BAKED BRIE WITH ROASTED GARLIC

"The garlic is mellow and sweet in this recipe," says Lara Pennell of Mauldin, South Carolina. "I never fail to get compliments when I serve this as a first course-even brie-haters are converted!"

1 whole garlic bulb
1-1/2 teaspoons plus 1 tablespoon olive oil, divided
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1 round loaf (1 pound) sourdough bread
1 round (8 ounces) Brie cheese
1 loaf (10-1/2 ounces) French bread baguette, sliced and toasted
Red and green grapes

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off bulb. Brush with 1-1/2 teaspoons oil; sprinkle with rosemary. Wrap in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. , Meanwhile, cut the top fourth off the loaf of bread; carefully hollow out enough of the bottom of the bread so cheese will fit. Cube removed bread; set aside. Place cheese in bread. , Cool garlic for 10-15 minutes. Reduce heat to 375°. Squeeze softened garlic into a bowl and mash with a fork; spread over cheese. Replace bread top; brush outside of bread with remaining oil. Wrap in heavy-duty foil. , Bake for 45-50 minutes or until cheese is melted. Serve with toasted baguette, grapes and reserved bread cubes.

Easy baked brie image

Easy baked brie with honey and sage is the perfect simple appetizer for any occassion. Served with bread or crackers, it's a guaranteed crowd pleaser.

200 g (7oz) brie wheel
2 tbsp honey
½ cup fresh sage
bread/crackers (to serve )

Steps:

  • Preheat the oven to 200°C/400°F.
  • Using a sharp knife, slice the top of the rind off the brie then place onto a baking dish.
  • Place the baking dish you are using onto a baking sheet. Drizzle the brie generously with honey and place in a hot oven.
  • Place the cheese in the oven and allow to bake until the cheese has just melted, 7-10 minutes.
  • While the cheese is baking, fry the sage leaves in hot olive oil for a few seconds until they start to crisp then remove with a slotted spoon and drain on paper towels.
  • Once baked, remove the cheese from the oven. Scatter over the crispy sage leaves and place on a serving platter. Serve with bread or crackers.

A warm and gooey rosemary baked brie

Number Of Ingredients 4

1 tablespoon chopped fresh rosemary
1 - 2 cloves garlic (finely diced)
6.5 oz brie wheel
small round loaf

Steps:

  • Preheat the oven to 425 degrees F.
  • Finely chop the rosemary and the garlic and gently toss together.
  • Cut a large X on the top of your brie. Slice under these cuts so each section can flap up.
  • Stuff under the flaps of the brie with the two-thirds of the rosemary and garlic.
  • Cut the top off your loaf and gut so that the brie can fit inside. Sprinkle the bottom with the remaining rosemary and garlic.
  • Fit the brie into the loaf, cut side up.
  • Bake in the oven for 15 minutes, or until nice and gooey.
  • Serve warm with your choice of dippers.

2 frozen puff pastry sheets, such as Pepperidge Farm
1 tablespoon unsalted butter
4 garlic cloves, coarsely chopped
1 (16 ounce) round brie cheese or 1 (16 ounce) wedge brie cheese
3 -4 tablespoons honey

Steps:

  • Preheat oven to 375 degrees. Lightly grease a baking dish that is about 2 inches wider than the brie.
  • Thaw pastry sheets until pliable; unfold and set aside.
  • Melt butter in small pan over medium heat. Add garlic, cook about 1 minute (do not brown); set aside.
  • Drape one pastry sheet in the prepared baking dish, letting the edges hang over the sides and fitting the pastry into the bottom. Place the brie on the pastry, spoon the garlic butter on top. Fold up the corners of the pastry so they rest on top of the brie. Cover with the second pastry sheet, tucking its corners around the cheese. (The pastry will expand to fill the dish when baked.).
  • Bake for 25-30 minutes, until golden and slightly puffy.
  • [The brie can be removed to a serving platter or served in the baking dish.].
  • Drizzle the honey over the top and serve immediately or at room temperature.

This is a great recipe to serve as an appetizer for two or three people, but I will make it for just me as a light supper.

8 ounces wedge brie cheese
1 -2 garlic clove, minced
1/2 teaspoon minced fresh rosemary or 1 teaspoon crushed dried rosemary
lemon zest
kosher salt
olive oil

Steps:

  • Preheat oven to 400 deg. F.
  • Cut off the top rind of the wedge, but not the sides. Place in a oven-proof dish.
  • Sprinkle the garlic and rosemary over the brie. Take several swipes of the lemon with a microplane or zester over the brie. You may substitute about 1/4 teaspoons of lemon pepper for the fresh lemon, but fresh is best.
  • Sprinkle with a pinch of salt and drizzle with olive oil.
  • Place in oven and bake until it turns soft and/or bubbly - 20 to 30 minutes, you may need more time.
  • Remove and serve with a crusty bread.
