This soup is perfect any time of the year. It's full of cabbage, meat, and some vegetables that make this a hearty delicious bowl of pure comfort food and so healthy for you.

Number Of Ingredients 17

Leftover Ham with bone attached pull chunks off and add to the pot along with the bone.
Note: You can also just buy pre-packaged ham cubes to add. Chicken breast, leftover pork roast bone (shoulder or butt) bacon, and smoked pork chops, bacon, pot roast, kielbasa, or whatever leftovers you have!
6 carrots cleaned and sliced or a few cups of fingerling carrots
6 potatoes, peeled and cubed
2 cups small navy beans freshly cooked or canned other cooked white beans (if canned rinse well)
5 or 6 cut-up plum tomatoes fresh or canned
2 stalks of celery with leaves minced
2 cloves minced garlic
1 tablespoon granulated garlic
1 head regular or savoy curly cabbage, cut into quarters
16 oz can chicken broth or homemade that's what I use
1/2 cup white wine
water
1/2 teaspoon each oregano, basil, garlic powder, thyme, parsley
Salt and pepper to taste
cayenne pepper (optional) just a pinch
instructions:

Steps:

  • In a large pot, fill water half full, add broth, wine, all the vegetables, ham bone, and herbs.
  • Sprinkle to taste with salt and pepper.
  • Cook until all vegetables are tender.
  • Add cooked beans, cook 1/2 hour more.
  • If in need add more water or chicken broth.
  • Remove ham off the bone and add back to the pot.
  • Serve with crusty Italian bread broken up in the bowl... or just dunk it!

HAM BONE SOUP



Ham Bone Soup image

Don't let that leftover bone from your holiday smoked ham go to waste! Put it to use in this hearty, delicious soup, which can be made with ingredients you probably have in your fridge and pantry. It's nice if you have a little meat left clinging to the bone after you've carved off all the ham, but even if you don't, the bone alone will add rich flavor and smokiness to the dish. You'll need to soak the dried beans overnight, so plan accordingly. Luckily this recipe makes a big batch as the soup keeps well in the freezer (see Cook's Note).

1 pound dried navy beans
3 tablespoons extra-virgin olive oil
4 medium carrots, chopped (about 2 cups)
3 stalks celery, chopped (about 1 cup)
3 leeks, white and light green parts only, halved lengthwise, thinly sliced and washed well (about 1 1/2 cups)
Kosher salt and freshly ground black pepper
2 tablespoons tomato paste
1 tablespoon fresh thyme leaves, chopped
2 bay leaves
1 leftover ham bone
1 head escarole, coarsely chopped (about 6 cups)

Steps:

  • The day before you want to make the soup. put the beans in a large bowl and add cold water to cover by several inches. Soak overnight (or at least 8 hours) in the refrigerator.
  • Drain the beans and rinse. Heat the olive oil in a large Dutch oven over medium heat. Add the carrots, celery and leeks and season with 1 teaspoon of salt. Cook and stir until the vegetables are softened, about 5 minutes.
  • Add the tomato paste and thyme and stir to coat the vegetables. Let the tomato paste toast for 1 minute, stirring, then add the bay leaves and 12 cups of water. Add the beans and nestle the ham bone in. Bring to a simmer and cook, uncovered, until the beans are almost tender, 45 minutes to 1 hour.
  • Add the escarole, another 2 cups of water and 1 teaspoon salt. Return the soup to a simmer and cook until thickened and the beans and escarole are very tender, 20 to 30 minutes.
  • Remove the bay leaves and ham bone from the soup and let cool until you can handle the bone. Shred any useable meat left on the bone and stir back into the soup. Season with salt and pepper before serving.

1 can (16 oz.) Great Northern beans, drained

Steps:

  • In a large saucepan, saute the onion and carrots in oil until the onion is tender.
  • Add the broth, ham or smoked turkey, cabbage, tomatoes, and chili powder.
  • Bring the mixture to a boil. Lower heat, cover, and simmer the soup for 15-20 minutes.
  • Add the beans, salt, and pepper. Continue to simmer for 20-25 minutes or until the cabbage is tender.
  • Serve.

1 lb small white beans (sorted and washed)
3 quarts chicken stock
1 large ham hocks or 1 large part of a butt-end ham
1 large onion, chopped
1 head of cabbage, chopped
3 carrots, chopped
salt and pepper

Steps:

  • Cover beans with chicken stock.
  • Add ham and onion.
  • Simmer 3 hours, or until beans reach mushy stage.
  • Add cabbage and carrots and simmer for an additional hour.
  • Add water if needed.
  • Remove the ham from the soup.
  • Let it cool and remove it from the bone.
  • Return the ham to the soup.
  • Season with salt and pepper to taste.
  • Skim off excess fat.

1 lb cooked ham, cubed
6 cups roughly chopped cabbage
4 medium baking potatoes, peeled and cut into 1/2 inch cubes (about 4 cups)
1 large onion, chopped

1 (16 ounce) package frozen corn
1 cup light cream
salt & freshly ground black pepper

Steps:

  • Add broth, ham, cabbage, potatoes, onion, carrot, bay leaf and parsley to a soup pot, cover and bring to a boil.
  • Reduce heat and simmer 20 minutes or until potatoes are tender.

Steps:

9 cups cabbage

Steps:

  • 1. Soak the beans overnight or do a quick soak.
