About 3 tablespoons EVOO
1/4 pound guanciale or bacon, chopped
1 small onion, finely chopped
4 cloves garlic, chopped or thinly sliced
Black pepper
1/2 cup dry white wine
1 cup chicken stock/poaching liquid from Poached Chicken, recipe follows
10 to 12 artichoke hearts, drained, from two 6-ounce pouches, one 10-ounce box of frozen and defrosted, or one 14-ounce can
Pici, bucatini or penne pasta
Salt
A fat handful of flat-leaf parsley, finely chopped
1/2 to 2/3 cup freshly grated caciocavallo or Pecorino cheese
One 4-to 5-pound chicken
2 ribs celery, coarsely chopped
1 carrot, peeled and coarsely chopped
1 onion, peeled and quartered
2 cloves garlic, crushed
1 lemon, sliced
1 large fresh bay leaf
1 teaspoon whole black peppercorns
Herb bundle of parsley, rosemary and thyme tied with a string
Salt

Steps:

  • Heat a large skillet over medium high heat and add the EVOO, 3 turns of the pan. Add the guanciale or bacon and cook until crisp. Add the onion, garlic and a little pepper and stir for 4 to 5 minutes. Add the wine and stir. Add the stock and artichokes and heat through. Cool and store for a make-ahead meal. Reheat over medium heat.
  • To serve, bring water to boil for the pasta. Salt the water and cook the pasta to al dente, reserving 1 cup of the starchy water just before draining. Add the pasta to the artichoke mixture. Sprinkle with the parsley and half the cheese and cook, tossing to combine and adding some of the starchy pasta water if necessary to loosen the sauce, 1 to 2 minutes. Serve with more cheese on top.
  • Place the chicken in a large stockpot. Add the celery, carrot, onion, garlic, lemon, bay leaf, peppercorns and the herb bundle; season with salt. Cover the chicken with water and bring to a boil; reduce the heat to a low, rolling simmer. Simmer 60 to 75 minutes, then cool the chicken in its stock. Strain the stock. Remove the chicken in large pieces from the skin and bones. Cut half of the meat into bite-size chunks. Thinly slice or pull the remaining meat.

1/4 cup all-purpose flour
8 thin chicken cutlets (about 1 1/2 pounds total)
2 tablespoons olive oil
1 cup reduced-sodium chicken broth
1 can (14 ounces) artichoke hearts packed in water, rinsed, drained, and quartered
2 tablespoons rinsed and drained capers
2 tablespoons butter
8 ounces angel-hair pasta
1/2 cup parsley leaves

Steps:

  • Set a large pot of salted water to boil. Place flour in a shallow dish, and season with salt and pepper. Dredge cutlets, shaking off excess. In a large skillet, heat 1 tablespoon oil over medium-high. Cook chicken in batches, adding remaining oil as needed, until light golden, 1 to 3 minutes per side; transfer to a dish.
  • Add broth to skillet, and bring to a boil; cook until reduced by half. Add artichokes, capers, and the chicken with any juices. Gently swirl to combine, and bring just to a boil. Remove skillet from heat. Swirl in butter, and cover to keep warm.
  • Add pasta to boiling water. Cook until al dente; drain. Serve chicken and sauce over pasta, topped with parsley.

4 ounces uncooked pasta
1 teaspoon olive oil
1 teaspoon minced garlic
3 skinless, boneless chicken breast halves - cut into strips
¼ cup chicken broth
¼ cup fresh chopped broccoli
¼ cup chopped tomatoes
¼ (14 ounce) can artichoke hearts, drained and sliced
¼ cup fresh sliced mushrooms
¼ cup chopped red bell pepper
salt and pepper to taste
4 tablespoons grated Parmesan cheese

Steps:

  • Bring a large pot of water to a boil. Cook pasta in boiling water until done. Drain, and set aside.
  • In a large saute pan, heat olive oil over medium high heat; brown the chicken and garlic in oil (about 5 minutes). Remove from the pan, and set aside.
  • Pour the chicken broth into the pan; then add the broccoli and tomato, and cook for about 5 minutes. Stir in the artichoke hearts, mushrooms, red bell pepper, cooked chicken, and pasta; cook for 3 to 5 more minutes, or until hot. Season to taste with salt and pepper.
  • Transfer to a serving bowl, and top with Parmesan cheese and parsley. Serve.

