AILEEN'S PUNCH

Aileen's Punch image

My sister's friend gave her this recipe years ago to use at our parents' 25th wedding anniversary party. We never had a name for it other than Aileen's Punch! This is very refreshing and so easy to put together. I recommend making an ice ring out of extra pineapple juice or apricot nectar.

GOLDIE'S APRICOT NECTAR CAKE (SALLYE)

GOLDIE'S APRICOT NECTAR CAKE (SALLYE) image

This was one of my mothero-in-law Goldie's signature cakes. I haven't made this in years, but found the recipe tucked into one of my cookbooks so thought I would give it a whirl and see if it tasted as good as my memory thinks.

Provided by sallye bates

Categories     Cakes

Time 1h15m

Number Of Ingredients 9

1 box lemon flavored cake mix
1/2 c granulated sugar
1 c apricot nectar
1/3 c cooking oil
4 large eggs
GLAZE INGREDIENTS
2 Tbsp lemon juice
1 c confectioners (powdered) sugar
1/4 c apricot nectar

Steps:

  • 1. Preheat oven to 325º Butter and flour bundt or tube pan and set aside
  • 2. With electric mixer, beat together cake mix, sugar, oil and 1 cup apricot nectar in large bowl. Continue to mix with electric mixer, adding eggs one at a time, beating well after each addition.
  • 3. Pour into prepared bundt or tube pan and spread out evenly. Bake in 325º preheated oven for 1 hour. Test cake for doneness by inserting a toothpick into the thickest part. If it comes out clean, the cake is done. Let cool for about 5 minutes in pan, then gently run thin knife or spatula around edges and turn out onto serving plate
  • 4. While cake is still warm, drizzle glaze over it. To make glaze, Whisk together confectioners sugar, lemon juice and 1/4 cup apricot nectar until well blended. Optional you can punch small holes in cake to let the glaze penetrate down into the cake, but I never do that.

  • Chill in the fridge for 3-4 hours, or serve with ice.

NON- ALCOHOLIC APRICOT SLUSH DRINK

Non- Alcoholic Apricot Slush Drink image

This non-alcoholic drink is very easy to make. In my search I have found that the apricot is full of beta carotene, the apricot is said to have good health benefits. They have a supply of vitamin C. Nutrients in apricots can help protect the heart and eyes, as well as provide the disease-fighting effects of fiber. The high beta-carotene and lycopene activity of apricots makes them important heart health foods. It is also said that Apricots contain nutrients such as Vitamin A that promote good vision. Hope you like it!

7 BEST SUBSTITUTES FOR APRICOT NECTAR - MISS VICKIE

From missvickie.com
Estimated Reading Time 8 mins
  • Canned Peaches. If you just can’t seem to find apricot nectar, go for canned peaches without giving it a second thought. Canned peaches are high in nutrients and the flavor profile is very similar to the taste of peaches.
  • Peach Nectar Or Puree. Well, if canned peaches are also out of stock, you can always buy fresh peaches and make a puree yourself. Peach puree is straightforward to make and safe for children of all ages – even toddlers love it.
  • Dried Apricots. Dried apricots deliver a high nutrient level that’s equal to fresh apricots. The only thing that’s lacking is the moisture, with dried apricots coming chewy instead of juicy.
  • Pear Puree. Pear juice and pear puree is reliable substitute for apricot nectar that won’t fail you. Buying pear juice or pear puree typically provides you with a product made from ripe pears.
  • Apple Juice. Everyone must have heard by now how an apple a day keeps the doctor away, right? Similarly, just one glass of apple juice keeps you from having to give up on your recipe, serving as a fantastic substitute for apricot nectar.
  • Mangoes. Mangos bring a flavor combination that rewards with a great balance of sweet and sour highlights. Mango nectar, mango puree, and all varieties of mango juice are excellent substitutes for apricot nectar.
  • Nectarines. Nectarines would place higher on this list given greater availability. This being said, nectarines, nectarine juice, and nectarine puree are all outstanding apricot nectar alternatives.
  • Cranberry Juice. Substituting cranberry juice for apricot nectar works wonderfully when you don’t need a thick consistency. If you do and still want to stick to antioxidant-rich cranberries, reduce the juice in a saucepan with added sugar.
  • Plums. As another sweet-sour stone fruit, plums are a reliable substitute for apricot nectar. Either buy premade plum puree which is normally found as a baking ingredient or baby food, or make your own.
  • Persimmons. Persimmons are not as readily available as other substitutes for apricot juice, but the sweet flavor profile makes them a good option if you can get your hands on any.

From smarterhomemaker.com
  • Canned Peaches. Of all the fruits out there, peaches are probably the closest in flavor familiarity to that of their apricot neighbors. Peaches, while sweet, still carry a tart subtlety, which is what we’re looking for.
  • Mangoes. These guys may pack a punch and some powerful flavor, but their base sweet and sour element allows them to seamlessly take center stage, in lieu of apricots.
  • Apples. In their regular form, these guys taste quite different than apricots; however, something magical happens when they’re reconstituted. Whether it is apple juice, applesauce, or apple puree, these transformations take on a powerful flavor that mirrors something similar to that of apricots.
  • Agave Nectar. Agave is a versatile alternative, however, carries a different level of viscosity than its apricot nectar peer. An option here is to adjust the amount of solids in your glaze, create a runnier glaze, or add a gelatinous buffer such as cornstarch or xanthan gum.
  • Sugar And Orange Juice/ Marmalade. Oranges carry the same tartness to sweetness (depending on the variety of orange) as apricots and are popularly used in substitutes with chicken dishes.
  • Sugar, Balsamic Vinegar, Soy/Tamari Sauce (GF Option) Another tasty, dynamic combination that gives you the sour from the vinegar, the sweetness from the sugar, and the rich, umami flavor from the soy sauce.
  • Duck Sauce. This is a great alternative because it was created for dressing or saturating both cooked and fresh duck. Its tangy undertone cuts through the sweetness just the right amount so that one flavor is not overpowering the other.
  • Grapefruit Juice. This juice is naturally sour, so make sure to add agave nectar or a simple syrup.
  • Bitters. These come in a variety of flavors and are bittersweet, as the name suggests. Be sure to add a sweetener along, such as an orange liquor.
  • Cranberries. These famous little antioxidant powerhouses may be known mostly in the cocktail world for their use in Cosmopolitans, but don’t stop there!
