Parmesan crusted chicken is easy enough to make for a busy weeknight but also special enough for company.

½ cup all purpose flour
2 eggs
⅔ cup seasoned Italian bread crumbs (I use Progresso)
⅓ cup freshly grated Parmigiano-Reggiano cheese
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 tablespoon finely chopped fresh herbs, such as thyme, parsley, chives or rosemary
3-4 boneless skinless chicken breasts (about 1½ pounds), pounded ¼"-thick (see note)
Salt and freshly ground black pepper
¼ cup olive oil
Lemon wedges, for serving

Steps:

  • Set up three large shallow bowls in an assembly line. Put the flour in the first bowl; beat the eggs in the second bowl; and mix the bread crumbs, Parmesan cheese, salt, pepper, and chopped fresh herbs in the third bowl.
  • Season chicken breasts with salt and pepper. Dredge the first chicken breast in the flour and shake off the excess until just a light coating remains. Next, dip the chicken in the egg mixture and turn to coat evenly, letting any excess egg drip off. Finally, dredge the chicken in the bread crumb mixture, turning a few times to coat well. Set breaded chicken on a plate and repeat until all of the chicken breasts are breaded.
  • Heat the oil in a large sauté pan over medium heat. When the oil is hot, add the chicken breasts to the pan and cook for 2 to 3 minutes until the first side is golden brown. Flip and continue cooking until done, 2 to 3 minutes longer. Serve immediately with lemon wedges.
  • Note: If chicken breasts are large (8 or more ounces), it's best to cut them in half once they are pounded out. Alternatively, you can cut them in half horizontally before pounding.

500g pack ready-to-use polenta
25g parmesan , grated
2 skin-on boneless chicken breast fillets
250g pack cherry tomatoes
leaves from a few sprigs rosemary , torn
1 garlic clove , sliced
2 tbsp olive oil

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Using your fingers, roughly break up the polenta into small chunks and scatter in the bottom of a small roasting tin. Tip in the parmesan and mix. Sit the chicken breasts, cherry tomatoes, rosemary and garlic on top of the polenta, drizzle with olive oil, then season to taste.
  • Roast for 25 mins until the chicken skin is crisp and golden, and the polenta and cheese are turning crusty around the edges. Serve with a green salad.

Here's a recipe for roasted chicken with a twist-a crispy crust made by patting the bird with a generous amount of grated Parmesan. We spatchcocked the chicken by removing the backbone and flattening it, for more even and faster cooking. Then it's roasted atop aromatics for a quick one-dish weeknight meal. Be sure to scoop out the garlic for spreading on the chicken-or crusty bread served alongside.

1 teaspoon minced fresh thyme, plus 3 large sprigs
1 teaspoon minced fresh rosemary, plus two large sprigs
Kosher salt and freshly ground black pepper
1 lemon, cut into 4 wedges
1 medium onion, cut into 6 wedges
1 head garlic, cut in half crosswise through the center
2 medium carrots, thinly sliced
One 3 1/2-to-4-pound whole chicken
2 tablespoons extra-virgin olive oil
1/3 cup freshly grated Parmesan

Steps:

  • Combine the minced thyme, minced rosemary, 1 tablespoon salt and 1/4 teaspoon pepper in a small bowl. Scatter the herb sprigs, lemon and onion wedges, garlic and carrots in a 9-by-13-inch baking dish.
  • Pat the chicken dry with paper towels. Using poultry shears, cut along both sides of the backbone to remove it. Open the chicken breast-side up and press firmly in the center of the breast to flatten. Sprinkle the salt mixture over both sides of the chicken. Place the chicken on top of the aromatics in the baking dish, tucking the wing tips under, and let sit at room temperature for 1 hour.
  • When ready to roast, position a rack in the upper third of the oven and preheat to 425 degrees F.
  • Drizzle the chicken with the olive oil and sprinkle all over with the Parmesan. Roast until an instant-read thermometer inserted into a thigh reaches 165 degrees F, about 45 minutes. Remove from the oven and let the chicken rest for 15 minutes before carving. Serve on a platter with the roasted carrots, lemon, onion and garlic.

4 tablespoons olive oil, plus more for the pan
2 teaspoons kosher salt
1 pound quick-cooking polenta
1 1/2 cups freshly grated Parmesan

Steps:

  • Add 8 cups water, the oil and salt to a large saucepan over medium-high heat and bring to a boil.
  • Slowly stream in the polenta while whisking constantly. Reduce the heat to low and cook until the polenta is thickened and smooth, about 3 minutes.
  • Meanwhile, place a large, heavy-bottomed pan over medium heat. Drizzle with olive oil and evenly coat the bottom of the pan. Sprinkle 1 cup of the Parmesan evenly over the bottom of the pan and allow to toast until golden brown and nutty, about 2 minutes. Remove from the heat.
  • Pour the polenta over the Parmesan crust and smooth the surface. Sprinkle with the remaining 1/2 cup Parmesan. Set at room temperature until firm, 20 to 30 minutes. (At this point, the polenta can be refrigerated up to overnight.)
  • When ready to serve, place the pan back over medium heat to warm the cheese. Place a large plate or serving platter over the surface and invert the polenta onto the plate. Serve topped with your favorite sauce.

