SHY MI YANSOON - ANISE TEA RECIPE
This recipe for Arabic Refreshing Tea is pronounced She me Yan-soon. The Health Benefits of Rooibos Tea - Red Tea it contains no caffeine. It's shown to aid in health problems such as insomnia, irritability, headaches, nervous tension, and hypertension. Studies also show that this tea relieves anti- spasmodic agents, which can relieve stomach cramping and colic in infants. In South Africa Rooibos has been used to treat allergies such as hay fever, asthma and eczema very effectively. Rooibos contains anti - oxidants which can help slow the aging process and boost the immune system. Rooibos is a great thirst quencher and is an excellent beverage for active people, including children without sugar. This tea contains almost no oxalic acid, making it a good beverage for people prone to kidney stones. Rooibos contains the following minerals: copper, iron and potassium, calcium, fluoride, zinc, manganese, alpha- hydroxy ( for healthy skin ) and magnesium ( for the nervous system ) are also components of this tea.

CHA YEN (THAI ICED TEA)
This homemade Thai iced tea gets its complex flavor from black tea, rooibos tea, star anise and cloves, and its sweetness from condensed milk. Adapted from the cookbook "Bangkok" by Leela Punyaratabandhu, this version is hardly typical: Most Thai iced tea sold on the streets of Bangkok - or in Thai restaurants stateside - contains an immoderate amount of sweetened condensed milk and uses a store-bought mix, which contains food coloring. The tea blend used here is intense on its own, but mellowed by ice and milk. Chill the tea fully before pouring it over ice so its flavors don't get diluted.

- Add 4 cups water to a medium saucepan. Cover with a lid and bring to a boil. Remove from the heat. Add rooibos tea, black tea, sugar, star anise and cloves; cover and let steep, 10 minutes. Strain tea, pressing on tea leaves and spices to extract as much liquid as possible, then discarding solids. Refrigerate tea until chilled, at least 1 hour.
- In a measuring glass, stir together the half-and-half, condensed milk and vanilla extract.
- Fill a pint glass with ice. Add 3/4 cup tea mixture and top with about 2½ tablespoons condensed milk mixture. Serve immediately.
SPICED THAI ICED TEA
Similar to the Thai iced tea served in Thai restaurants made with red rooibos or orange black tea. Garnish with fresh mint leaves.

- Place water, sugar, star anise, cinnamon stick, and cardamom in a saucepan; bring to a boil. Remove from heat and add tea bags. Let tea steep and cool to room temperature, about 1 hour.
- Remove tea bags and strain out whole spices; discard. Whisk in condensed milk. Pour into a large pitcher and refrigerate until flavors combine, at least 1 hour.
- Fill 4 glasses with ice. Serve tea over ice.

ROOIBOS ANISE TEA
This is one of my original recipe creations. It's especially good for those who already enjoy rooibos but want to give it a little variety. It's best hot but decent chilled. Note: I've listed things in teaspoons because this website won't let me list it in parts, but it's technically in a ratio, so you can make whatever quantity you want.

- Assemble all the ingredients and place in a tea ball. Note: If you don't own a tea ball, then you can put the ingredients directly in the water and then strain out later. Note that food.com has forced me to list the rooibos as "rooibos tea bags" but I used loose leaf tea.
- Place tea ball in hot water and steep for 10 minutes.

- Pour 1 tsp of absinthe into a rocks glass. Swish the absinthe along the bottom and sides of the glass, be sure to coat every part of the interior of the glass. Dispose of the excess absinthe.
- Fill the glass with ice cubes and add all the cocktail ingredients, except for the absinthe (which you've already used for the rinse) and orange peel. Stir for about 30 seconds, then strain through a Hawthorne strainer into a rocks glass filled with ice. Roll up the orange peel and squeeze it above the cocktail to express the citrus oils before placing it in the glass as garnish.
- Place all the ingredients for the rooibos tea syrup in a small saucepan with 1 cup of water. Bring to a simmer over medium heat and simmer for about 20 minutes, until the liquid has reduced by a third. Remove from the heat and set aside to cool before straining through a fine-mesh sieve and transferring to a sealed bottle or jar. The aromatics can be discarded. Keep in the fridge until ready to use. Rooibos tea syrup will keep in the fridge for up to 3 weeks.