1 (6 ounce) jar marinated artichokes, coarsely chopped, marinade reserved
3 skinless, boneless chicken breasts, cut into bite-sized pieces

½ cup dry white wine
1 tablespoon cornstarch

Steps:

  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Pour artichoke marinade into a large nonstick skillet over medium heat. Add chicken; cook and stir until white, about 3 minutes. Add mushrooms; cook and stir until chicken is no longer pink in the center, 4 to 6 minutes. Stir in artichokes.

8 ounces linguine
1/2 cup all-purpose flour
2 tablespoons finely grated Parmesan, plus more for garnish
1/2 teaspoon garlic powder
Freshly ground black pepper
8 thin chicken cutlets
2 to 3 tablespoons olive oil
1 1/2 cups chicken broth
2 cloves garlic, minced
One 14-ounce can artichoke hearts packed in water, drained and quartered
2 tablespoons drained capers
1 tomato, diced
2 tablespoons unsalted butter
2 tablespoons chopped fresh parsley

Steps:

  • Add 8 cups water and 2 teaspoons salt to a large pot and bring to a boil. Add the pasta to the boiling water and cook until al dente according to the package directions. Drain and keep warm.
  • Put the flour, Parmesan, garlic powder, 1 teaspoon salt and 1/4 teaspoon pepper in a shallow dish and mix well. Coat the chicken cutlets lightly in the mixture, shaking off excess.
  • In a large skillet, heat 2 tablespoons of the oil over medium heat. Add the chicken in batches if needed and cook until golden brown and cooked through, 2 to 4 minutes per side; add another tablespoon of oil to the skillet if necessary to cook all of the cutlets. Transfer to a dish and set aside.
  • Add the broth and garlic to the same skillet and cook for 2 to 3 minutes until it comes to a boil. Gently stir in the artichokes, capers and tomatoes, bring to a light boil, lower the temperature and cook until the artichokes are heated through, 1 to 2 minutes. Stir in the butter and parsley. Season with salt and pepper.
  • Serve the chicken over the pasta and spoon on the sauce. Sprinkle with Parmesan.

2 chicken breasts
Salt (fresh cracked pepper)
2 Tbsp vegetable oil to cook chicken
12 oz jar artichoke hearts (drained and chopped)
9 oz frozen chopped spinach (thawed and squeezed)
3 garlic cloves
8 oz shredded mozzarella cheese
1 cup fresh grated Romano cheese (split in 2)
You can substitute Fresh grated Parmesan for Romano.

3 Tbsp fresh minced parsley
1/4 cup mayo
1/4 cup sour cream
1/2 cup milk

Steps:

  • Cook pasta according to the package instruction, until just about done, drain and set in a large mixing bowl.
  • Cook chicken breasts in a cooking pan, over medium heat, with some salt and pepper. Let it cool until easy to handle, chop and add to the bowl with pasta.
  • Preheat oven to 350 and lightly grease a 2-quart casserole dish.
  • Add chopped artichoke hearts and spinach to pasta and chicken. Mix.
  • Add pressed garlic, minced parsley, shredded mozzarella, 1/2 cup fresh grated Romano cheese, salt and pepper. Mix until all ingredients are Incorporated throughout.
  • In a small bowl, whisk mayo, sour cream and milk together until smooth. Mix this creamy mixture into the pasta mixture.
  • Transfer casserole mixture into the baking dish. Top off with remaining 1/2 cup of fresh grated Romano cheese.
  • Bake for 15-18 minutes.

