- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken breasts in a 9x13 inch glass baking dish with a cover. Add oil, salt, and Cajun seasoning. Mix with your hands until chicken pieces are evenly coated. If using fresh rosemary, chop and sprinkle over chicken. If using dried rosemary, crush with hands and sprinkle over chicken. Using your hands again, mix together coating chicken evenly. Lay diced onions on top of chicken. Cover dish and bake in the preheated oven until onions are caramelized and the chicken is brown and cooked through (juices run clear), about 25 to 35 minutes.

ROSEMARY GRILLED CHICKEN THIGHS AND WILD MUSHROOM SAUCE

- Heat a grill pan over high heat. Drizzle chicken thighs with oil, season with salt, pepper and rosemary. Grill chicken 5 minutes on each side and remove from heat to rest for 5 minutes.
- Place stock in a small bowl and cover. Heat in microwave on high for 2 minutes. Remove stock from microwave with oven mitt. Add dried porcini to the dish and replace the cover. Steep porcinis in stock 5 to 10 minutes to reconstitute mushrooms. This may also be done on the stovetop. Simmer broth, and mushrooms for 10 minutes over low heat.
- In a medium skillet, add 2 tablespoons olive oil, saute pancetta, crushed garlic and chopped shallot over medium heat for 3 minutes, to crisp pancetta at edges. Add sliced portobello mushrooms to the pan and season with salt and pepper. Saute mushrooms 10 minutes, or until dark and tender. Add flour and cook 1 minute. Add red wine to the pan and reduce by 1/2, about 1 minute. Add reserved stock and porcini mushrooms to the pan and simmer together 1 to 2 minutes longer to combine.
- Slice chicken thighs and fan out on a plate. Ladle thick mushroom sauce down over sliced chicken and serve.

- Heat a heavy 12-inch skillet over medium-high heat.
- Melt butter, then add the mushrooms, garlic, rosemary, and salt to the pan.
- Cook until mushrooms are browned, about 5-6 minutes.
- Pour in the chicken stock and flour.
- Whisk well and cook about 2 more minutes, or until sauce thickens slightly.
- Transfer mushrooms and sauce into a bowl and set aside.

PAN-ROASTED CHICKEN WITH MUSHROOMS AND ROSEMARY

- Preheat the oven to 350 degrees F.
- Season the chicken on both sides with a generous amount of salt and pepper. Place a cast-iron or regular ovenproof skillet on the stove over medium heat. Drizzle the pan with the oil and lay the chicken in the hot fat, skin-side down. Cook for about 5 minutes until the skin begins to set and crisp. Throw in the mushrooms, shallots, and rosemary. Stick the whole thing in the hot oven and roast for 15 minutes until the chicken is cooked, and the mushrooms and shallots are soft and roasted.
- The last thing to make is a quick sauce using the flavors left in the bottom of the skillet. Take all the stuff out of the pan and arrange on a dinner plate to keep warm while preparing the pan sauce. Pour out all but 1 tablespoon of the rendered chicken fat and return the skillet to the stovetop. Stir in the water and lemon juice and cook over medium heat, scraping up the flavors with a wooden spoon. Cook the liquid down to a syrup, about 5 minutes. - Fry chicken in teflon coated skillet until done, I used my electric skillet on 350.
- Take out of skillet, put in dish, and set aside.
- Put onions, mushrooms, garlic, rosemary, salt and pepper in the skillet, and cook until onions are transparent.
- When onions are done, add Marsala, chicken broth, and sprinkle flour over the top.
- Mix flour in well, and let bubble for 5 mins.
- Add water.
- Sauce should be a little thick.
- If it is too thick, add a little more water.
- If too thin, add a little more flour at a time, and mix in well.
- The sauce should be creamy, but not too thick.
- Season with salt and pepper, to taste.
- Cook pasta or noodles, until al dente.
- Drain, and put a serving in each plate.
- Top with sauce, and chicken pieces.
- Enjoy!

