AILEEN'S PUNCH
My sister's friend gave her this recipe years ago to use at our parents' 25th wedding anniversary party. We never had a name for it other than Aileen's Punch! This is very refreshing and so easy to put together. I recommend making an ice ring out of extra pineapple juice or apricot nectar.

GOLDIE'S APRICOT NECTAR CAKE (SALLYE)
This was one of my mothero-in-law Goldie's signature cakes. I haven't made this in years, but found the recipe tucked into one of my cookbooks so thought I would give it a whirl and see if it tasted as good as my memory thinks.

Steps:
- 1. Preheat oven to 325º Butter and flour bundt or tube pan and set aside
- 2. With electric mixer, beat together cake mix, sugar, oil and 1 cup apricot nectar in large bowl. Continue to mix with electric mixer, adding eggs one at a time, beating well after each addition.
- 3. Pour into prepared bundt or tube pan and spread out evenly. Bake in 325º preheated oven for 1 hour. Test cake for doneness by inserting a toothpick into the thickest part. If it comes out clean, the cake is done. Let cool for about 5 minutes in pan, then gently run thin knife or spatula around edges and turn out onto serving plate
- 4. While cake is still warm, drizzle glaze over it. To make glaze, Whisk together confectioners sugar, lemon juice and 1/4 cup apricot nectar until well blended. Optional you can punch small holes in cake to let the glaze penetrate down into the cake, but I never do that.
APRICOT LEMON ICED TEA
This easy homemade iced tea recipe is made with only five ingredients and tastes like summer!

- In a saucepan, bring 2 cups of water to a boil, then remove from the heat and steep the 5 tea bags for 10-12 minutes (covered). Once the tea has steeped, remove the tea bags. Set aside.
- In another saucepan, bring 1 cup of water and 1 cup of sugar to a simmer over medium heat, stirring constantly (this makes a simple syrup) until the sugar has dissolved. Allow to cool 10 minutes.
- In a large pitcher, mix together steeped tea, simple syrup, lemon juice, apricot nectar, and the remaining 2 cups of water.
- Chill in the fridge for 3-4 hours, or serve with ice.
- Enjoy!
NON- ALCOHOLIC APRICOT SLUSH DRINK
This non-alcoholic drink is very easy to make. In my search I have found that the apricot is full of beta carotene, the apricot is said to have good health benefits. They have a supply of vitamin C. Nutrients in apricots can help protect the heart and eyes, as well as provide the disease-fighting effects of fiber. The high beta-carotene and lycopene activity of apricots makes them important heart health foods. It is also said that Apricots contain nutrients such as Vitamin A that promote good vision.