Olive oil for pan
2 large chicken breasts, cut into cubes (skinless, boneless)
1 teaspoon Italian herbs seasoning
Salt and pepper
1 (14 ounce) jar artichoke hearts in water, quartered
3 cloves minced garlic, divided
1 (14 ounce) can crushed tomatoes
½ cup heavy cream (plus more to taste)
Granulated sugar, a few pinches
2 tablespoons fresh basil, chopped (plus more for garnish)
1 cup fresh spinach leaves, packed

Steps:

  • Cook pasta according to package directions. Drain and set aside.
  • Season the chicken with the Italian seasoning, 1 teaspoon salt, and ¼ teaspoon ground black pepper.
  • In a large skillet, heat about 2 tablespoons of olive oil over medium-high heat. Add the chicken and cook until golden brown on the outside and fully cooked inside. 1 lb box (454g) of penne or other pasta (cooked until al dente, then drained and tossed with 1 tablespoon butter.)
2 tablespoons olive or vegetable oil
1 pound chicken breasts ((454g))
Salt and pepper to taste
1 small onion diced
1 red bell pepper diced
4 cloves garlic finely minced
¾ cup chicken broth ((6oz, 170g))
1 ½ cup cream or half and half ((12oz, 340g))
¾ cup finely grated parmesan cheese ((3oz, 85g))
1 batch Easy Marinated Artichoke Hearts drained and chopped (*see note)
1 cup chopped fresh parsley ((1oz, 28g))
1 tablespoon lemon juice or to taste
Salt and pepper to taste

Steps:

  • For quicker, more even cooking, slightly flatten breasts with a kitchen mallet. If they are very thick, slice them in half horizontally before flattening. Season with salt and pepper.
  • Heat a skillet over high heat. When pan is hot, add 1 tablespoon oil.
  • When oil is hot, put chicken breasts in pan and cook until golden brown on both sides and cooked through. Remove chicken from pan and cut into slices.
  • Add remaining tablespoon oil to pan. Add onions and cook until softened.
  • Add red bell pepper and cook until almost softened.
  • Add the garlic. Stir, and cook for about 1 minute.
  • Deglaze pan with broth, scraping bottom to release any bits sticking to the bottom of the pan.
  • Add cream and bring to a simmer. Allow to simmer for about 2 minutes. Turn off heat.
  • Slowly add parmesan while whisking and whisk until melted and incorporated into sauce.
  • Gently stir in chopped artichoke hearts and parsley.
  • Add lemon juice to taste. You may not need the whole tablespoon if the artichoke hearts are lemony enough.
  • Salt and pepper to taste
  • Toss sauce with sliced chicken and hot buttered pasta. Serve.

500 g dry pasta
1 leek, white part only
2 1/2 tablespoons oil
2 cloves garlic, crushed
600 g smoked chicken (I have used turkey or ham too)
150 ml chicken stock
4 whole artichokes, quartered (I use the ones canned in brine and rinse them)
2 ripe tomatoes
1/2 cup toasted pine nuts (, I cook them in a dry pan over a low heat shaking them until they're golden)
salt and pepper
1 dash Tabasco sauce

Steps:

  • Cook the pasta following the directions, drain and keep warm.
  • Wash the leek well and slice thinly.
  • Heat the oil in a large pan, add the leek and garlic and cook over a medium heat stirring occasionally for about 10 minutes.
  • Add the chicken, stock, artichokes and tomatoes and cook uncovered for about 5 minutes or until the chicken is heated through thoroughly.
  • Stir in the pine nuts and season to taste.
  • Toss through the pasta to combine and serve.

I've been making this recipe for years. I don't even remember where I got it from but it's become a favorite of family and friends. The preparation takes a bit of time because there is a lot of chopping, but once thats done it goes together quite quickly. The recipe calls for the packaged refrigerated fresh fettuccine, but I've substituted dry pasta on occasion and it is still delicious. All it needs to make it a deliciious meal is a side salad and garlic bread.

1/4 teaspoon salt

4 tablespoons olive oil
6 -8 garlic cloves, sliced thin
1 (6 ounce) can artichoke hearts, drained (frozen can be substituted)
1 (16 ounce) can diced tomatoes
salt
pepper
1/2 cup parmesan cheese
1 (16 ounce) box rotelle pasta (springs)

Steps:

  • Prepare chicken breasts by trimming any extra fat Pound out gently between two sheets of plastic wrap to flatten and thin breast to a 1/4".
  • Cut into 1" cubes.
  • Toss with Salt& Pepper; set aside.
  • Drain artichoke hearts and slice them into 1/8's.
  • Slice garlic thin.
  • In a deep saucepan over medium-high heat, pour in olive oil and add chicken.
  • Brown cubed chicken till lightly golden.
  • Lower heat; add garlic and cook with chicken for 1 minute or just until slightly tan.
  • Do not brown the garlic.
  • Add the artichokes and diced tomatoes stirring to lift all the brown chicken flavor bits on the bottom of the pan.

