ROASTED POTATOES (WITH PARMESAN, GARLIC, AND HERBS)

Roasted Potatoes (with Parmesan, Garlic, and Herbs) image

These are my favorite roasted potatoes! It's a recipe I've made time and time. You get a crisp cheesy exterior and a melt-in-your-mouth fluffy interior. And I can't get enough of this flavor!

Provided by Jaclyn

Categories     Side Dish

Time 1h

Number Of Ingredients 7

2 1/2 lbs red potatoes, (cut into 1-inch chunks)
3 Tbsp olive oil
1/2 cup grated parmesan cheese*
1 Tbsp chopped fresh rosemary ((optional))
1/2 tsp salt and pepper, (or more to taste)
3 cloves garlic, (minced (1 Tbsp))
2 Tbsp chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees F. Spray a rimmed 18 by 13-inch baking sheet with non-stick cooking spray. Lightly dust with flour and shake out excess.
  • In a large mixing bowl, toss potatoes with olive oil. Add parmesan, and rosemary (if using) and season with salt and pepper (then more to taste if desired), toss to evenly distribute.
  • Pour mixture onto prepared baking sheet and spread into an even layer (add parmesan clumps that may have fallen off potatoes back on tops of potatoes).
  • Bake in preheated oven until golden brown on bottom, about 30 minutes. Remove from oven, add garlic and toss (they may stick slightly so use a thin melt a spatula to lift from pan and rotate).
  • Return to oven and bake until tender and lightly browned, about 15 minutes longer. Sprinkle with parsley and serve immediately.

ROSEMARY ONION SKILLET POTATOES

Rosemary Onion Skillet Potatoes image

Provided by Mary Younkin

Number Of Ingredients 7

1 tablespoon butter
1 large sweet onion (cut into 1/2" pieces, about 1 cup's worth)
3 medium russet potatoes (cut into 1/2" pieces, about 4 cup's worth)
1 tablespoon olive oil
1 tablespoon minced fresh rosemary
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Melt the butter in a large skillet over medium high heat. Add the onions, toss to coat and then cook for about 5 minutes, stirring occasionally, until they are soft and browned. Add the potatoes to the skillet, drizzle lightly with oil and then sprinkle with rosemary, salt and pepper. Stir to combine and then spread flat across the skillet.
  • Cover with lid and reduce heat to medium. Let the potatoes cook for 10 minutes. Stir and cover with lid again. Cook 5 more minutes. Remove lid, stir and cook uncovered, for about 5 more minutes, stirring occasionally until the potatoes are browned. The potatoes should be soft and well browned. Serve as is, or increase the heat to medium high and continue cooking in an open skillet, stirring every 2-3 minutes, until slightly crispy. Serve hot or let cool and store in the refrigerator until ready to serve. Potatoes can be reheated in a hot skillet for a few minutes just before serving. Enjoy!

GARLIC ROSEMARY CRISPY ROASTED POTATOES

Garlic Rosemary Crispy Roasted Potatoes image

These rosemary garlic crispy roasted potatoes are the perfect addition to a Sunday roast or Christmas dinner. Using just 5 ingredients and a simple recipe, you'll end up with perfectly crispy oven potatoes every single time!

Provided by Samira

Categories     Appetizer     Side

Time 1h7m

Number Of Ingredients 5

2.2 pound potatoes (waxy potatoes are best)
few sprigs rosemary
garlic
3 Tbsp olive oil
1 tsp salt

Steps:

  • Begin by peeling and chopping the potatoes. If using a potato variety with thin skin, you can simply scrub the potatoes then leave them on.
  • Next, fill a large pot with water and bring to boil (to add extra flavor, you can salt the water). Then add the chopped potatoes (carefully) and boil for 7 minutes.
  • Drain the potatoes and shake the basket/sieve well as this will help the potatoes to crisp up more in the pan.
  • Optionally, dry the potatoes well before shaking the potatoes and this will help them crisp up better and avoid them sticking to the bottom of the pan.
  • Chop the rosemary and garlic. I kept my garlic whole aside from chopping the top. However, you can optionally crush some into the oil, for extra flavor.
  • Preheat oven to 160C/320F. Heat up the olive oil in a large pan. Then add the boiled potatoes, rosemary, and garlic. Lightly fry for a few minutes, until just beginning to crisp up - 2-3 minutes should be more than enough.
  • If your pan is oven-safe then you can leave them in the pan, optionally tossing with a little extra oil. Alternatively, transfer the spuds in a single layer to a baking sheet pan and then place in the oven for 45-55 minutes, until crispy and golden brown.
  • Turn the potatoes once, halfway through cooking. Once ready, serve immediately.

  • Watch my YouTube video recipe for step-by-step instructions, in the post above! Prepare the garlic and herb spread for the lamb first. Place the garlic, rosemary, thyme, mustard, olive oil, salt and pepper into a food processor and pulse everything together for about 1 minute. If the paste is too thick, add more olive oil. Don’t have a food processor? Finely mince the rosemary, thyme and garlic, the combine with the rest of the spread ingredients.
  • Remove the racks of lamb from their packaging and pat the meat dry with paper towels. Use a sharp fileting knife to trim off any excess fat. Place the lamb onto a baking sheet lined with parchment paper. Using a spatula or your hands, apply the prepared garlic spread all over the lamb, especially on the top side. Allow the lamb to rest for at least 1 hour at room temperature. If preparing ahead of time, keep the lamb stored in the fridge, then remove 1 hour prior to roasting.
  • Start preheating the oven to 450F about 30 minutes before roasting. Roast the lamb with the fatty side up first for 10 minutes, then turn and roast on the other side for 10 minutes. Turn one last time and continue roasting until the internal temperature reaches 125F (medium/rare), 140 (medium), or 150F (well). The timing will depend on the thickness of the rack, anywhere between 5 to 20 minutes. Remove the lamb from the oven and allow the meat to rest for at least 5 to 10 minutes prior to cutting and serving.
  • If the garlic and herb spread stick to the parchment paper when you turn the lamb over the second time, use a spatula to spread it back onto the lamb.
