BOURBON-GLAZED HAM
This is a delicious combo of about five recipes I found while researching for my first Thanksgiving ham. The empty baking pan afterwards was my best compliment!

Steps:
- Score the surface of the ham, making diamond shapes about 1/2-inch deep. Place the ham in a large, resealable bag. Add the bourbon, brown sugar, crushed pineapple, honey, and garlic to the bag; refrigerate at least 8 hours, turning the bag over several times while marinating.
- Preheat oven to 350 degrees F (175 degrees C).
- Transfer the ham and marinade to a large baking dish; pour the water into the dish. Attach the pineapple rings around the surface of the ham with toothpicks.
- Bake in preheated oven until the internal temperature reaches 165 degrees F (95 degrees C), basting occasionally with the sauce in the pan, 90 to 105 minutes.

BOURBON HONEY GLAZED HAM

- Preheat oven to 350 degrees F.
- In a medium saucepan, heat bourbon, honey, molasses, and marmalade over low heat for 15 minutes or until reduced by half, stirring occasionally. (When measuring honey and molasses, spray measuring cup with nonstick cooking spray to keep measurements accurate.) Set aside.
- With a sharp knife, cut a diamond pattern on the fatty part of the ham. Stud whole cloves in each diamond, at points where lines cross. Spread half of the bourbon glaze over the ham and roast for 30 minutes, uncovered. Baste occasionally with remaining glaze and continue to roast for another 15 minutes. Let ham stand for 20 minutes before slicing.
SUNNY'S APPLE-BOURBON HAM GLAZE

- Preheat the oven to 325 degrees F.
- To make the glaze, add the apple cider, brown sugar, bourbon, pumpkin pie spice and cloves to a large pot. Turn the heat to medium high and cook, while stirring, until the liquid reduces and becomes slightly thickened like a glaze, 10 to 15 minutes. Add the butter and stir to melt. Taste and season with salt and pepper.
- Lay out plenty of aluminum foil to wrap the ham in and create a bed for it. Place the ham in the center of the aluminum foil and pull the sides up around it, leaving the top exposed. Pour over half the glaze, getting it into the spirals. Finish tightly wrapping the ham and place it on a rack in a roasting pan. Fill the pan with water, but do not let it touch the bottom of the ham.
- Cook until the internal temperature reaches about 140 degrees F (gauge 15 to 20 minutes per pound). Remember, it is already cooked, so you just need to bring it to temperature without drying it out.
- Remove the ham and raise the oven temperature to 400 degrees F. Pull back the aluminum foil (watch out--it's steamy and hot!!). With a brush and the remaining glaze, slather the top of the ham, allowing the glaze to get into any creases of the spiral you see. Place back in the oven uncovered but still sitting in the foil and roasting pan, an additional 10 to 15 minutes. Remove and rest 10 minutes before serving.
PINEAPPLE AND ROSEMARY GLAZED HAM
Perfect for Thanksgiving or Christmas. It's also great for company dinners in the cooler months. Even with the sugar and pineapple it's not overly sweet.

- Preheat oven to 325°F Place ham in a shallow roasting pan. Score ham by making diagonal cuts, 1/4-inch deep, in a diamond pattern. Insert an oven-going meat thermometer into center of ham; the thermometer should not touch the bone, if present. Roast for 1-3/4 hours if using bone-in ham or 1 hour if using boneless ham.
- Meanwhile, in a bowl combine 3 tablespoons of the brown sugar, the 3 tablespoons mustard, and rosemary. Brush mixture over ham. Roast for 15 minutes more. Meanwhile, for glaze, in a 2-quart saucepan combine the remaining brown sugar, the pineapple juice, and 1/4 cup mustard. Bring to boiling over medium heat, stirring frequently. Remove 1/2 cup glaze to brush over ham. Set aside.
- Bake ham 30 minutes more or until thermometer registers 140 degree F, generously brushing with the 1/2 cup glaze several times during baking.
- Meanwhile, add pineapple to remaining glaze in saucepan. Bring to boiling; reduce heat. Simmer, uncovered, for 20 minutes. Transfer ham to serving platter. Slice ham and serve with pineapple sauce. Makes 16 to 24 servings.
- Grilled Pineapple Slices: Cut two peeled and cored pineapples into 1/2-inch-thick slices. Brush each slice on both sides with a little cooking oil; sprinkle lightly with some snipped fresh rosemary. Heat an indoor grill or grill pan. Grill pineapple slices just until they start to brown, 1 to 2 minutes per side, turning once.

ROSEMARY AND MARMALADE GLAZED HAM

- Using a sharp knife, score the ham in a criss-cross pattern, making sure to cut through any fat to barely reach the flesh. (Removal of the skin is optional, I normally leave it).
- Insert a clove at each intersection of your criss-cross pattern.
- Remove the leaves from your rosemary stems and coarsely chop; combine with the marmalade in a small saucepan and warm over low heat.
- Roast ham at 400 degrees F; for 20 minutes; coat ham with half the marmalade mixture, using a brush to spread evenly.
- Roast another 20 minutes; sprea remaining glaze on ham and roast another 20 minutes.
- Cook until browned and glazed to your liking, basting with pan juices (a total of 1 hour and 20 minutes does it for me).

BOURBON AND MARMALADE GLAZED HAM
Wonderful, from Houston Jr. League Stop and Smell the Rosemary. Cooking time will vary, so time given is approximate. You can modify cooking heat/time and use a spiral-sliced ham - save the glaze packet that comes with it for another time.

- Preheat oven to 425°F.
- Line a large roasting pan with foil.
- If necessary, trim the rind and fat from the ham, leaving only 1/4" layer of fat.
- Place the ham in the roasting pan.
- Score the ham in a diamond pattern, with a sharp knife.
- Stick one whole clove into the center of each diamond.
- Combine water, sherry and ginger in a small bowl, then pour over ham.
- Bake 5 minutes per pound.
- Combine the marmalade, bourbon and mustard in a small saucepan and cook over medium heat until warm, about 5 minutes.
- Stir occasionally.
- Increase oven temp to 450°F.
- Brush the glaze over the cooked ham, then sprinkle with the brown sugar.
- Bake until ham reaches a rich brown color, about 20 minutes.
- Spoon off the fat from the pan juices.
- Transfer the pan juices to a saucepan, and boil until thick, about 10 minutes or so.
- Serve the ham with the pan juices.
