STUFFED TOMATOES
Be sure to store tomatoes at room temperature -- refrigerating them can make them mealy. They'll continue ripening as they sit on the counter.

- Preheat the oven to 400 degrees F. Slice the tomatoes in half horizontally and scoop out the pulp and seeds. Salt the insides and let rest upside down on a rack set on a baking sheet to extract the juices, about 15 minutes.
- Meanwhile, in a medium bowl, mix the breadcrumbs, garlic, basil, 1/4 cup parmesan, the olive oil and a few grinds of pepper. Stuff the tomatoes with the filling and sprinkle with the remaining 1/4 cup parmesan.
- Transfer the tomatoes to a clean baking sheet and bake until they are tender and the tops are golden brown, 25 to 30 minutes. Tent with foil if the breadcrumbs are browning too quickly.
STUFFED TOMATOES

- Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
- Cut the tops off of each tomato and scoop out the inside flesh into a bowl. Set aside the tomato shells. Roughly chop the inside tomato flesh or break it up with your hands, yielding 1 cup. Drizzle with olive oil and season with salt and pepper.
- Place a large saute pan over the direct heat side of the grill and add a drizzle of olive oil. Season the ground beef with salt and pepper. When the oil is hot, add the ground beef and cook until it begins to brown, breaking it up into smaller pieces as it cooks, 3 to 4 minutes. Add the garlic, onions, lemon zest, another drizzle of olive oil and a pinch of salt. Give it a stir and cook until fragrant and the onions are translucent, 2 to 3 minutes. Then stir in the reserved tomato insides. Cook for about 1 minute, scraping the bottom of the pan for any brown bits. Add the mint and parsley. Give it one more stir and remove from the heat. Add the rice, pine nuts and goat cheese.
- Fill each reserved tomato shell to the top with the beef mixture and place into a cast-iron skillet. Sprinkle with the panko and drizzle with olive oil. Place on the indirect heat side of the grill and close the lid. Bake until golden brown on top, 20 to 25 minutes. Serve with olive oil drizzled over the top.
MOZZARELLA-STUFFED TOMATOES
Steps:
- Preheat oven to 375 degrees F.
- Cut the tops off the tomatoes and, using a spoon, hollow out the middle. In a medium bowl, combine the mozzarella, bread crumbs, parsley, garlic, oregano, and olive oil. Season to taste with salt and pepper. Place the stuffing in the tomatoes, taking care not to pack them too tight. Place on a baking sheet and transfer to the oven. Roast for 30 minutes.
STUFFED TOMATOES

- Preheat oven to 400 degrees F.

Meanwhile, in a medium bowl, mix together bread crumbs, garlic, basil, pepper, 1/4 cup of the grated Parmesan and oil. Stuff tomatoes with the filling, sprinkle with remaining Parmesan, and bake until tomatoes are cooked through and tops are golden brown, about 30 minutes.

Steps:
- Cut the stems off of the tomato and use the handle of a teaspoon to remove seeds.
- Stir the cream cheese to loosen a bit and spoon it into the tomatoes.
- If you have a pastry bag or a Ziplock with the tip cut off,it might be easier to fill the tomato.
- Be sure that the tomatoes are completely filled and there are no air pockets.
- Cover the tomatoes and refrigerate.
- After they are really chilled--1 to 1 1/2 hours-take them out of the fridge and put them on a cutting board.
- Using a VERY SHARP KNIFE, wet blade with water and slice tomatoes into 1/2 inch thick rounds.
- Place the slices on a serving platter and garnish if desired.

- Wash well and cut out the core.Cut into quarters and set aside in a large bowl or pot. Process tomatoes thru a Tomato Sieve or the way I do it is thru my Kitchen Aid tomato strainer.Quickly and easily prepare fresh apple or tomato sauce, baby food, freezer jams, and chutneys when you attach the fruit and vegetable strainer parts to your food grinder attachment.
- I use a 21 quart Presto pressure cooker that will fit 7 quarts at a time. The pressure should be @ 5lbs. for 10 minutes.
- Let the steam escape on it's own,usually about 15 minutes.Remove the steam lid and set the jars on a cooling rack. Do not put in a cool draft area or run coll water on the jar, they will break.