- In a large skillet over medium heat, cook chicken in 1 tablespoon butter 4-5 minutes on each side until golden brown and cooked through. Remove to a plate and keep warm.
- Add chicken broth to pan and stir to loosen any browned bits from the bottom of the pan. Add the cream and bring the sauce to a simmer. Continue to cook and stir until slightly thickened, 3-5 minutes.

CHICKEN WITH CREAMY ROSEMARY SAUCE
An easy creamy chicken recipe with a rosemary sauce that is to die for!

- If you have two large chicken breasts, slice each one in in half horizontally in order to make four cutlets total.
- In a large skillet over medium high heat, add the olive oil. Let the olive oil heat up, then add the chicken to the pan.
- Cook the chicken for four minutes without moving it around in the pan. Then flip each piece and cook it for another four minutes. Set aside on a clean plate.
- In the same pan, add all remaining ingredients (butter, cream, broth, garlic, black pepper, and rosemary) and stir to combine, making sure to break up any bits and pieces left in the pan from cooking the chicken to combine those into the sauce as well.
- Stirring occasionally, let the sauce simmer and reduce for about 5 minutes.
- Add the chicken back to the pan and ladle the sauce over it. Allow it to warm in the simmering sauce for 1 min.
- Remove the pan with the chicken and creamy rosemary sauce from the heat and serve over pasta, rice, zoodles, or cauliflower rice! Optional: Top with a few sprigs of fresh rosemary for garnish.

- Cut chicken breasts into 1 or 2 inch squares and place in pan.

- Get everything ready before you even think about starting, all ingredients out and pans etc ready to go.
- * kettle boiled, * blender ready, * medium lidded pan on heat, * griddle pan on heat, * frying pan on heat
- Put the dried mushrooms in the blender with 150ml boiling water, the tomatoes, tomato puree, chilli, basil and crushed garlic and whizz until smooth.
- Pour the tomato sauce into a medium pan and boil for 8 minutes, stirring occasionally.
- Cut the polenta into 8 slices, rub with salt, pepper and 1 tsp oil and place on the griddle pan, slipping them over when charred and placing trimmed green beans on top of the polenta to steam.
- On a large sheet of greaseproof paper, toss the chicken with salt, pepper, rosemary leaves, fennel seeds and finely grated parmesan. Fold the paper over the top, then bash and flatten the chicken to about 1.5cm thick with a tolling pin.
- Put the chicken into the frying pan with 1tbsp oil, turning after 3 or 4 minutes, until golden and cooked through. Toss the bacon and mushrooms into the pan when you turn the chicken.
- Season the sauce to taste and pour onto a nice serving platter and top with the polenta slices and green beans.
- Transfer the chicken, bacon and mushrooms to the board while you quickly wilt the spinach in the frying pan.
- Season the spinach to taste and add to the platter. Slice the chicken and arrange on top of the spinach with the bacon and mushrooms then drizzle everything with balsamic vinegar.

- When the pan is hot place the chops into the pan laying them away from you so that any splatters will most likely jump away from you. If you do not hear a sizzle when the meat touches the pan then it is not hot enough so wait and try again.
- After both sides of the pork chops have been browned transfer them to a plate and add the mushrooms. You may need to add more oil or ghee to the pan to cook the mushrooms. Initially the mushrooms will absorb the oil from the pan and when they are just about done you will notice that most of the oil will reappear in the pan. I prefer my mushrooms pretty dark but I think the fond will ultimately determine how brown you can get them. About a minute or so before the mushrooms are done add 2 cloves of finely chopped garlic to the pan and saute for the remaining minute.
- Add 1/2 cup of white wine to the mushrooms and garlic and allow it to cook until nearly reduced by half. Use a wine that you enjoy drinking. For this recipe I used a Riesling.
- In a measuring cup dissolve 2 tsp of arrowroot in 2 cups of cold broth, either chicken or mushroom, and add it to the pan. It is fine if the broth is room temperature, just not hot, because the arrowroot won't dissolve properly in hot liquid.
