with kosher salt and black pepper on both sides, then rub the spice mixture all over the fish. Set aside for now.
- In a large cast iron skillet, heat the olive oil and butter over medium heat. Add the garlic and shallot and cook for 3 to 5 minutes, stirring occasionally until softened (manage your heat so the garlic does not burn)
- Add the white wine, lemon juice, and artichoke hearts and cook for another 5 minutes until the liquid is slightly reduced.
- Add the fish to the skillet and turn the heat down to medium-low. Cover and cook for 4 to 5 minutes, or until the fish is flakey and fully cooked through.
- When the fish is ready, remove it from the heat and finish with the Roma tomato, fresh herbs, and olives. Serve immediately!

GRILLED MEXI-TERRANEAN HADDOCK

- Prepare mushrooms, jalapenos, cilantro, and bacon and mix in with the bruschetta topping. Slice butter into small chips. Place each haddock fillet on a large square of heavy-duty foil. Top each fillet with half of the veggie mixture, then dot with the butter. Shake grated parmesan cheese over all. Leave foil open at top while forming into a "boat" shape to put on barbecue grill. Grill for about 25-30 minutes over a "medium" indirect heat setting (about 350 degrees). Cook time depends on thickness of fillet. Test with fork - fish will flake when done. If desired, finish under broiler to brown topping. Serve immediately.

Steps:
- Toast the cumin seeds in a medium saute pan over medium-low heat for 5 minutes, or until fragrant.
- In a blender, combine the cumin seeds, jalapenos, garlic, pepper, lime juice, and salt. Pulse the blender to finely chop ingredients. Add the oil and cilantro and puree until smooth.
- Lightly score both sides of the meat with a knife so that the marinade will penetrate. Place the meat in a large plastic bag or bowl, pour in the marinade, and coat well. Marinate in the refrigerator for 24 to 48 hours.
- Preheat an outdoor grill for high heat and lightly oil grate.
- Remove the meat from the marinade and discard the remaining marinade. Cook on high, 1 to 2 minutes per side, to sear the meat. Turn the heat down to low and cook for an additional 3 to 4 minutes per side, or until the it has reached the desired doneness.

- If your haddock filets are small, leave them whole. If you have one large filet, cut into three or four pieces. (Our filet was 1¼ pounds and we cut it into four servings.) Set the fish aside.
- In a large sauté pan over medium high, melt butter and add shallots, and garlic. Sauté for three minutes then add wine. Cook until wine is almost evaporated then add stock and lemon juice. Simmer this on medium high for about 5 minutes or until the mixture has reduced by one third. Move the pan to low heat, add pepperoncini and olives. Keep on low heat while you fry the fish.
- In a cast iron skillet or similar pan, heat olive and canola oil until hot, about 350 degrees F. (Use a candy thermometer to ensure you have the correct temperature.)
