This easy to make Green Chili Meatloaf is absolutely delicious. Great flavor thanks to the green chilies and Frank's Hot Sauce.

2 lbs Ground Beef
2 Cups Bread Crumbs
1 Egg
1/2 Cup Yellow Onion (diced)
4 oz Green Chilies (diced)
1/2 Cup Milk
1 Tbsp Frank's RedHot Original Hot Sauce

Steps:

  • Preheat oven to 350°F.
  • In a mixing bowl, mix all ingredients until well combined.
  • Place mixture into a lightly greased loaf pan.
  • Bake for 1 hour or until internal temperature reaches 160°F. Let stand for 10 minutes before cutting and serving.

Growing up in New Mexico, we had access to the Hatch green chile (the best!). I add green chile to a lot of my recipes and it rather sets this meatloaf off. It's very good cold, made into sandwiches the second day.

1 ½ pounds hamburger
1 (14.5 ounce) can diced tomatoes
1 (6 ounce) can diced green chiles
¾ cup chopped onion
½ cup milk, or as needed
2 eggs
15 crushed crackers
½ teaspoon salt, or more to taste
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Mix hamburger, tomatoes, green chiles, onion, milk, eggs, crackers, salt, and pepper together in a bowl. Transfer to the prepared loaf pan.
  • Bake in the preheated oven until until no longer pink in the center, about 1 hour and 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Let cool in the pan for 10 minutes before transferring to a serving dish.

1 tablespoon (from 1-oz package) Old El Paso™ original taco seasoning mix
1/2 teaspoon salt
1 egg
1/2 cup diced tomatoes
1/4 cup chopped green onions
2 tablespoons finely chopped fresh cilantro leaves
1 tablespoon fresh lime juice
1/4 teaspoon salt

Steps:

  • Heat oven to 450°F. Spray 12 regular-size muffin cups with cooking spray.
  • In large bowl, stir Meat Loaf ingredients until well mixed. Divide mixture among muffin cups, pressing evenly into cups.
  • Bake 15 to 18 minutes or meat thermometer inserted in center of loaf reads 160°F.

1/2 pound ground pork
1/2 cup soft breadcrumbs
1/4 cup finely chopped onion
1 large egg
3/4 teaspoon salt

2 tablespoons chopped cilantro
1 can (4 ounces) chopped mild green chile (drained)
1 can (14.5 ounces) chili-seasoned diced tomatoes (divided)
3 to 4 slices pepper jack cheese

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F. Lightly oil a 13x9x2-inch baking pan.
  • In a large bowl, combine the beef, pork, bread crumbs, onion, egg, salt, pepper, chili powder, chopped cilantro, chile peppers, and about half of the tomatoes; reserve the remaining tomatoes for later.
  • Shape the mixture into a loaf and place on the prepared baking pan. Bake the meatloaf for 1 hour and 15 minutes.
  • Top with the sliced cheese and continue baking just until cheese is melted-about 2 to 4 minutes.

1 1/2 lbs ground beef (ground shoulder roast is good)
1 slice bread (broken or chopped finely)
1 egg
1 small vidalia onions or 1 small type sweet onion, finely chopped
1 teaspoon table salt
1/4 teaspoon black pepper
4 tablespoons ketchup
1/2-2/3 cup whole milk or 1/2-2/3 cup half-and-half
4 tablespoons apple cider vinegar
2 -4 tablespoons dark brown sugar, packed firm (to taste)
1/2 cup ketchup

Steps:

  • Meatloaf: Combine meat loaf ingredients and place into a loaf baking dish.
  • Smooth out top.
  • Sauce: Combine sauce ingredients and pour on top and sides of meatloaf.
  • Bake at 350°F about 1 hour to 1 hour 15 minutes or until done.
  • ENJOY!
  • *The addition of 1 or 2 teaspoons of Kitchen Bouquet® makes this recipe very good.

1 1/2 lbs lean ground beef
1 egg
1/2 cup breadcrumbs
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons canola oil
1 large onion, chopped
1 sweet red peppers or 1 green pepper, chopped
1 tablespoon chili powder
1 cup drained red kidney beans
1/2 cup salsa
1/2 cup shredded cheddar cheese

Steps:

  • In a large bowl, beat egg with a fork.
  • Add bread crumbs, salt and pepper.
  • Gently mix in ground beef.
  • Set aside.
  • In a large frying pan, heat oil on medium-high heat.
  • Add onion; cook for 5 minutes or until softened.
  • Add sweet pepper and chili powder.
  • Cook for another 4 minutes.
  • Let cool slightly and then add to beef mixture.
  • Add kidney beans and salsa.
  • Pack into an 8 by 4 inch loaf pan.
  • Bake in preheated 350F (180C) degree oven for 60-75 minutes.
  • Drain off fat.
  • Sprinkle cheddar cheese on top of meatloaf and return to oven for 5-7 minutes or until cheese is bubbly.