  • Cook Pasta and drain.

1 1/2 cups uncooked Barilla Plus Penne
8 oz boneless skinless chicken breast (sliced)
1 tablespoon olive oil
8 oz frozen artichoke hearts (thawed, drained and chopped)
1/4 teaspoon course ground pepper
1/4 teaspoon garlic salt
1/4 teaspoon dried thyme
1 tablespoon dried shallots
1/4 cup kale pesto
1/3 cup pasta water
1/4 cup grated parmesan cheese (plus additional for topping)
2 tablespoons Greek yogurt
1/2 cup part-skim ricotta cheese

Steps:

  • Cook the pasta according to the package directions, omitting salt.
  • While the pasta is cooking, heat the olive oil in a sauté pan. Add chicken and sauté until browned, breaking into bite-sized pieces as it cooks. Add the artichoke hearts, spices, and pepper; sauté 2-3 minutes until artichoke hearts are warmed. Keep warm over low heat.
  • Drain the pasta, reserving 1/2 cup of water. Add pasta to chicken and artichoke mixture in the sauté pan; increase heat to medium-low and mix together. Add 1/3 cup pasta water, 1/4 cup kale pesto, ricotta, parmesan & yogurt. Stir until everything is incorporated.
  • If necessary, add a little additional pasta water for a smooth consistency. Season with salt & pepper as desired. Top with grated parmesan cheese and serve immediately.

Steps:

  • Cook pasta according to package directions. Drain and set aside.
  • Meanwhile, heat the oil in a large deep skillet over medium-high heat. Add the chicken and cook for 3-5 minutes, until golden all over. Add artichokes, tomatoes, cream, and pesto. Bring to a simmer and stir frequently for 3 minutes, or until the chicken is cooked through.

1 pound dried fettuccine (see Cook's Note)
Two 14-ounce cans artichoke hearts, rinsed and drained
2 tablespoons extra-virgin olive oil, plus more as needed
1 cup chopped roasted red peppers
1/2 cup kalamata olives, halved
3 tablespoons capers
1/2 teaspoon crushed red pepper flakes
4 cloves garlic, thinly sliced
1/4 cup chopped fresh basil
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions for al dente.
  • Meanwhile, blend the drained artichoke hearts, 1/4 cup water, 1/4 teaspoon salt and 1/4 teaspoon pepper in a high-powered blender until completely smooth. Set aside.
  • Heat the olive oil in a large high-sided skillet or braiser over medium heat. Add the roasted red peppers, olives, capers and red pepper flakes and sauté until warmed through, about 2 minutes. Stir in the garlic and a drizzle of oil if needed. Continue to cook, stirring frequently, until the garlic is slightly softened but not brown, about 1 minute. Stir in the blended artichoke hearts, then reduce the heat to low.
  • When the pasta is ready, reserve 1 cup of the pasta water, then drain the pasta and add it directly to the skillet with the artichoke sauce. Add about 1/2 cup of the reserved pasta water and toss together until the sauce and water become a cohesive creamy mixture, add more pasta water as needed. Turn off the heat. Add the basil and parsley, toss to combine and serve.

1 1/2 cups quartered artichoke hearts (canned or jarred - not frozen)
2/3 cup dry white wine
1/3 cup water
1 teaspoon freshly squeezed lemon juice
1/2 cup lightly packed thinly sliced basil leaves
1 teaspoon lemon zest

Steps:

  • Heat oil in a large frying pan over medium-high heat. When it shimmers, add onion and garlic, season with salt and freshly ground black pepper, and cook until golden, about 4 minutes. Add chicken and cook, stirring rarely, until well browned on all sides, about 5 minutes. Add artichoke hearts and cook until slightly broken down, about 3 minutes.
  • Add wine, water, and juice and scrape the bottom of the pan to incorporate any browned bits. Cook until alcohol smell is cooked off and sauce is slightly reduced, about 5 minutes. Remove from heat, stir in basil and lemon, and serve.
