- Preheat the oven to 425 degrees F (220 degrees C). Line a large rimmed baking sheet with aluminum foil.
- Whisk olive oil, juice of 1 lemon, vinegar, tarragon, oregano, paprika, salt, and pepper together in a large bowl. Add chicken thighs, onion, baby bell peppers, and potatoes. Stir until everything is evenly coated.
- Transfer vegetable-chicken mixture to the prepared baking sheet and spread in an even layer. Scatter lemon slices over the vegetables, making sure to leave the chicken uncovered so that the skin will brown.
- Bake in preheated oven for about 40 minutes. Remove from oven and top with feta, parsley, and olives.

- Preheat oven to 450°F. Mix all of the spices and salt in small bowl. Toss chicken, tomatoes, olives and oil in large bowl. Add seasoning mixture; toss to coat well.
- Arrange chicken, tomatoes and olives in single layer on foil-lined large shallow baking pan.
- Roast 20 minutes or until chicken is cooked through. Sprinkle with feta cheese before serving.

- Pat the chicken breasts dry. On each side of the chicken breasts make three slits through.
- Spread the garlic on both sides; insert some garlic into the slits you made. Season the chicken breasts on both sides with salt, pepper and 1/2 of the dried oregano.
- In a large cast iron skillet, heat 2 tbsp of olive oil on medium-high. Brown the chicken on both sides. Add the white wine and let reduce by 1/2 then add the lemon juice and chicken broth. Sprinkle the remaining oregano on top. Reduce the heat to medium. Cover with a lid or tightly with foil. Cook for 10-15 mins turning the chicken over once (chicken's internal temperature should reach 165 degrees F.)
- Uncover and top with the chopped onions, tomatoes and olives. Cover again and cook for only 3 minutes. Finally add the parsley and feta cheese. Serve with a light pasta, rice or couscous. Enjoy

PAN ROASTED MEDITERRANEAN CHICKEN WITH BACON & VINE TOMATOES
This is another possibly for ZWT3. It is not my recipe and I don't know who gave it to me but I made this quite awhile ago and will keep this on hand. It's is delish and was easy for me to make. I used the "I can't believe it's not butter" Mediterrean style margarine for (2nd ingred) listed and I used bacon instead of pancetta and served it with a tossed green salad.

Steps:
- Preheat the oven to 350 degrees.
- Toss the chicken breasts in 1/4 cup olive oil to coat well.
- Loosen the skin carefully from the breast, and stuff 1 tablespoon of Olive Grove rub under each breast.
- Roll the white meat over any excess rub.
- Place an oven-proof frying pan over high heat and add remaining 1/4 cup of olive oil and the diced pancetta or bacon.
- Fry until crisp and browned, then put to one side on kitchen towel to drain the oil.
- Return the pan to a high heat and add the butter. When the butter begins to brown, add the breasts skin-side down.
- When nicely golden, turn and brown the other side. This will take approximately one minute per side.
- Remove from heat.
- Deglaze the pan with the white wine and add back the pancetta or bacon.
- Arrange the tomatoes around the chicken breasts. Sprinkle sugar over the tomatoes and toss gently to coat in pan juices. Season with salt and pepper and bake in the oven for around 10 minutes or until chicken is cooked through.

- Heat oil in a skillet over medium-high heat.
- Season the chicken with salt and pepper, then brown on both sides (about 3-4 minutes on each side) remove to a large platter, cover with foil to keep warm (I put my plate in a 200 degree oven to stay warm).
- To the same skillet, add in the mushrooms and saute until all of the liquid is absorbed (about 6-7 minutes).
- Add in onions, garlic and dried chili flakes (if using) to the mushrooms and saute for about 3-4 minutes.
- Add in the chicken broth; simmer for about 6 minutes or until most of the liquid is absorbed.
- Add in the Kalamata olives, plum tomatoes and capers, season with salt and pepper; bring to a boil, then reduce heat and simmer for about 10 minutes or until the liquid is reduced by half.
- Add in butter and stir until melted.
- Mix in the small teardrop tomatoes; simmer for about 5 minutes (you can simmer a bit longer).
- Season again with salt and pepper.
- Spoon the mixture over the chicken.
- Sprinkle with fresh chopped parsley.

- Preheat the oven to 350 degrees.
- Heat a large ovenproof Dutch oven over medium high heat. Cut the bacon slices into small pieces and fry until crisp, stirring occasionally. Remove from the pan with a slotted spoon and set aside, leaving the flavourful bacon grease in the pan. Turn off the pan until you are ready to fry the chicken.
- Pour the flour onto a plate or wide bowl, mix in salt, pepper, and herbes de Provence. Remove the fillet from the breast pieces, and cut the breast itself in half. Coat the chicken with flour and spices. Turn back on the pan, and fry the chicken for a few brief minutes on each side, just until lightly browned. Remove the chicken from the pan and set aside.
- Chop the onion. Add olive oil to pan, and cook chopped onions for for 5-10 minutes, until browned and translucent. Add the wine slowly, stirring to get all the browned bits from the bottom of the pan. THey're the best part of the flavour! Add the chicken stock and let everything cook until it reduces slightly, about 5-10 minutes.
- Add the chicken pieces, and bacon back into the pan and bake in the oven for 40 minutes, turning chicken pieces half way through cooking.
- Remove from oven, and serve over rice, or with mashed potatoes.
