- Leave to rest for one hour.

CHOCOLATE FONDUE WITH FRIED BANANAS

- Add the flour, club soda, milk, powdered sugar, cornstarch, vanilla and salt to a medium-sized bowl. Whisk to combine and break up any lumps. Add the sliced bananas and stir them around to coat them completely in the batter. Cover the bowl and refrigerate while you make the chocolate fondue and heat the oil for the bananas.
- For Frying: Add about 1-inch of oil to a Dutch oven or heavy bottomed skillet. Attach a candy thermometer and bring the heat up to 350 degrees F. Once the oil is hot, remove the bananas from the fridge, letting any excess batter drip back into the bowl, and transfer them to the oil. Fry until golden brown, 1 to 2 minutes per side. Use a slotted spoon to remove the bananas to a wire rack. Let the bananas cool for 1 minute. Dust with powdered sugar and serve immediately with the Chocolate Fondue and other dippers using fondue forks of wooden skewers.
- Add the chocolate, heavy cream and vanilla to a large bowl set over a double boiler. Heat over medium-low, stirring occasionally, until the chocolate is completely melted and incorporated with the cream, about 5 minutes. Keep warm on the double boiler until ready to serve. Once ready to serve, carefully transfer the chocolate fondue to a fondue pot to keep warm.

- Heat oil to 375°F in a Dutch oven or deep fryer.
- Mix corn flour and sugar in a bowl. Add butter, egg, salt, rum, and milk, stirring until it forms a thick batter.
- Peel bananas, and cut into quarters. Mix cinnamon with brown sugar. Sprinkle half the cinnamon/ brown sugar mixture on the banana quarters.
- Roll banana quarters in the batter, and drop carefully into the hot oil, a few at a time. Fry 2 - 3 minutes on each side, turning once, until golden brown.

- For the chocolate sauce: Combine the chocolate and 1/4 cup water in a heavy small saucepan. Stir over medium-low heat until the sauce is melted and smooth. Remove from the heat. Stir in small pinch cayenne pepper. Set aside.
- For the bananas: Place the brown sugar in a pie dish or on a plate. Toss the bananas in the brown sugar until nicely coated. Melt the butter in a heavy large skillet over medium-high heat until the butter becomes golden brown. Add the bananas to the hot pan cut-side down. Turn the bananas over as soon as they are golden brown and the sugar forms a crunchy coat on the bananas, about 30 seconds per side (do not allow bananas to become soft and mushy). Divide the bananas between 2 shallow bowls or plates. Spoon the chocolate sauce over the bananas. Sprinkle with the toasted almonds, and serve immediately.
- Cook's Notes: To toast the almonds, arrange them in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 6 to 8 minutes until lightly toasted. Cool completely before using.
- An alternate way to melt the chocolate is to combine the chocolate and water in a small metal bowl over a small saucepan of simmering water, and stir the chocolate mixture until melted and smooth. Remove the bowl from over the water and set aside.

- In a big bowl, mix all the ingredients in the Frying Batter together. Stir to mix well. Make sure the batter is smooth. Gently the bananas into the batter.

- Before beginning this quick recipe, you should be aware that you can make fried bananas on their own or prepare them with honey to bring out their sweet taste even more. Both instructions are given here for you to choose the variety that you most like.
- Before starting, prepare the oil for frying in a pan. Do not skimp on it by merely placing a few drops in, because you need to be able to fry them. So, cover all your pan with the oil. Next, place the pan on the hob over a medium heat and leave it to heat up. If you don't normally cook with oil, you can use butter.
- Whilst the pan is heating on the hob, peel the bananas with a peeler and slice them up. You can chop them into slices, although we recommend you chop them into vertical slices of a centimetre or so in thickness. In this way, you will ensure that the banana does not disintegrate and stays firm when frying.
- When the heat is hot, add the pieces of banana to the pan. Leave them in the oil until they are golden brown. Remember to turn them over so that they fry on both sides. When the bananas are slightly brown on both sides it means they are ready. Now just take them out of the pan and place them in a sheet of kitchen paper, to absorb the excess oil. After this they're ready to consume.

THAI FRIED BANANAS (KLUAI KHAEK)
Steps:
- Gather the ingredients.
- Heat a wok or skillet with oil about 3/4 to 1-inch deep.
- Meanwhile, prepare the bananas by peeling and slicing them in half. Then slice each section in half again, but lengthwise this time.
- In a medium mixing bowl, place all-purpose flour, 1/4 cup of rice flour, cornstarch, salt, and 2 tablespoons of the shredded coconut and stir to combine.
- In a measuring cup, mix together cold water with baking soda until dissolved and pour into bowl with flour mixture.
- Add the egg and the vanilla. Stir well until fully combined.
- Place remaining 1/3 cup rice flour in a separate, dry bowl and add remaining one tablespoon shredded coconut. Mix well and set next to the batter.
- Dip banana pieces first in the batter, then gently dredge them in the rice flour-coconut mixture. This last step helps firm up the batter and is the secret to creating a crisp, rather than soggy, coating. (Depending on the size of your bananas, you might need to make more of this rice flour-coconut mixture.) You're now ready for frying.
- Make sure the oil is hot (350 to 375 F). You can test it with a breadcrumb. If it sizzles and cooks within a few seconds, the oil is hot enough for frying.
- Carefully place coated bananas in the hot oil. Fry approximately 1 minute per side, or until batter puffs up slightly and turns light- to medium-golden brown. Remove from heat and drain on paper towel.
- Serve your fried bananas as soon as possible as is, or with a side of coconut or vanilla ice cream. For a fancier presentation, place them on a serving platter and sprinkle with confectioners' sugar.