1/4 cup olive oil

3 cups chicken stock, preferably homemade
2 cups half-and-half
2 cups milk
2 cups cornmeal
1/2 cup good grated Parmesan
Flour, olive oil, and butter, for frying

Steps:

  • Heat the butter and olive oil in a large saucepan. Add the garlic, red pepper flakes, rosemary, salt, and pepper and saute for 1 minute. Add the chicken stock, half-and-half, and milk and bring to a boil. Remove from the heat and slowly sprinkle the cornmeal into the hot milk while stirring constantly with a whisk. Cook over low heat, stirring constantly, for a few minutes, until thickened and bubbly. Off the heat, stir in the Parmesan. Pour into a 9 by 13 by 2-inch pan, smooth the top, and refrigerate until firm and cold.
  • Cut the chilled polenta into 12 squares, as you would with brownies. Lift each one out with a spatula and cut diagonally into triangles. Dust each triangle lightly in flour. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large saute pan and cook the triangles in batches over medium heat for 3 to 5 minutes, turning once, until browned on the outside and heated inside. Add more butter and oil, as needed. Serve immediately.

For the Sauce:
1 big pinch dried mushrooms (preferably porcini)
400g ripe vine tomatoes
1 heaped tbsp tomato puree (paste)
1/4 fresh red chilli
1 bunch fresh basil
2 cloves garlic
For the Chicken and Polenta:
500g pack ready made polenta
olive oil
200g green beans, stalks removed
300g skinless chicken breasts
Fresh rosemary, a few sprigs
1/2 tbsp fennel seeds
20g parmesan
4 rashers streaky bacon
150g oyster (or mixed) mushrooms
200g baby spinach
Balsamic vinegar

Steps:

  • Get everything ready before you even think about starting, all ingredients out and pans etc ready to go.
  • * kettle boiled, * blender ready, * medium lidded pan on heat, * griddle pan on heat, * frying pan on heat
  • Put the dried mushrooms in the blender with 150ml boiling water, the tomatoes, tomato puree, chilli, basil and crushed garlic and whizz until smooth.
  • Pour the tomato sauce into a medium pan and boil for 8 minutes, stirring occasionally.
  • Cut the polenta into 8 slices, rub with salt, pepper and 1 tsp oil and place on the griddle pan, slipping them over when charred and placing trimmed green beans on top of the polenta to steam.
  • On a large sheet of greaseproof paper, toss the chicken with salt, pepper, rosemary leaves, fennel seeds and finely grated parmesan. Fold the paper over the top, then bash and flatten the chicken to about 1.5cm thick with a tolling pin.
  • Put the chicken into the frying pan with 1tbsp oil, turning after 3 or 4 minutes, until golden and cooked through. Toss the bacon and mushrooms into the pan when you turn the chicken.
  • Season the sauce to taste and pour onto a nice serving platter and top with the polenta slices and green beans.
  • Transfer the chicken, bacon and mushrooms to the board while you quickly wilt the spinach in the frying pan.
  • Season the spinach to taste and add to the platter. Slice the chicken and arrange on top of the spinach with the bacon and mushrooms then drizzle everything with balsamic vinegar.

2 teaspoons minced garlic (2 cloves)
1 cup yellow cornmeal, preferably stone-ground
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 cup freshly grated Parmesan cheese, plus extra for serving
1/4 cup creme fraiche
2 tablespoons (1/4 stick) unsalted butter

Steps:

  • Place the chicken stock in a large saucepan. Add the garlic and cook over medium-high heat until the stock comes to a boil. Reduce the heat to medium-low and very slowly whisk in the cornmeal, whisking constantly to make sure there are no lumps. Switch to a wooden spoon, add the salt and pepper, and simmer, stirring almost constantly, for 10 minutes, until thick. Be sure to scrape the bottom of the pan thoroughly while you're stirring. Off the heat, stir in the Parmesan, creme fraiche, and butter. Taste for seasonings and serve hot with extra Parmesan cheese to sprinkle on top.

1/2 cup instant polenta

  • Grease a 6cm deep, 19cm square cake tin. Line base and sides with baking paper, extending paper 2 cm from edge of pan on all sides. Place stock, rosemary and garlic in a medium saucepan over high heat. Bring to boil. Reduce heat to low.

4 boneless skinless chicken breasts
2 garlic cloves, minced
1/3 cup grated parmesan cheese
4 sprigs fresh rosemary
1/2 teaspoon sea salt or 1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
4 teaspoons extra virgin olive oil
1/2 cup white wine

Steps:

  • Remove the stem of 2 sprigs of rosemary. Split the other 2 sprigs in half and save for garnish.
  • Mix the now loose rosemary with the olive oil, wine, garlic and salt and pepper.
  • Season both sides of the chicken with this marinade. Let chicken marinate in the refrigerator for at least 2 hours.
  • Preheat oven to 275. Spray or very lightly oil your bakeware.
  • Place the marinated chicken in your bakeware, and place in oven for 30 minutes.
  • Remove and sprinkle chicken with grated parmesan cheese and place back in the oven for another 13-15 minutes.
  • Remove from oven and garnish each chicken with a rosemary sprig. Enjoy!

This recipe came from our local grocery store (Festival Foods). I made it for the family and it was a hit. I always make enough for two dinners worth. On the first night, I serve it soft. The leftovers I chill then fry in butter. For fried polenta, you can make this recipe up to two days in advance. Just keep in the fridge until ready to fry & serve.

1/2 cup butter, unsalted (1 stick)
1/4 cup olive oil
1 tablespoon garlic, minced (3 cloves)

1 teaspoon garlic salt
1/4 teaspoon fresh black pepper
3 cups chicken stock
2 cups half-and-half
2 cups milk
2 cups cornmeal

cornstarch
1 tablespoon olive oil
1 tablespoon butter

Steps:

  • Heat 1/2 cup butter and 1/4 cup olive oil in a large saucepan.
