SUMMER TOMATO, ONION & CUCUMBER SALAD

Summer Tomato, Onion & Cucumber Salad image

Fresh wedges of tomato, thinly sliced onion and sliced cucumber dressed simply with vinegar and oil makes the most simple salad possible-think of it as the Southern counterpart to the classic Italian tomato-and-mozzarella salad. This cucumber, tomato and onion salad is best enjoyed at the height of summer, when tomatoes and cucumbers are fresh from the garden.

Provided by Virginia Willis

Categories     Healthy Tomato Salad Recipes

Time 50m

Number Of Ingredients 9

3 tablespoons rice vinegar
1 tablespoon canola oil
1 teaspoon honey
½ teaspoon salt
½ teaspoon freshly ground pepper, or more to taste

1 Vidalia or other sweet onion, halved and very thinly sliced
2 tablespoons coarsely chopped fresh herbs, such as flat-leaf parsley, chives and/or tarragon

Steps:

  • Whisk vinegar, oil, honey, salt and pepper in a large shallow bowl.

ROMAINE SALAD WITH FETA, ORANGES, BACON

Romaine Salad With Feta, Oranges, Bacon image

This is a great salad that gets rave reviews and is always finished off quickly wherever it is served. The combination of ingredients may be pretty unusual, but they work unexpectedly well together. We sometimes use fresh strawberries in place of the oranges during strawberry season and I know for sure we don't use nearly as much bacon as called for so take that into account. As with all salads, add ingredients in the amount you prefer, I'm just posting as written. This is excellent though! The feta really makes this for me!
