- Gather the ingredients. Preheat the oven to 425 F.
- Gently scrub your potatoes, then coarsely chop them into chunks about 1-inch big.
- In a large bowl, gently toss the chopped potatoes with the olive oil until well coated, then transfer to a baking tray and arrange in a single layer.
- You can drizzle a little bit more olive oil on them if you'd like, then sprinkle with sea salt or kosher salt and freshly ground black pepper.

- Preheat oven to 400 degrees F. Spray a rimmed 18 by 13-inch baking sheet with non-stick cooking spray. Lightly dust with flour and shake out excess.
- In a large mixing bowl, toss potatoes with olive oil. Add parmesan, and rosemary (if using) and season with salt and pepper (then more to taste if desired), toss to evenly distribute.
- Pour mixture onto prepared baking sheet and spread into an even layer (add parmesan clumps that may have fallen off potatoes back on tops of potatoes).
- Bake in preheated oven until golden brown on bottom, about 30 minutes. Remove from oven, add garlic and toss (they may stick slightly so use a thin melt a spatula to lift from pan and rotate).

- Wash, then slice your beautiful fresh Red Potato into 1/8 inch slices.
- Put Olive Oil into a 12-Inch Skillet, and heat over med/high heat.
- Add potato slices to skillet. Cover and reduce heat to med/low. Sautee potatoes for about 10 minutes, checking constantly to make sure they don't get too brown.
- After about 10 minutes, when potatoes are brown on bottom layer, turn the whole layer.
- Brown the underside just a couple of minutes till slightly brown. Add herbs and water.
- Cover and cook till potatoes are tender.
- Sometimes I end up with crispy parts, and sometimes I don't, but they are great either way.

ROSEMARY ONION SKILLET POTATOES

- Melt the butter in a large skillet over medium high heat. Add the onions, toss to coat and then cook for about 5 minutes, stirring occasionally, until they are soft and browned. Add the potatoes to the skillet, drizzle lightly with oil and then sprinkle with rosemary, salt and pepper. Stir to combine and then spread flat across the skillet.
- Cover with lid and reduce heat to medium. Let the potatoes cook for 10 minutes. Stir and cover with lid again. Cook 5 more minutes. Remove lid, stir and cook uncovered, for about 5 more minutes, stirring occasionally until the potatoes are browned. The potatoes should be soft and well browned. Serve as is, or increase the heat to medium high and continue cooking in an open skillet, stirring every 2-3 minutes, until slightly crispy. Serve hot or let cool and store in the refrigerator until ready to serve. Potatoes can be reheated in a hot skillet for a few minutes just before serving. Enjoy!

These rosemary garlic crispy roasted potatoes are the perfect addition to a Sunday roast or Christmas dinner. Using just 5 ingredients and a simple recipe, you'll end up with perfectly crispy oven potatoes every single time!

- Begin by peeling and chopping the potatoes. If using a potato variety with thin skin, you can simply scrub the potatoes then leave them on.
- Next, fill a large pot with water and bring to boil (to add extra flavor, you can salt the water). Then add the chopped potatoes (carefully) and boil for 7 minutes.
- Drain the potatoes and shake the basket/sieve well as this will help the potatoes to crisp up more in the pan.
- Optionally, dry the potatoes well before shaking the potatoes and this will help them crisp up better and avoid them sticking to the bottom of the pan.
- Chop the rosemary and garlic. I kept my garlic whole aside from chopping the top. However, you can optionally crush some into the oil, for extra flavor.
- Preheat oven to 160C/320F. Heat up the olive oil in a large pan. Then add the boiled potatoes, rosemary, and garlic. Lightly fry for a few minutes, until just beginning to crisp up - 2-3 minutes should be more than enough.
- If your pan is oven-safe then you can leave them in the pan, optionally tossing with a little extra oil. Alternatively, transfer the spuds in a single layer to a baking sheet pan and then place in the oven for 45-55 minutes, until crispy and golden brown.
- Turn the potatoes once, halfway through cooking. Once ready, serve immediately.

- Place in a plastic bag, add garlic and spices, and shake to coat.
- Drizzle with olive oil, and shake again.
- Lightly oil a baking sheet, and transfer potatoes to sheet.
- Drizzle oil and herbs remaining in bag over potatoes, keeping as much as possible on the potatoes.

- Remove the racks of lamb from their packaging and pat the meat dry with paper towels. Use a sharp fileting knife to trim off any excess fat.