2 tablespoons extra-virgin olive oil
1 cup diced onion (about 1/2 of one onion)
2 carrots (finely diced)
3 garlic cloves (chopped)
3 teaspoons kosher salt
1 cup Hatch green chiles (peeled and seeded, chopped (see notes for recipe))
1/2 cup amber beer (I prefer Shiner Bock)
2 pounds ground pork
2 teaspoons cumin
1 teaspoon ground coriander
1/4 cup bread crumbs
2 eggs
2 teaspoons mayonnaise
2 tablespoons crème fraiche
1/4 cup freshly grated parmesan
Hatch green chile jam (see notes for recipe)
chopped fresh cilantro (for topping)

Steps:

  • Preheat the oven to 350 degrees.
  • Place the oil, onion, carrots and garlic in a medium sized skillet and cook until softened, about 6-8 minutes. Add the green chiles and continue to cook for an additional 4-5 minutes. Pour the beer in the skillet and deglaze the pan. Cook until the beer has been completely absorbed and is slightly sticking to the pan.
  • Remove the skillet from the stove top and let cool for about 15 minutes.
  • In a large bowl, combine the pork, cumin, coriander, bread crumbs, eggs, mayonnaise, crème fraiche, parmesan and cooled vegetable mixture. Stir well to combine (I like to use my hands)
  • On a foil lined rimmed baking sheet form the mixture into a loaf. Bake the meatloaf for 45 minutes. Smear a layer of the jam on the meatloaf and continue to cook for 10-15 minutes or until the internal temperature reaches 145 degrees.
  • Cut into individual slices and top with extra jam and fresh cilantro.

1 ½ (4 ounce) cans chopped green chilies

1 tablespoon jalapeno ketchup

1 teaspoon dried parsley
¾ teaspoon salt
½ teaspoon garlic powder
¼ teaspoon black pepper
½ cup jalapeno ketchup

1 tablespoon red wine vinegar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

3 tomatillos, husked and chopped
1/2 cup chopped roasted long green chiles
2 cloves garlic, chopped
½ teaspoon kosher salt
¼ teaspoon ground cumin
Pinch allspice
2 tablespoons unsalted butter
1/4 small yellow onion, finely diced (about 1/2 cup)
4 cloves garlic, finely minced
3/4 cup chopped roasted long green chiles
1/4 cup chopped cilantro
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon Worcestershire sauce
1 teaspoon black pepper
1 teaspoon salt
Pinch cayenne
1/2 cup finely ground panko breadcrumbs or tortilla chips or a combination of the two
1 large egg
3/4 pounds ground beef, preferably 20% fat
1/2 pound ground pork

Steps:

  • Preheat the oven to 350°F degrees and line a large sheet pan with foil that's been lightly greased.
  • To make the glaze, in a blender, puree until smooth the tomatillos, chiles, garlic, salt, cumin, allspice, and cayenne. Taste and adjust seasonings. (Please note that it will be tart because it hasn't been cooked yet.)
  • In a skillet, heat the butter on medium-low heat and add the onion. Cook uncovered for 5 minutes, occasionally stirring, until softened and fragrant. Add the garlic and cook for 30 more seconds. Remove from the heat.
  • Slide the cooked onions and garlic into a large mixing bowl. Add 2 tablespoons of the glaze to the bowl. Stir in the long green chiles, cilantro, oregano, cumin, Worcestershire sauce, black pepper, salt, cayenne, breadcrumbs (or crushed tortilla chips), and egg until it's well combined.
  • Add the ground beef and pork to the bowl, then with your hands or a spoon, gently combine all ingredients until well combined.
  • Take the meat and form it into an 8-inch long loaf. Place it on the sheet and take the rest of the glaze and spread it on top of the meatloaf.
  • Place the meatloaf in the oven and bake uncovered for 1 hour or until the glaze has darkened, the loaf is browned, and/or a meat thermometer reads 155°F
  • Let the cooked meatloaf sit for 15 minutes, then slice with a serrated knife and serve.
